Amazing recipe. One thing I did, and recommend doing having made this recipe with and without, is adding 1/2 cup of red wine (you could use white too for a different flavor profile) after cooking down the celery, onions, carrots, and garlic. It deglazes the pan and loosens up those yummy parts stuck to the bottom of the pan and also adds more depth to the soup.

This is my husband’s favorite soup. I definitely use more broth then the recipe calls for because the pasta soaks it up. Also use I box broth and one box stock for a richer flavor.

This is a great ratio recipe.  I added 3 tbsp of tomato paste at beginning, 1 cup of white wine  to deglaze after 10 minutes  and 3oz (2 cups) fresh chopped spinach.   I added 300g (12 oz) of dry fried mushrooms at the end.   A great recipe tweaked to our tastes

I made this tonight. I used what I had. I had chorizo. Everything else was the same. I added the rosemary but I didn't chop it. I just put the whole spring in, also added a sprig of fresh thyme. I had tubettini so that's what I used. The broth was excellent before adding the pasta. I hope there is some left after the pasta cooks.

Very good, but it takes way more than 20 minutes.  The carrots were hard after 20 minutes.  Takes at least an hour to cook

This recipe is so easy and so Delish!!!  Its 90 degrees out, but I'm craving my Pasta e Fagioli.  Very tasteful, and soothes your belly!!!  Love Delish recipes!

I made this today and its delicious! The only things I did differently was I used 1lb of Italian sausage instead of a half pound. I also added about a tbsp of vegeta seasoning which is great for most any recipes with a chicken broth base and I used 2 cups of ditalini as opposed to 1.5 cups. Theres a lot of broth so 2 cups won't soak it all up. I omitted the rosemary because I've never been a fan of it.

Pasta E Fagioli Is The Only Soup You Need This Winter

Pasta Fagioli (Pasta and Beans) is a great tasting, hearty, vegetarian Italian pasta and bean soup, perfect for the cold, super quick and freezer friendly.

Pasta Fagioli (Pasta and Beans)

onion

garlic (chopped)

celery (chopped)

carrot (finely chopped)

15 oz can cannellini beans

tomato sauce tomatoes

bay leaf

tbsp basil

tbsp parsley

oregano

water

kosher salt and pepper

parmesan cheese for topping (optional

In a deep pot, saute onion and garlic in olive oil over medium heat.

Blend the cup of beans with one can water in electric blender until almost smooth.

Add blended beans to pan then add the can of tomato sauce, celery, carrots, chicken broth, basil, bay leaf, parsley, oregano, salt and pepper.

Add 1 cup water and bring to a boil. Simmer, covered for 20 minutes stirring occasionally.

Add pasta and cook uncovered until pasta is al dente, according to pasta directions.

Ladle soup into bowls and top with grated cheese (extra).

I like pureeing the beans to get my picky kid to eat this, but if you prefer your beans whole, you can skip that step.

(8-ounce can) tomato sauce

(15-ounce can) red kidney beans

Parmesan cheese (for garnish)

Brown ground beef in stockpot set over medium heat, stirring frequently until cooked throughout, about 5 minutes. Drain away any drippings from the beef and stir in the onions, carrots, and celery and cook until just tender, about 3 minutes. Stir in the garlic and reduce the heat to low. Stir in the stock, tomatoes, tomato sauce, basil, oregano, thyme, salt and pepper. Bring to a boil and stir in the ditalini, along with the beans and their liquid. Reduce the heat to medium and cook until the vegetables are tender and the pasta is al dente, about 10 minutes.

Serve warm with grated Parmesan cheese and parsley, optional.

Pasta e fagioli, sometimes shortened to pasta fagioli, is a classic Italian soup made with pasta and beans. My recipe is a comforting, delicious vegetarian dinner! Serve it with crusty bread for sopping up the flavorful broth.

extra-virgin olive oil (plus more for drizzling)

fennel bulb or 2 celery ribs (finely chopped)

carrots (finely chopped)

sea salt (plus more to taste)

garlic

tomato paste

rosemary

beans

Parmesan rind (optional)

ditalini pasta (or other small pasta)

kale

red pepper flakes

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, fennel, carrots, salt, and several grinds of pepper and cook, stirring occasionally, for 10 to 15 minutes, or until very soft.

Add the garlic, tomato paste, and rosemary and cook, stirring, for 1 minute. Add the tomatoes and their juices, the beans, broth, and Parmesan rind, if using. Simmer for 20 minutes.

Add the pasta and simmer for 10 more minutes, or until al dente. Stir in the kale and red pepper flakes and cook until the kale is wilted. Season to taste and serve.

Warming and filling, simple and frugal, and a complete meal in one bowl - you can&#x27;t go wrong with my traditional, veggie-packed pasta fagioli (aka pasta fazool)!

Pasta Fagioli (vegan)

soffritto

white beans

tbsp flat leaf parsley (finely chopped)

plum tomato (coarsely chopped)

50 g mixed short pasta ((dry weight))

Sea salt and pepper (to taste)

Vegan parmesan

Vegan sausages (sliced)

crusty bread

Add the soffritto to a large pan, along with the vegetable broth. Bring to the boil, then reduce the heat, and simmer for 5 mins.

Add half the beans and all of the tomato.

Mash the remaining beans, then add to the soup. Add the pasta, kale, and parsley, and stir.

Cook gently for another 8-10 minutes, until the pasta is al dente, stirring once or twice to prevent the mixture sticking, then turn off the heat, and skim the soup to remove any froth.

Ladle into dishes or bowls, grind a little black pepper over the top, and serve.

Add a few slices of vegan sausage during the last 5 mins of simmering. You could also finish the soup with a sprinkling of vegan parmesan, and serve with a chunk of fresh crusty bread or sourdough.
