This moist, nutty cake is always a crowd-pleaser!

Upside Down Pecan Cake

all-purpose flour

baking soda

salt

unsalted butter, softened to room temperature

sugar

brown sugar

eggs,

vanilla extract

sour cream

milk

toasted pecans, chopped

coconut

brown sugar, packed

butter, melted

cinnamon

Preheat oven to 350°F (177°C). line a 12x17-inch jelly roll pan with aluminum foil, making sure it hangs over the sides a bit, then grease with non-stick spray.

Mix the pecans, brown sugar and 3/4 cup of the coconut in a small bowl. Sprinkle with cinnamon and salt and stir. Spread the pecan mixture in the lined pan and drizzle with vanilla extract and melted butter.

Whisk the flour, baking soda, and salt together in a large bowl. Set aside. Using a handheld or stand mixer, beat the softened butter on high speed until smooth and creamy - about 1 minute. Add the sugars and beat on high speed for 3 full minutes until creamed together fairly well.  Add 1 egg at a time, beating well after each addition until both are mixed in. Beat in the vanilla extract and sour cream. Scrape down the sides and up the bottom of the bowl as needed.

With the mixer running on low speed, add the dry ingredients to the wet ingredients alternating with the milk. Mix each addition just until incorporated. Make sure not overmix the batter.

Spread the cake batter over the pecan mixture. Smooth it out into a thin, even layer. Bake for 20-22 minutes or until the top is lightly browned and a toothpick inserted in the center comes out clean.&nbsp; Remove from the oven and allow the cake to cool in the pan for about 5-10 minutes.&nbsp;Run a knife around the sides of the pan to loosen and invert the cake onto a platter, using foil overhang as needed. Let cool 10-20 minutes before serving. Enjoy!

Mexican Wedding Cake

oz cream cheese (2 packages)

butter (2 sticks), softened

Preheat oven to 350 degrees F and grease a 9x13 baking dish.

In a large bowl, mix together flour, sugar, baking soda, and salt.

Add eggs and pineapple. Mix until just combined, then fold in the chopped pecans.

Transfer batter to the prepared dish and bake for 40-45 minutes.

As cake bakes, mix together the frosting ingredients until smooth.

Pierce the top of the cooked cake with a fork all over. Pour frosting onto cake while still hot and spread into an even layer.

This pecan upside down cake is made with a moist and simple vanilla cake and topped with an easy caramel pecan topping.

Pecan Upside Down Cake

115 g Butter (soft)

Brown sugar

tsp Vanilla extract

Buttermilk

Eggs (large)

Flour

tsp Kosher salt

Baking powder

tsp Baking soda

tbsp Corn syrup

Pecan (chopped)

Preheat an oven to 180c (350f) and line a 9 inch pan with parchment paper. Butter the cake pan with room temperature butter to prevent the cake from sticking to the pan.

Into a medium-sized saucepan, over medium heat, add the brown sugar, kosher salt, butter, and corn syrup. Mix them together using a wooden spoon until the mixture is almost completely dissolved.

Add the chopped pecan and stir until all the pecans are covered with the caramel. Set the pecan mixture aside to cool and make the vanilla cake.

In a large mixing bowl, add the flour, baking powder, and baking soda, and mix with a whisk until combined. Set aside.

In a big mixing bowl, add the softened butter, sugar, brown sugar, and vanilla extract, and mix with an electric hand mixer for 2-3 minutes. Add the eggs and mix until well combined.

Add ½ of the dry ingredient mixture and ½ of the buttermilk into the butter mixture and mix with an electric hand mixer until just combined.

Add the remaining dry ingredients and the buttermilk and mix until just combined.

Pour the cooled pecan mixture into the prepared buttered baking pan and spread it with a spoon.

Pour the vanilla cake batter onto the pecan mixture and spread it with an offset spatula. Bake in a 180c (350f) oven for about 35-40 minutes or until a toothpick inserted into the cake comes out clean.

Allow the cake to cool to room temperature before flipping the cake. Run a knife around the edges of the cake, and top the pan with a plate. Flip the cake and tap the cake pan to release the cake from the pan. Enjoy!
