Fried polenta is a traditional side dish popular in Northern Italy made with leftover polenta. Crispy outside and creamy inside, it is an easy gluten-free replacement for the pasta to serve with rich meat or vegetable stew or ragu. Traditionally, it is often served with abundant cheese and mushrooms.

&#x1f4cb; Italian Crispy Pan Fried Polenta

Polenta Taragna

water

tbsp salt

olive oil

butter

Parmesan (to sprinkle on top)

Fill a large cauldron with salted water and bring to boil.

Once it is boiling add the polenta gradually stirring with a wooden spoon, making sure there are no lumps.

Stir continuously for 50 minutes to 1 hour until the polenta detaches from the edges of the pot. If you lift the spoon it will stay attached.

Pour the polenta over a large wooden base or over a large oven tin covered with greased foil. You can brush it with some olive oil.

Spread flat and uniformly with a spoon.

Wait for the polenta to cool down completely, about 1 hour.

Make the polenta

Cut the polenta into rectangular sticks (3&#39;X1.5&#39; - 8cm X 4cm)

In a pan warm up olive oil and butter

Place the polenta cakes and fry

Turn onto the other side once the polenta gets a brown color

Place on a serving plate

Sprinkle with freshly grated parmesan cheese while still warm and serve immediately

Italian crispy fried polenta cakes

Coated with Italian-seasoned breadcrumbs and Parmesan, these pan-fried polenta slices make a quick appetizer or small plate. They’re delicious served with marinara sauce and basil pesto as dipping sauces.

Pan-Fried Polenta Slices

18-ounce tube (510 grams) prepared polenta

breadcrumbs

Parmesan cheese (or Pecorino Romano)

Tablespoons olive oil (more if needed)

Pesto sauce (for serving)

Marinara sauce (for serving)

Remove the tube of polenta from its packaging and blot it dry if necessary. Slice it into rounds about a half-inch thick. You&#39;ll end up with around eight full-size slices and two smaller end slices.

Add the egg and water to a shallow bowl and whisk until beaten and combined. In a separate bowl, stir together breadcrumbs and grated Parmesan.

Dip a polenta slice into the egg, taking care to cover all sides. Lift the slice up and let any excess egg drip off back into the bowl.

Press the slice into the with the breadcrumb/Parmesan mixture, taking care to press the breadcrumbs/Parmesan into the top, bottom, and sides of the slice.

Add 2 Tablespoons of olive oil to a large skillet and heat over medium heat. Once the oil is hot, add enough polenta slices in a single layer as will fit in the pan with some space between them. You&#39;ll likely need to cook them in a few batches.

Cook for several minutes, until the bottoms are golden-brown. Flip and cook until the other side is golden-brown. Once done, remove from the skillet and place them on a paper towel-lined plate to absorb any excess oil.

Serve warm with pesto and/or marinara dipping sauces.

I have made this but dredged in flour then egg and breadcrumbs. 
My daughter is a vegetarian and her boyfriend is not.  They use their airfryer

This makes a great appetizer (or main course)!  I cooked it in an air fryer for about 15 minutes; that worked well.
