peach baked oatmeal

<em>A healthy baked oatmeal recipe using one of my favorite summer fruits: peaches! Make ahead for meal prep or a weekend brunch. </em>

Peach Baked Oatmeal

old fashioned rolled oats

almond milk

cinnamon

vanilla

almond extract

ripe peaches, divided (1 cup chopped and 1 cup sliced)*

maple syrup

Tablespoons melted coconut oil

sea salt

Measure out 1 cup of chopped peaches and 1 cup of sliced peaches.

Add oats, almond milk, cinnamon, vanilla, almond extract, 1 cup chopped peaches, maple syrup, coconut oil and sea salt in a large bowl.

Pour into a square baking dish sprayed with non-stick spray and top with remaining sliced peaches.

Remove baked oatmeal from the oven and let sit for 5 minutes to cool. Add a portion into a bowl and top with almond milk. before serving.

So glad this recipe was posted at the right time!  I picked up my CSA fruit share and peaches happened to be this week's fruit along with blueberries.  Made this exact recipe and added a cup of blueberries and it is delicious.  Super easy. Nothing like local organic fruits!  Thank you!

I have made this a couple times since your post, it is one of my favorites! I made it on top of stove instead of the oven and left out the almond extract and coconut as I did not have them, taste was great! Thank you!

Made this oatmeal yesterday for meal prep. I did 1/2 cup maple syrup and it was amazing! If you can try try try it. It taste like peach cobbler but in oatmeal. Soooooo good

This was great. Thank you for the recipe. Very quick to prepare and very easy to substitute ingredients I used apples instead of peaches and honey instead of maple syrup. Made this yesterday for breakfasts this week - delicious! It’s peach season here in CO, so needed to use them up. Happy to have something healthy and filling for my second grader’s first week back to school. 

I added some unsweetened shredded coconut, vanilla protein powder and chopped walnuts/pecans and used some date paste instead of maple syrup. Yum! Love your blog and recipes.

This past week, I got some over ripe bananas and peaches marked down and today I realized I HAD TO do something with them. When I found your Peach Oatmeal recipe, I thought I could add some bananas. Once I got into it, I realized I had to double the recipe and I didn't have any almond extract,enough maple syrup or any almond milk so I just omitted the almond extract, used 2% milk and added a little sweetener. Just a tad. I'm diabetic. And I'm glad I only added a small amt because the bananas add so much sweetness! Thanks so much also for using coconut oil. I only recently learned how important it is to our bodies!!! Just Thanks So Much!!! Can't wait for more!!!

This was the easiest recipe- perfect for early morning before everyone gets up or while meal prepping. I had all of the ingredients on hand!

Delicious!  Will definitely make again. Used lite coconut milk. Did not need the full cooking time in recipe.

Easy and delicious recipe! The almond extract combination with the peaches is very good... I didn't have this on hand and thought about omitting it, but I'm glad I didn't! Used regular milk, but almond milk would be delicious, as well!

Tastes super healthy like a normal bowl of oatmeal. Would definitely recommend adding another sweetener to make it special!

This was so good!  I made it for breakfast for the week and I will definitely make it again.  As it was cooking, it smelled so good!  The only thing I did differently was instead of maple syrup, I used honey.

I’ve made this 10 times. It’s sooooo good! I love there’s no added white sugar. The maple syrup sweetens it perfectly. I add more cinnamon and I like it with fresh 🍐 pear once it’s too soft too eat. Thank you!!

I don’t know how many times I’ve made this and other of the baked oatmeal recipes I’ve made! I like adding egg whites in for extra protein. I’m a meal prepper with a horrible sweet tooth so these are a perfect way to get my day started off and sweet cravings satisfied in a healthy way 😋

Delicious! My 18 mo approved as well! The only thing I omitted was almond extract because I didn’t have any. Still good!

I had some extra ripe peaches that I needed to use up. And this looked delicious. Just came out of the oven..and smells amazing!!!
I only had 1 cup of almond milk to use so I subbed 1 cup of oatmilk yogurt and 1/2 cup spiced coconut cream for the second cup and half. Also added ground flaxseed.
We just had our first bites and it is supreme!!! My daughter proclaimed it Peach Cobbler Oatmeal...and my picky girl ate an entire serving.

I made peach baked oatmeal this morning, and cld not be happier with how it turned out. This scrumptious treat is not just for people w dietary restrictions - it deserves to be made just because it’s THAT good. The combination of peaches and almond flavor is luxurious, and yes we went w the almond butter drizzle that sealed the deal. I never had before an oatmeal bar, and the portability of leftovers is an added bonus. Next time I may make w a 5-grain hot cereal I have that’s similar to old fashioned oatmeal. So many possibilities though the recipe is amazing as is. My family all loved!! 😋🥰🍑🍜

A healthy baked oatmeal recipe using one of my favorite summer fruits: peaches! Make ahead for meal prep or a weekend brunch.

Crispy and caramelized on the outside and velvety on the inside, this easy and budget-friendly breakfast dish will become a morning favorite.

15 peaches

brown sugar, divided (0.24)

Tbsp salted butter, divided (1.12)

salt (0.01)

oats (old-fashioned

heavy cream (0.69)

Set an oven rack in the middle of your oven and preheat it to 375°F. Drain the cans of peaches, reserving the juices. Add the drained peaches to a 13x9 inch baking dish, reserving six slices for garnish. Add 1/4cup brown sugar to the peaches. Dice 4  tablespoons of butter and sprinkle over the peaches. Finish with 1/4 teaspoon of vanilla. Mix thoroughly.

Add the old-fashioned or rolled oats to a large bowl. Add 1/4teaspoon cinnamon and the remaining 1/4cup brown sugar and mix well.

Mix 1 cup of peach juices with the cream and the remaining 1/4 teaspoon of vanilla. Add the beaten eggs and mix. Add the wet mixture to the oatmeal and stir just until incorporated.
