This Pasta alla Vodka is perfect for a quick weeknight dinner with an easy and creamy tomato and vodka sauce, topped with bacon and Parmesan cheese!

Pasta alla Vodka

pasta (I used mini shells)

olive oil

onion

garlic (minced)

vodka

nutmeg (ground)

red pepper flakes

salt and pepper

tomato puree ((1 can))

half and half (or heavy cream)

bacon (chopped and fried)

Parmesan cheese (freshly grated)

parsley (for garnish)

Cook pasta: Cook the pasta according to package instructions. Drain in a colander and rinse it under cold water to stop it from cooking any further. Reserve some of the pasta water, just in case we need it to thin out the sauce.

Make vodka sauce: Heat the olive oil in a large skillet over medium-high heat. Add the onion and cook for 3 to 5 minutes until it softens and becomes translucent.

Add the garlic and cook for another 30 seconds until it becomes aromatic.

Add the vodka, stir and cook for a couple minutes until the almost all of the vodka has cooked down. Stir in the nutmeg, red pepper flakes, salt and pepper.

Add the tomato puree to the skillet, then stir in the half and half or heavy cream. Bring to a boil.

Stir in pasta: Stir in the cooked pasta, bacon and the Parmesan cheese. If the sauce is too thick and the pasta has soaked up all the sauce, add some of the reserved pasta water.

Garnish and serve: Garnish with parsley and serve.

Cook gnocchi as directed on package, reserving 1/4 cup pasta water. Set aside.

Melt butter in large deep saucepan on medium-high heat. Add garlic; cook and stir 1 minute. Add tomato paste; cook and stir 1 minute until deep, dark red in color. Stir in OLD BAY® Vodka until blended. Whisk in heavy cream. Bring to simmer; cook and stir until smooth and slightly thickened, about 2 to 3 minutes. Stir in OLD BAY® Seasoning and reserved pasta water until well blended. Remove from heat.

Pasta in vodka sauce is a really easy 'from scratch' sauce to make with your most basic ingredients. Plus it's on the table in about 25 minutes or less.

Penne Alla Vodka Recipe

penne, rigatoni, or ziti

parmesan cheese

tomato paste (about 4.5 ounces)

shallot, finely chopped

Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 2 cups of pasta water before draining and set aside.

Meanwhile, in a large skillet over medium heat, melt butter with olive oil. Add shallot and garlic and cook, stirring constantly, for about 4 minutes or until very tender. Do not burn!

Add tomato paste, red pepper flakes, and vodka. Stir until paste fully coats the shallots and garlic. Cook for about 3-4 minutes, stirring occasionally.

Add 1 cup of pasta water. Stir until smooth. Bring sauce to a simmer, add cream, and turn off the heat. Season with salt and pepper, to taste. Fold in the pasta until fully coated in the sauce. Add parmesan cheese and continue to toss/mix.

Add additional reserved pasta water as needed (a little at a time) if the sauce is too thick. I like a creamy sauce that is just thick enough to really coat the pasta without being too runny. I usually just do 1 cup total.

Serve garnished with more Parmesan and chopped fresh basil.
