This curried tomato lentil soup is one of my go-to pantry recipes! The ingredients are easy to keep on hand.

Pantry Recipes: Curried Tomato Lentil Soup

Heat the oil in a large pot over medium heat. Add the onion and a pinch of salt and cook until soft and lightly browned around the edges, 8 to 10 minutes, reducing the heat to low as needed.

With the heat on low, add the garlic, ginger, curry powder, and red pepper flakes and cook, stirring, until fragrant, about 2 minutes.

Add the tomatoes, lentils, water, coconut milk, ½ teaspoon salt, and several grinds of black pepper. Bring to a boil, cover, and reduce to a simmer, stirring only occasionally, until the lentils are tender, 25 to 35 minutes. If your soup is too thick, stir in 1/2 to 1 cup more water to reach your desired consistency.

Stir in the cilantro and lime juice. Season to taste with salt and pepper and serve.

Store leftover soup in the fridge for up to 4 days. If it thickens too much in the fridge, stir in a little water while you reheat it until you reach your desired soup consistency. This soup also freezes well.

Recipe video above. This is a &quot;formula&quot; using a creamy white sauce to make a pasta bake using anything you&#x27;ve got. Add in literally any meat, raw or cooked, any vegetable (frozen, canned, dried, fresh, pickled). Canned tuna or salmon, bacon, ham, chorizo. You&#x27;re only limited by your imagination! (Eer - and what&#x27;s in your pantry 😂) If using raw meat and veg that needs to be cooked, cook them first then make the sauce in the same pot. If using add ins like canned salmon and corn that do not need pre cooking, just make the sauce and mix it up with the pasta, then bake until bubbly and golden! See above in post for combination suggestions.

Creamy Pasta Bake "formula" - make this with ANYTHING!

/ 1lb pasta ((any short

tbsp salt ((for water))

tbsp (60 grams) butter (, unsalted)

tbsp flour (, any (GF option Note 2))

(1.25 litres) milk (, any fat, any type)

chicken

(75 grams) parmesan

tsp black pepper

tsp EACH thyme and parsley (,

tsp EACH mustard, garlic, onion powder

olive oil

Salt and pepper

(200 grams) cheese (, shredded (Note 4))

Preheat oven to 180°C/350°F.

Pasta - Boil water with 1 tbsp salt. Add pasta, bring back up to boil then cook per packet directions MINUS 2 minutes. Should be just cooked, still slightly firm in middle. Drain, return to pot.

Heat half butter &amp; 1 tbsp oil in a large pot over high heat. Stir in garlic for 10 seconds, then cook your raw meat and vegetables with a sprinkle of salt and pepper. Meat must be fully cooked - will not cook further in oven.

Add remaining butter, melt. Mix in flour, then follow Creamy Sauce step 2 onwards.

Cooking RAW Meat &amp; Vegetables

Start here if you have NO COOK Add Ins (like canned tuna): Melt butter in large saucepan over medium heat.  Add garlic and stir for 10 seconds, then stir in flour.

While mixing, gradually pour in about 1/3 of the milk. Once the flour-butter mixture is incorporated into the milk, pour in remaining milk and mix.

Add remaining milk, stock powder, parmesan, pepper and herbs (if using) and mix. When the milk starts to heat up, mix constantly to make sure the white sauce doesn’t catch on the base.

After 4 - 5 minutes, the sauce should be thick enough that you can draw a path across the back of a spoon (see video).

Creamy Sauce

Return cooked pasta into pot. Mix with sauce and no-cook Add Ins.

Spread in large casserole dish, top with cheese and bake 25 minutes until golden and bubbly. Serve!

Assemble &amp; Bake

An easy and quick recipe for red beans and rice using canned kidney beans and bacon for extra richness and smoky flavor. Ready in only 30 minutes!

Quick Red Beans And Rice

(uncooked) white rice,

bacon

onions (or 1 onion and 1 green bell pepper)

coriander

garlic powder

cumin

kosher salt, or to taste (see notes

tomato paste

kidney beans, undrained

Quick Red Beans and Rice

Start preparing the white rice according to the directions on the package. If the rice is ready before the beans, just turn the burner off and let the rice sit with the lid on until ready to use.

Chop the bacon into large chunks. Heat a large (12&#8243;) skillet over medium-high heat. Add the bacon and cook, stirring occasionally with a spatula or wooden spoon, until the bacon is browned and most of the fat has rendered out. This should take about 9 &#8211; 10 minutes. If the bacon is browning too quickly, turn the heat down.

While the bacon is cooking, dice the onion (and bell pepper, if using).

Once the bacon is cooked, drain most of the grease, leaving about 1 &#8211; 2 tbsp. in the pan (leaving some grease in the pan is optional but I recommend it!). Return the pan to the heat and add the chopped vegetables, plus the salt, pepper, and spices. Cook, stirring frequently, for 3 minutes or until the onion begins to soften.

Add the tomato paste and continue to cook for another minute, stirring the paste around so it is evenly incorporated with the other ingredients and no lumps of tomato paste remain.

Add the water and two cans of undrained kidney beans to the pan. Scrape up any brown bits stuck to the pan with your wooden spoon or spatula. Simmer gently for 5 minutes, stirring occasionally, or until the sauce is thickened to your liking. Turn down the heat if necessary to maintain the gentle simmer.

Taste the beans and add more salt and/or pepper if needed. Serve in bowls over the prepared white rice.

I used White onion, mixed yellow, red &amp; green pepper, plus some celery for that creole/Cajun ‘holy trinity’ flavor base, bay leaf, low sodium old bay seasoning, garlic powder &amp; thyme. Delish!
