c. old-fashioned rolled oats

brown sugar

cinnamon

kosher salt

This was an easy and very satisfying recipe. I didnt use nuts and instead of ice cream we used vanilla greek yogurt. My husband loved this and said the yogurt was much better than ice cream. Definitely making again!

Fabulous dessert! Even my 10 year old, who doesn't like 'fruit' desserts, devoured hers.  Our family of 5 enjoyed it plain, with vanilla ice cream, or with Cool Whip. I look forward to putting a  Costco bag of rapidly ripening  pears to good use again soon!

Cinnamon Baked Pears are the Healthy Version of Pie!

For the ultimate fall and winter dessert, make this maple-pear tarte tatin in your cast-iron skillet. Maple syrup adds sweetness and a caramel color to this classic fruit treat.

Maple-Pear Tarte Tatin

puff pastry,

lemon, halved

maple syrup

tbsp. unsalted butter,

tbsp. sliced almonds, toasted

Heat oven to 400ºF. On lightly floured piece of parchment paper, roll puff pastry to 1/8-inch thick. Cut out a 12-inch round and refrigerate until ready to use.

Peel, halve, and core pears, then cut each half in half. Rub pears with cut side of 1/2 lemon.

Juice remaining half lemon. Heat medium cast-iron&nbsp;(about 10 inches) on medium. Add maple syrup, butter, salt, and lemon juice and cook, swirling pan occasionally, until mixture begins to thicken, deepen in color and smell like caramel, 5 to 8 min.; remove from heat. Being careful not to touch maple mixture, arrange pears, cut sides down, in pan. Return pan to low heat and cook pears 4 minutes. Remove from heat and lay puff pastry circle on top, carefully tucking overhang down inside of pan. Cut 3 small slits in pastry and bake in upper third of oven 10 minutes. Reduce temp to 375°F and bake until pastry is deep golden brown and maple mixture has reduced, 15 to 20 minutes. &nbsp;

Let stand 5 minutes, then run knife along edge to loosen. Place plate on top and flip, inverting tart. Sprinkle with sliced almonds and serve warm or at room temperature. 

Classic simple French dessert of poached pears, vanilla ice cream and warm chocolate sauce (see recipe card below). Invented by famous chef, Auguste Escoffier, after hearing the French soprano, Hortense Schneider, sing the title role in Offenbach&#39;s Belle-Hélène in Paris, 1864.

Poire Belle Helene

sugar

500 ml (18fl oz/ 2 cups) water

lemon, juice only

vanilla powder

litre tub vanilla ice cream

In a large saucepan, boil the water, sugar and lemon to form a syrup. Add the vanilla powder, if using.

Peel the pears, leaving the stalk and the core intact. Ensure the pears are covered by the syrup by placing parchment paper on top and cover with a lid.  Poach in the syrup for about 30 minutes until tender.

Remove the pears from the syrup and finely cut the ends off so that each pear can stand up right without falling over.&nbsp;Chill in the fridge until needed.

In each serving dish, serve 1-2 scoops of ice cream, top with a pear and pour over the warm sauce. Garnish with grilled or toasted hazelnuts and serve immediately.

Last time I made this was with tinned pears (don’t tell) but made them poached for the first time. Thanks for all your instructions - so easy to follow and that chocolate sauce is incredible!

You can’t beat the classics! Pears and chocolate sauce was my favourite pudding when I was little - although I have to confess, the pears were always tinned! I really should try making it with fresh pears one day.

Well, I didn't know that.  I thought Nelly Melba was the only singer with her own dessert.  Your version looks really delicious, such a classic.

Would you believe I've never tried this? As much as I hear Cynthia say it's her favorite dessert, you'd think I would have by now! My mother makes poached pears with wine, so it's close, but no cigar! I must give this a try when the pears are ripe/right! :)
