How to make your own homemade peach filling using fresh, frozen, or canned peaches! This peach filling is great for pie, hand pies, cake filling, or fruit topping! Takes less than 10 minutes to make.

Peach Filling

peaches (fresh or frozen, peeled and sliced)

water (or peach juice)

white sugar

brown sugar

cinnamon

salt

ClearJel (or 1.5 ounces cornstarch)

water

lemon juice

vanilla extract

Peel, core, and chop the peaches into small, 1/2&quot; cubes or thin slices depending on what you&#39;re using the filling for. I like small pieces for things like hand pies and larger pieces for peach pie or for use as a topping. Make sure you remove the skins or they will taste chewy and not have a great texture. You can also use frozen peaches which makes this even easier! 

Add your sliced peaches to a large saucepan over medium heat. Add water, sugar, cinnamon, salt, and brown sugar.

Cook the mixture until the peaches are as soft as you like them. Fresh peaches will take the longest to cook.

Combine your ClearGel (or cornstarch) with the cool water and whisk together to make a slurry

Pour the slurry into your hot peach mixture and cook until the peach filling is nice and thick and turns clear. 3-5 minutes. Cook for one more minute to make sure the ClearGel is thoroughly cooked.

Remove the mixture from the heat and add in your lemon juice and vanilla extract. Stir to combine.

Now you can pour the hot filling into jars and can store your peach filling! Check out this blog post on canning peach pie filling for more detailed info. Storing in the fridge will work, but I prefer to let the filling cool down and freeze peach pie filling. The filling is good in the fridge for up to a week or 6 months in the freezer.

Fried Peach Pies

all-purpose flour

unsalted butter

butter-flavored shortening

oz frozen sliced peaches

sugar

cornstarch

milk

salt, pinch

In a large bowl, sift together flour and salt.

Cut in butter and shortening until mixture resembles large crumbs.

Add water and stir until a dough begins to form.

Turn dough out onto a work surface and begin kneading until you have a soft, uniform ball of dough. (dough will be very crumbly at first)

Cut dough into 8 equal size pieces and roll into a ball.

Place dough balls on a baking sheet and press them into a disc. Cover and refrigerate until chilled, about 30 minutes or until ready to use.

Let&#39;s Make The Pie Crust

In a large saucepan, add peaches, granulated sugar, and brown sugar.  Toss to coat peaches in sugar.

Bring to a simmer over medium heat until peaches are tender enough to mash.

Mash the peaches (I like to mash some and then cut the rest into small chunks)

Allow the peaches to continue simmering until thickened and the juices have dissolved.

Stir in butter and lemon juice.

Stir in cornstarch if needed.

Remove from heat and allow to cool completely. Set aside.

Let&#39;s Make the Peach Filling

In a large bowl, stir together powdered sugar and milk until silky. (may need to add more milk)

Stir in a pinch of salt and vanilla extract. Set aside until ready to use.

Make The Glaze

To assemble the pies, roll a dough ball out to about 5-6 inches wide.

Place 2 tablespoons of peach filling in the center.

Fold the dough over the peach filling and press the edges of the dough together firmly.

Use a pizza cutter to trim the edges to make them neater.

Crimp the edges with a fork to further seal the pie. Repeat these steps with the rest of the pies.

Heat oil in a deep-fryer or deep skillet to 350 F.

Once the oil is hot, carefully place 2-3 pies in the oil and fry until lightly golden, about 3-4 minutes. (flip midway if needed)

Place fried pies on a cooling rack.

When the pies are done frying, brush one side with the glaze. Then, once the glaze has hardened, brush them once again.

Serve once the final glaze has hardened.

I made these golden brown treats today but subbed the peaches for blueberries since I didn't feel like cutting up peaches lol They came out phenomenally and taste oh so good!

Thank you for a delicious recipe.   My first one. . . all of them. . . came out perfect.  You need light hands when you transfer the fruit filled dough to the skillet.  I used Canola Oil. Fried Peach Pies is the bomb!!! My husband loves it thank you so much. This was my first time making a pie crust.  Pillsbury pie crust was my friend for along time so I had to say goodbye our season is over thank you for the recipe and video. Easy recipe to follow. I added cinnamon,  used 2 cups light brown sugar &amp; 1 tablespoon of white granulated sugar and regular crisco instead of what the recipe called for. Crust was tremendously flaky and filling was yummy! I will definitely make these again and also try different filling flavors ❤️ from Oklahoma
