Peach Scones

all-purpose flour

sugar

baking powder

baking soda

salt

unsalted butter ((1 stick), frozen)

peach Greek yogurt ((I use this kind))

heavy whipping cream

vanilla extract

peaches ((about 1 peach), diced)

milk

Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.

In a mixing bowl whisk together flour, sugar, baking powder, baking soda and salt.&nbsp;

Grate the frozen butter and add to dry mixture. Use a fork or pastry blender to cut in the butter.

In a separate bowl whisk together yogurt, cream, egg, and vanilla until well blended.&nbsp;

Add to the dry mixture and use a rubber spatula to fold the ingredients in until it starts to come together in large clumps.&nbsp;

Stir in the diced fresh peaches. Gently knead mixture by hand (in the mixing bowl) just a few times until it comes together. Try not to handle the dough too much.

Dust a clean surface with flour and drop dough onto surface. Gently pat and shape into an 8-inch round.&nbsp;

Cut into 8 wedges then transfer to a parchment lined baking sheet.&nbsp;

Bake in preheated oven until golden, about 16 - 18 minutes.&nbsp;

Cool on a wire rack for 10 minutes before drizzling the glaze on top. These are best served the day they are prepared.

Add powdered sugar to a mixing bowl with 1 Tbsp milk and stir until smooth. Add additional milk, if needed.

cream cheese (chilled)

fresh peach pieces (1 peach)

egg (lightly beaten)

turbinado sugar (for sprinkling on top, if desired)

Preheat oven to 425°F. and prepare a baking sheet by placing a piece of parchment over it.

Sift flour, sugar, salt, and baking powder into a large bowl.

Using a pastry blender, or two knives, cut in butter and cream cheese until the mixture resembles coarse meal.

Add egg, milk and chopped peaches. Mix with a fork until everything comes together to form a soft dough.

Roll out onto a lightly floured surface and pat into a circle about a 1/2-inch thick.

Cut into rounds with a 2-inch cookie or biscuit cutter, and sprinkle with a little bit of turbinado sugar, if desired.

Place onto prepared baking sheet, about an inch apart and bake for 12 minutes or until lightly golden.

Transfer to a wire rack and allow to cool 1-2 minutes before serving warm.
