Papas con Chorizo is an easy Mexican chorizo and potatoes dish that&#039;s best served with fresh tortillas. Great for breakfast and ready in only 30 minutes!

Papas con Chorizo

potatoes,

olive oil

onion, (diced)

chorizo

salt, (to taste)

black pepper (to taste)

cilantro (for garnish)

In a medium saucepan, add potatoes. Cover completely with water, cover with lid, and bring to a boil over high heat.

Reduce heat to simmer and cook for 5-8 minutes, or until potatoes are cooked through. The potatoes should be tender and easily pricked with a fork. Carefully drain the water and set aside.

Heat olive oil in a large skillet over medium-high heat. Add the onions and cook for 5 minutes, stirring occasionally, until softened and translucent.

Add chorizo and break up into smaller chunks using a wooden spoon. Cook, stirring occasionally, until the chorizo is cooked through, about 8-10 minutes.

Add the potatoes and stir together to combine with the chorizo mixture. Cook for 5 more minutes.

Taste and season with salt and pepper as necessary. Garnish with chopped cilantro and enjoy.

This is the most easiest and delicious recipe!  I used one of those mesh bags of 1.5 pounds of baby yellow potatoes and MorningStar Chorizo.  I never liked the MS Chorizo because I found it too salty but in this recipe it's perfect!  I microwave it and toss it in towards the end.  I never measure anything, just eyeball to taste!  Delicious vegetarian meal!  I like to serve with tofu scramble, refried beans on the side and fresh store bought salsa (not the jar stuff)

This was delicious!!!  We had an "Isabel Eats" breakfast at my house this morning:  this papas con chorizo, and I made your homemade chorizo instead of buying it at the store.  I was so excited for how it turned out!  The spices were just perfect!  My husband put his in a tortilla with eggs, and after his first bite said, "Wow!"  Honestly, this chorizo was so easy to make, I'm pretty sure that I will just be making homemade chorizo from here on out!  We also had your coffee cake muffins this morning.  It was a fantastic breakfast, and I will definitely be making the chorizo and muffins again!

Chorizo con papas, or sometimes called papas con chorizo, is an incredibly easy Mexican dish that you can use to make tacos, tortas, gorditas, and so many more delicious foods.

Chorizo con Papas or Papas con Chorizo Made Vegan

garlic (finely minced)

potatoes

salt (adjust

The first step after chopping up the potato bits, it’s to boil them until they begin just to soften. Drain and set aside.

In a very large pan heat up the oil then add the chopped onion. Sprinkle with a pinch of salt and sauté until soft and translucent.

Once the onion is nice and soft you can add the minced garlic. Sauté for a couple of minutes. Stir now and then to prevent it from burning.

Now you’re ready to add the vegan chorizo. Mix until it’s completely combined with the cooked onion and garlic. Sauté until the chorizo is nice and crispy. If you don’t like it a little crispy then just cook for about 8 minutes or less.

Now you’re going to add the boiled potato pieces. Mix until well combined with the chorizo mixture.

Once everything is well combined you can sprinkle in some more salt. Give the ingredients another good mix. Sauté for 10 more minutes.

After the 10 minutes, you can carefully taste the chorizo con papas and see if it needs more salt or not. If so add it slowly because remember you can’t remove the saltiness!

The chorizos and papa looks amazing! We ate this a lot in my household, and I am excited to try it with my own vegan twist to it.
