This delicious gluten free pizza crust is for everyone! Perfect for anyone following a paleo or gluten free diet, but also a great option for anyone who is looking to eat healthier. This crust bakes up crispy around the edges, and firm enough to hand-hold slices. Although the crust is softer than a standard pizza crust, it's a delicious alternative!&nbsp;

Paleo Sweet Potato Pizza Crust Recipe

sweet potato (from roasted sweet potatoes)

almond flour

arrowroot

olive oil

white wine vinegar

Italian seasoning

sea salt

Roast sweet potatoes. I roast my sweet potatoes at 420 degrees F for 1 hour - 1 hr. 20 minutes, until they are very soft.

Once potatoes have cooled, scoop out the flesh, and measure out 2 cups of sweet potato puree.

In a large mixing bowl, add sweet potatoes, and use a hand mixture to whip the sweet potatoes until they are smooth.

Add the rest of the ingredients, and use the hand mixer again to mix well.

Preheat oven to 425 degree F.

Line a cookie sheet with baking paper. Scoop "dough" in heaping 1/2 cups (the recipe will make 4 small pizza crusts).

Wet your fingers, and lightly press down on the top of each mound.

Cover 1 mound of dough with another piece of parchment, and then use a flat-bottomed smooth plate to press down until the sweet potato is about 6 inches in diameter. Watch this process in the video above.

I like to use wet fingers to gently mold the edges of the crust, but this is optional.

Bake the crusts for 30 minutes.

Top the crusts with sauce, cheese, or other toppings, as desired.

Return topped pizzas to the oven for 12-20 minutes, depending on how many toppings are added. A basic cheese pizza will bake in 12 minutes, but a pizza loaded with tons of veggies will take 20.

Sweet Potato Pizza Crust

This Paleo pizza has the super chewy texture and crispy edges a proper authentic pizza crust must have. Top it with your favorite sauce, dairy free cheese, or sliced meats, and dinner is served!

Authentic Paleo Pizza

¾ cups tapioca starch/flour (plus more for dusting)

instant yeast

salt

⅓ cup fluid ounces warm water

extra virgin olive oil (plus more for brushing)

honey

egg (at room temperature, beaten)

Pizza toppings (as desired)

In a large bowl or the bowl of your stand mixer, place the almond flour, tapioca starch, and instant yeast. Whisk to combine well with a separate, handheld whisk. Add the salt, and whisk again to combine.

Add the water, olive oil, honey, and egg, and mix until a sticky batter forms. If you’re using a stand mixer, mix until a uniform batter forms with the paddle attachment and the mixer on medium-high speed.

If you're not using a mixer, switch to a spatula or wooden spoon, and mix until a uniform, but shaggy, dough forms.

Make the pizza dough.

Dust your hands with a little tapioca flour and press the dough into a ball, kneading it a bit to get any floury bits mixed in. Return the ball of dough to the bowl, and cover it with plastic wrap.

Set the dough in the covered bowl in a warm place for about 45 minutes or until the dough swells to about 150% of its original size.

Place a pizza stone or large, overturned rimmed baking sheet in the oven and preheat your oven to 375°F.

Set the dough to rise.

Place a large sheet of parchment paper on a flat surface, and, with lightly tapioca floured hands, transfer the ball of dough to the parchment.

Pat the dough out into a circle about 12 inches in diameter, pushing out toward the edges to form a puffy rim of crust.

Drizzle the top of the raw dough with olive oil and brush or spread it with clean hands evenly across the top of the crust, including the edges. Pierce the top of the dough (excluding the crust) with the tines of a fork.

Shape the dough.

Carefully transfer the parchment with the dough onto the pizza stone or sheet pan and bake for 8 minutes or until the pizza dough is set and just beginning to brown.

Remove the dough from the oven and add your desired toppings. Return to the oven and for about 5 minutes more or until your toppings are melted and/or bubbling and the edges of the pizza are golden brown.

If desired, set the oven to broil and broil the pizza for up to two minutes until browned. Remove from the oven, slice, and serve hot.

Bake the dough.

Have you ever tried to freeze a pizza after you cook it with toppings?

Very good Paleo Pizza Crust. Not at chewy as I was hoping for, but better than anything else I have. Next time I'm going to mix the yeast and warm water and let it set for 10 minutes to see if that helps. I do that with my bagel recipe with these same two flours and they're better this way.

Made this crust last night and it tasted great, but was very crumbly. I follower the recipe exactly, except used arrowroot starch instead of tapioca starch, but I've always understood that they are pretty much interchangeable. Now looking at the instructions again I see that I didn't pierce the dough or preheat the sheet pan (by the time the dough had risen we were ready to just get the pizza done and I skipped over those parts). Would any of these omissions result in a crumbly crust? Any thoughts would be appreciated! This definitely got as close to a perfect grain-free crust as I've found!

Absolutely wonderful recipe! Pizza turned out great! The crust is chewy and almost cheese like so I didn't miss the cheese at all. I topped it with marinara sauce and herbs and uncured meat. Delicious 😋
