Here&#039;s an easy recipe for the perfect restaurant style paneer butter masala. It&#039;s a luscious onion tomato gravy with creaminess from cashews, khus khus (poppy seeds), butter and cream. Soft paneer simmered in this gravy is a big hit with everyone

Restaurant Style Paneer Butter Masala

Oil (neutral flavoured like canola, rice bran, sunflower)

Butter (divided)

Paneer cubes (or Cottage Cheese)

Kashmiri Red Chilies

Ginger Garlic Paste

Bay leaves

Cinnamon Stick

Cloves

Cardamoms

Peppercorns

Cashew Nuts (chopped)

Khus Khus (White Poppy Seeds)

Onion (roughly chopped)

Tomatoes (roughly chopped)

Salt (divided)

red Chilli powder (cayenne pepper)

Garam masala

Turmeric

Ketchup

Kasuri Methi (roasted and crushed)

Fresh Cream

Bouquet Garni

Wrap the whole spices (bay leaf, cardamom, cloves, pepper) in a cheesecloth or muslin to make a bouquet garni

Cook gravy base

In a large pan or kadhai, heat a tablespoon of butter and a tablespoon of oil. Add kashmiri red chillies, ginger garlic paste and saute for a minute. Add onions and cook for another 2-3 minutes. Next add cashews and poppy seeds. Once the onions turn translucent, add tomatoes and a teaspoon of salt. Cook the tomatoes for 2-3 minutes and then add the spice bouquet garni along with 1/2 cup water. Cover and cook this for 15 minutes till the tomatoes soften.

Blend to smooth

Set the mixture aside to cool. Once cool, remove the bouquet garni and blend this mixture to a smooth paste. Add another cup of water while blending.

Boil gravy

In the same pan or kadhai, heat the remaining butter and add the blended tomato onion paste prepared in step #3. Add garam masala powder, chili powder, turmeric, ketchup, 1/2 teaspoon salt along with 1/2 cup water. Bring this to a boil.

Simmer

Once the curry comes to a boil, simmer and cook for 20 minutes, till you can see drops of oil floating to the top and along the sides

Smoke the gravy

At this point, you can smoke the gravy if you like. Carefully heat a piece of lump coal using tongs till red hot. Place the coal in a steel bowl and place this bowl in the pan in a way that it doesn&#39;t submerge (watch video). Pour a teaspoon of oil on top and as soon as it starts smoking, cover the gravy for 2 minutes.

In another pan, dry roast the kasuri methi and grind it to a fine powder. Mix kasuri methi and a tablespoon of curry in the gravy. Add paneer cubes. Mix and simmer for 2 more minutes. Top with more cream or butter and serve hot.

Paneer Butter Masala - Restaurant Style | Luscious Paneer Makhani

Paneer makhani is a delicious, creamy &amp; rich dish made of paneer in cashew tomato gravy. Serve paneer makhani with plain rice, flavored rice or any Indian flat breads like roti, naan or plain paratha.&nbsp;

Paneer Makhani Recipe

cashewnuts (or blanched almonds)

tomatoes (or 400 gms)

paneer ((200 grams Indian cottage cheese))

butter ((can use upto 2 tbsps))

green cardamoms ((elaichi))

cinnamon

((optional, but recommended))

green chili ((slit & deseeded, optional))

ginger garlic paste

salt

sugar ((to balance the flavors))

turmeric ((haldi) (optional))

1¼ teaspoon garam masala ((adjust as needed))

½ teaspoon kasuri methi ((dried fenugreek leaves))

cream ((adjust to suit your taste))

If using store bought paneer, then soak it in hot water for 15 to 20 mins.&nbsp;

Drain the water and use. This will keep the paneer soft.

Blend together tomatoes and cashews to a smooth puree.&nbsp;

If you do not have a powerful blender then just soak cashews for 10 to 15 mins in hot water.&nbsp;

The tomato puree has to be smooth.&nbsp;

If you find your puree coarse, then pass it through a strainer.

Preparation

Heat a pan with butter. saute cloves, cinnamon, cardamoms and green chili.

Then saute ginger garlic paste for 2  mins until the raw smell has gone.

Transfer the tomato puree to the pan.&nbsp;

The tomato puree will begin to splash so be cautious.&nbsp;

Cover partially and cook until the puree thickens.

Add chili powder, turmeric and salt.&nbsp;

Saute until the mixture leaves the sides of the pan.&nbsp;

Next add garam masala and saute for 1 to 2 mins.

Pour 1 cup water and sugar. Adjust the amount of water as needed to make a gravy.&nbsp;

Cook until the paneer makhani gravy thickens &amp; you see traces of butter or grease on top.

Add the paneer &amp; kasuri methi to the makhani gravy.&nbsp;

Stir gently and cook covered for 2 mins on a low heat.&nbsp;

Pour the cream and allow to bubble.&nbsp;

Transfer to a serving bowl and garnish with cream and coriander leaves.&nbsp;

Serve paneer makhani with roti, naan or jeera rice.

How to Make Paneer Makhani

Paneer Makhani Baked Ziti

penne (boiled Al-Dente)

mozzarella cheese, shredded

Tbsp Ghee

Paneer, 1/4 inch cubed

onion, finely chopped

garlic clove,

Jalapeño, minced

spinach

red u0026 green bell pepper, diced

tsp chili powder

tbsp tandoori masala

cumin-coriander powder

tbsps ghee

Rao’s marinara sauce

heavy cream

1.5 water or stock

bay leaf

green cardamom

large white or yellow onion, finely chopped

garlic paste

ginger paste

thai green chili

turmeric

tsp garam masala

tsp kasoori methi, crushed

brown sugar

Melt the ghee in a Dutch oven.

Add bay leaf, cardamom, onions, serrano and salt and cook for 8 minutes.

Also add the ginger and garlic and cook, until fragrant 2 minutes. Add turmeric, chili, tandoori and cumin-coriander powders and cook spices for a minute.

Now add the pasta sauce, water u0026 salt. Let it simmer for 8-10 minutes. Remove from the stove and fish out the bay leaf and cardamom.

Puree the sauce using immersion blender and blend until smooth. Add cream, cilantro, garam masala, kasoori methi and brown sugar and simmer for another 3-4 minutes.

Make Sauce

In a large skillet heat ghee. add onions, garlic and Jalapeño and cook for a few minutes until they are soft. Add bell peppers and cook for 2-3 minutes.

Add chili powder, tandoori and cumin-coriander powder and cook all the spices for a minute.

Add  paneer u0026 spinach and gently fold in until all of the seasonings are well incorporated into the paneer. Cover the pan and cook for 3-4 minutes and stir in cilantro. Keep it aside.

Make Paneer Veggies

Boil pasta accord to package direction. Keep it al-dente.

Heat the oven to 350° f

Spread a small layer of the sauce on the bottom of baking dish(9x13). Top with half of the cooked pasta, spread the paneer/veggie mixture, spreading evenly across the entire dish.

Now top with more sauce and half of mozzarella cheese on the sauce in an even layer.

Cover with the remaining pasta and then the remaining sauce. Top with the remaining mozzarella cheese. Bake until bubbling for about 25 minutes. Let it rest for 5 minutes and garnish with fresh cilantro.

Restaurant Style Paneer Butter Masala | Paneer Makhani

cashewuts (about 12-15) (OR almonds)

cinnamon stick

butter (or oil)

cumin (jeera) seeds

bayleaf

chili

paneer (cottage cheese)

fenugreek leaves (kasoori methi)

garam masala powder (or use kitchen king masala)

fresh cream (full fat)

sugar

salt (as per taste)

cilantro/coriander leaves (for garnish)

Put the onions, tomatoes, cashew nuts, ginger, garlic, whole spices, and 1 cup of water into a pan and bring to a boil.

Cook on a medium flame for at least 15-20 minutes. Remove from the heat and cool. Blend to a smooth puree/paste using a high-speed blender.

In a pan, heat the butter, add the jeera seeds, and saute for 30 seconds.

Add Kashmiri red chili powder, bay leaf, give a quick stir.

Then add onion-tomato cashew puree. Close lid and cook on medium heat for 2-3 minutes.

Add the paneer, kasoori methi, garam masala, or kitchen king masala, salt. Mix well and bring the mixture to a boil.

Finally, gently stir in the cream, and paneer butter masala is ready to serve.

Serve Paneer makhani recipe hot with chapati, naan, rice, and onion slices.

Stovetop Method:

Firstly, add 1 cup of water into the Instant pot insert. Place the trivet.

Put the onions, tomatoes, cashew nuts, ginger, garlic, whole spices, and 1 cup of water into a deep pan. Place the pan over the trivet.

Close the Instant Pot with pressure valve to Sealing. Cook on High Pressure for 8 minutes.

Once the pot beeps, let the pressure release naturally.

Puree cooked onion-tomato mixture using a hand blender until smooth. If you don&#39;t have a hand blender, puree in a blender in batches once slightly cooled.

Then I usually sieve the onion-tomato puree for silky texture and discard the residue, but it&#39;s optional.

Press SAUTE on Instant Pot. Add butter/oil to the POT. Once hot, add cumin seeds and saute for 30 seconds.

Then add onion-tomato-cashew pureed mixture. Mix well and cook for 2-3 minutes.

Add the paneer, kasoori methi, garam masala, salt. Mix well and bring the mixture to a boil.

Lastly, gently stir in the cream, and paneer butter masala is ready to serve.

Instant Pot Method:

I tried this with the pressure cooker last night and it was amazing.  I think it's the first time I've actually succeeded in making a restaurant quality recipe at home.  My husband and I both loved it.
