Upside Down Pecan Cake

all-purpose flour

Preheat oven to 350°F (177°C). line a 12x17-inch jelly roll pan with aluminum foil, making sure it hangs over the sides a bit, then grease with non-stick spray.

Mix the pecans, brown sugar and 3/4 cup of the coconut in a small bowl. Sprinkle with cinnamon and salt and stir. Spread the pecan mixture in the lined pan and drizzle with vanilla extract and melted butter.

Whisk the flour, baking soda, and salt together in a large bowl. Set aside. Using a handheld or stand mixer, beat the softened butter on high speed until smooth and creamy - about 1 minute. Add the sugars and beat on high speed for 3 full minutes until creamed together fairly well.  Add 1 egg at a time, beating well after each addition until both are mixed in. Beat in the vanilla extract and sour cream. Scrape down the sides and up the bottom of the bowl as needed.

With the mixer running on low speed, add the dry ingredients to the wet ingredients alternating with the milk. Mix each addition just until incorporated. Make sure not overmix the batter.

Spread the cake batter over the pecan mixture. Smooth it out into a thin, even layer. Bake for 20-22 minutes or until the top is lightly browned and a toothpick inserted in the center comes out clean.&nbsp; Remove from the oven and allow the cake to cool in the pan for about 5-10 minutes.&nbsp;Run a knife around the sides of the pan to loosen and invert the cake onto a platter, using foil overhang as needed. Let cool 10-20 minutes before serving. Enjoy!

Preheat oven to 350 degrees F and grease a 9x13 baking dish.

In a large bowl, mix together flour, sugar, baking soda, and salt.

Add eggs and pineapple. Mix until just combined, then fold in the chopped pecans.

Transfer batter to the prepared dish and bake for 40-45 minutes.

As cake bakes, mix together the frosting ingredients until smooth.

Pierce the top of the cooked cake with a fork all over. Pour frosting onto cake while still hot and spread into an even layer.

Preheat an oven to 180c (350f) and line a 9 inch pan with parchment paper. Butter the cake pan with room temperature butter to prevent the cake from sticking to the pan.

Into a medium-sized saucepan, over medium heat, add the brown sugar, kosher salt, butter, and corn syrup. Mix them together using a wooden spoon until the mixture is almost completely dissolved.

Add the chopped pecan and stir until all the pecans are covered with the caramel. Set the pecan mixture aside to cool and make the vanilla cake.

In a large mixing bowl, add the flour, baking powder, and baking soda, and mix with a whisk until combined. Set aside.

In a big mixing bowl, add the softened butter, sugar, brown sugar, and vanilla extract, and mix with an electric hand mixer for 2-3 minutes. Add the eggs and mix until well combined.

Add ½ of the dry ingredient mixture and ½ of the buttermilk into the butter mixture and mix with an electric hand mixer until just combined.

Add the remaining dry ingredients and the buttermilk and mix until just combined.

Pour the cooled pecan mixture into the prepared buttered baking pan and spread it with a spoon.

Pour the vanilla cake batter onto the pecan mixture and spread it with an offset spatula. Bake in a 180c (350f) oven for about 35-40 minutes or until a toothpick inserted into the cake comes out clean.

Allow the cake to cool to room temperature before flipping the cake. Run a knife around the edges of the cake, and top the pan with a plate. Flip the cake and tap the cake pan to release the cake from the pan. Enjoy!

Pecan Caramel Mousse Cake

(100 grams) light brown sugar

tbsp (70 grams) butter

tsp (1 grams) salt

tbsp (40 milliliters) whipping cream

(100 grams) pecans/walnuts (, toasted and chopped)

(70 grams) sugar

tsp (5 grams) vanilla extract

(65 grams) all-purpose flour

(480 milliliters) milk

tbsp (15 grams) sugar

tsp (3 grams) salt

tbsp (10 grams) flour

(30 grams) cornstarch

(100 grams) sugar

tbsp (15 milliliters) water

whipping cream

gelatin powder

tbsp (45 milliliters) cold water

Place milk in a medium saucepan and bring to a simmer.

Meanwhile, whisk the eggs with 1 tablespoon of sugar and salt until well combined. Add flour and cornstarch and mix to combine.

Place ½ cup (100g) sugar and 1 tablespoon of water in a medium heavy-bottomed saucepan over medium-high heat, and cook without stirring until sugar dissolves and gets a caramel color.

Reduce the heat to low and gradually add the hot milk to the caramel. Keep over medium-low heat until the caramel is dissolved.

Gradually add the caramel milk to the egg mixture and return to heat. Cook, stirring constantly until it boils and thickens.

Remove from heat and add vanilla extract.

Pour the cream into a clean bowl and cover it with plastic wrap, pressing it directly onto the pastry cream&#39;s surface to prevent skin from forming. Let cool to room temperature.

Prepare the caramel pastry cream.

Preheat the oven to 350°F (180°C), grease the bottom and sides of two 8-inch (20cm) pans and line them with parchment paper.

Prepare the walnut crunch. In a small saucepan add sugar, salt, whipping cream and butter. Cook over medium-low heat until sugar dissolves.

Divide the mixture evenly in two pans. Sprinkle the chopped toasted pecans/walnuts on top. Set aside until the cake batter is prepared.

Prepare the cake batter. In a large bowl add 3 whole eggs, sugar salt and vanilla. Mix to combine. Mix for about 10 minutes until thick and tripled in volume.

Gradually fold in sifted flour. Divide the batter evenly into the prepared pans and bake for about 10 minutes until golden and a toothpick inserted into the center of the cake comes out clean.

Let cool completely.

Prepare the pecan sponge cake layers.

Dissolve gelatin in cold water and let it soak for 5-10 minutes. Dissolve gelatin over low heat, pour over the caramel pastry cream and mix to combine.

In a medium bowl mix whipping cream until stiff peaks form. Gently incorporate it into the pastry cream mixture.

Prepare the caramel filling.

Turn one cake onto a serving platter with the caramelized pecans facing up. Place a cake ring around the cake and line it with an acetate sheet.

Pour the caramel filling over the cake and smooth the top. Add the second layer of cake with the caramelized pecans facing up.

Cover and refrigerate for 4-6 hours or even overnight. Enjoy!
