paleo granola

This gluten-free, grain-free, chai spiced granola recipe is made from almonds, pecans, a variety of seeds and warming chai spices.Note: I use all raw nuts and seeds in this recipe.

Chai Spiced Granola (Grain-Free)

almonds

pecans

sunflower seeds

pumpkin seeds

cashews

cinnamon

tsp ginger

tsp cardamom

tsp allspice

tbsp organic blackstrap molasses

honey (or maple syrup)

tsp vanilla extract

Preheat your oven to 275 degrees fahrenheit.

Place your nuts and seeds (individually, one type at a time) in a food processor. Pulse until they've been chopped to a medium-fine texture, stopping before they turn into nut butter. Place the nuts and seeds into a large mixing bowl.

Add the remaining ingredients to your mixing bowl and use your hands to mix together thoroughly.

Line two baking sheets with parchment paper. Divide the granola mix evenly between the two pans in a single, flat layer.

Place in the oven and bake for 10 minutes. Remove from the oven and stir the granola. Rotate your pans when you place back in the oven. Cook for an additional 10-15 minutes, being careful not to burn the granola. (Note: It can quickly go from golden to burned within a minute, so keep an eye on it. It won't look any different when it's done baking and will still be soft - that's fine. It will harden once it cools.)

Remove from the oven and let cool for 30 minutes. Place in a sealed container and store for future use.

Low Carb Granola

/ 150 grams whole almonds

walnut halves

flaxseed (milled)

coconut flakes/chips (unsweetened)

/ 80 g smooth almond butter

/ 80 ml water

raspberries

tbsp granulated sweetener (So Nourished)

Preheat the oven to 150 Celsius / 300 Fahrenheit

Pulse the almonds, walnuts and pecans in a food processor until you have a mixture of smaller and larger pieces.&nbsp;

Repeat the same with the pumpkin and sunflower seeds.&nbsp;

Empty the nuts and seeds into a bowl. Add the rest of the ingredients (only reserve 2 tbsp of the raspberries for later) and mix with a spatula. The mixture should be sticky. If it's still dry, add another tbsp of water.

Press firmly onto a baking sheet lined with parchment paper until you have a flat surface.&nbsp;

Bake for 25-30 minutes until browned. Turn the baking sheet after 20 minutes.&nbsp;

Remove from the oven and let cool. Then break into small pieces, mix the remaining 2 tbsp of freeze dried raspberries and store in an airtight container.

This recipe produces perfect clusters and tastes absolutely incredible.  It is 100% grain-free so it works for gluten-free and paleo diets.

I love to snack on it or use it to top my smoothie bowls, yogurt, parfaits and chia seed pudding.  It is full of plant-based protein and important nutrients to fuel your day.

Grain-Free Granola (vegan + paleo + refined sugar-free)

unsweetened coconut flakes

almond flour

pepitas

raw white sesame seeds (or substitute hemp seeds)

raw sunflower seeds

chia seeds

salt

+ 1 tablespoon pure maple syrup

coconut oil (or avocado oil)

vanilla extract

Preheat oven to 300 degrees Fahrenheit and line a large rimmed baking sheet with parchment paper or a silicone baking mat.

In a large mixing bowl combine all the dry ingredients using a large wooden spoon.  Mix in the wet ingredients (maple syrup, coconut oil and vanilla extract).  Stir until the dry ingredients are fully and evenly coated.  Transfer the granola mixture onto the prepared baking sheet and spread out into one thin even layer.

Bake for 30 minutes tossing halfway through.

Allow it to sit at room temperature for an hour before breaking it up into granola clusters/chunks.  The longer you allow it to sit untouched the better the clusters will be..

Store in a large glass mason jar or container with a lid at room temperature for up to one week.
