Buttery Peanut Butter Blondies made from scratch. 

Peanut Butter Blondies

(1/2 cup or 1 stick) butter, melted

(1/2 cup) smooth peanut butter*

(1 and 1/4 cup) brown sugar

vanilla extract

egg egg

(1 and 1/4 cup) plain flour

baking powder

(1 cup) chocolate chips

(1/2 cup) mini marshmallows

Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch square baking tin with baking or parchment paper, ensuring two sides overhang.

In a large mixing bowl, add melted butter. Then add peanut butter, sugar, vanilla and eggs and gently whisk together. 

Add flour and baking powder. Stir until smooth batter forms. Add chocolate chips and marshmallows and stir again. 

Pour blondie batter into prepared tin, smooth the top and place in the oven. Bake blondies for approximately 30 minutes or until golden on the edges and a skewer inserted in the middle comes out clean.

Leave in pan to cool completely &#8211; blondies will firm up as they cool. Cut into squares to serve.

instead of brown sugar, could I use coconut sugar?

These turned out absolutely delicious!! I left out the marshmallows because I couldn't find any in my cupboard but they still tasted heavenly :) Sooooo more-ish!!!

recipe uses too much sugar, it tastes good as a raw dough but once I baked it it was way too sweet I couldn't have more than a bite and I do have a sweet tooth!

I'm not a baker, but this recipe was so easy and tasted fantastic!
The only problem is stopping eating them and my husband and toddler agree

Made these this week at about 8pm as I had the urge to bake and I'd got all the ingredients on hand (although I only used 200g sugar as that's what I had left). Really easy and so tasty - thanks for another great recipe :). My kids have really enjoyed having a square after school and they've also been helping me get through the work day by giving me a little mid-morning boost with a cup of tea!

After blondies are out of the oven, add the Reese's hearts, evenly spaced in rows and columns, 3-by-3. Lightly press them down so they adhere. The chocolate will start melting and to avoid it from melting too much because you want the heart shape to stay intact, place the pan in the fridge for about 10 minutes and then return pan to counter to cool completely before slicing and serving. Blondies will keep airtight at room temp for up to 1 week.

Enjoy soft-baked and flavor-packed peanut butter blondies made in only 1 bowl. Feel free to replace Reese's Pieces with M&amp;Ms, chocolate or peanut butter chips, or use a mixture of these add-ins.

(170 grams) unsalted butter, melted and slightly cooled

(190 grams) creamy peanut butter

(about 260 grams) Reese’s Pieces

Preheat the oven to 350°F (177°C). Adjust oven rack to the center rack position. Line the bottom and sides of a 9&#215;13-inch metal or glass baking pan with parchment paper, leaving an overhang on the sides to easily lift the bars out of the pan. Set aside.

In a large bowl, whisk the melted butter and brown sugar together until combined. Whisk in the peanut butter, then add the eggs, egg yolk, and vanilla. Whisk it all until completely combined.

Add the flour, baking powder, and salt. Fold the batter together using a rubber spatula. Batter is very thick. Finally, fold in the Reese&#8217;s Pieces. Spread evenly into prepared pan and sprinkle with a couple extra Reese&#8217;s Pieces on top (for looks), if desired.

Bake for 30 minutes, then test the blondies with a toothpick. Insert it into the center of the pan. If it comes out with wet batter, the blondies are not done. If there are only a few moist crumbs, the blondies are done. Keep checking every 2 minutes until you have moist crumbs. They taste a little dry if you over-bake!

Allow the bars to cool completely in the pan set on a wire rack. Once cool, lift the bars out of the pan using the paper overhang on the sides and cut into squares.

Cover leftover bars and store at room temperature for up to 1 week.

Super easy, good texture. I used semi-sweet chocolate chips instead of Reese’s Pieces and they weren’t quite sweet enough for me - didn’t realize that the Reese’s Pieces would bring much more sweetness. If making the same substitution again I would up the sugar a bit!
