white sugar

Preheat oven to 350 degrees F and grease a 9x13 baking dish.

In a large microwave safe bowl, heat butter in 15 second increments until fully melted. Add both sugars and vanilla and beat until smooth, then beat in eggs one at a time.

In a small bowl, sift together the flour, baking powder, and salt. Add the dry ingredients to the wet and mix until just combined. Fold in the pecans.

Transfer batter to the prepared baking dish and bake for 30-35 minutes or until cooked through the center.

Apple Pecan Chewies

unsalted butter (melted)

sugar

cinnamon

nutmeg

vanilla extract

eggs, well beaten

apple (peeled, cored, and finely diced)

pecans

Preheat the oven to 325°F and lightly spray a 13x9-inch metal baking pan with nonstick cooking spray. Add melted butter, sugar, brown sugar, cinnamon, nutmeg, salt, and vanilla to a large bowl and blend well by hand. Add beaten eggs, stir well. Add flour and stir until all lumps are gone. Folding in apples and pecans. Spread the batter evenly into the prepared baking dish.

Bake approximately 40 to 50 minutes or until golden brown - being cautious not to over cook. They might still be jiggly in the middle.  Allow to cool then slice and serve.

I make these often, and everyone loves them!  So very tasty!  I have made them; frozen them, thawed, and served.  Equally good after freezing as they are fresh made.  Typically, I use a Honey Crisp apple, peel and all!!
