Perfect Grilled Cheese from The Modern Proper

Perfect Grilled Cheese

Slices thick white bread

tbsp mayonnaise

tbsp room temperature butter

lb Cheddar (or your favorite cheese)

In a small bowl, mix mayonnaise and butter until fully combined

Assembly sandwiches by spreading the butter-mayo mixture on one side of each piece of bread

On the inside of the bread add 1/2 cup of grated cheese and top with second piece of bread that is prepared with the same butter/mayo combo

Add prepared sandwich to a cold cast iron skillet and turn heat on to low

Carefully watch to make sure that you aren’t burning the butter-mayo, flip as soon as one side is golden brown and continue with other side

This process should take 8-10 min on each side

Do not rush this process or you will compromise the crispy golden crust of a perfect grilled cheese.Once both sides are golden brown, transfer to a plate and serve!

How to cook perfect air fryer grilled cheese. Golden, crispy bread and gooey, melty cheese, plus a special easy Dijon sauce to take it over the top!

Air Fryer Grilled Cheese

unsalted butter (softened (or butter spread))

whole grain bread

cheddar cheese

nonfat plain Greek yogurt (or 1 tablespoon mayo if you insist)

Dijon mustard

kosher salt

Preheat

Stir

In a small bowl, stir together the spread ingredients: Greek yogurt, Dijon, and salt. Spread a thin layer over one side of each of the two pieces of bread.

Spread

Place the bread on a plate, and butter the opposite side of each slice, making sure the butter reaches all the way to the edges.

Assemble

Assemble the sandwiches: Place the cheeses in an even layer on top of the Dijon side of the bread slice (it will look like a lot of cheese, but go with it). Place the second slice of the bread on top of the cheese, Dijon-side down. If you are using cheese slices (vs. shredded cheese) and any of the cheese pokes out around the outsides of the bread, trim the extra cheese away (to avoid waste, stack the trimmings in the center of the sandwich).

Secure

Secure the sandwich by sticking a toothpick into two of the opposite corners of the bread.

Place

Slide out the basket and place it on a steady, heat-proof surface. Carefully lower the sandwich into it, then slide the basket back into the air fryer.

Cook

Place in the air fryer and cook on the first side for 4 to 6 minutes, until toasted and deep golden on top (the amount of time you need will vary based on your air fryer model).

Flip

Slide out the basket and place it on a steady surface once more. Remove the toothpicks and with a spatula or tongs, carefully flip the sandwich over. Return the basket to the air fryer and continue cooking for 3 to 4 additional minutes, until the bread is toasted and the cheese is hot and melted.

Slice

Transfer to a plate or cutting board. Let cool a few minutes, then slice and enjoy.

The Ultimate Grilled Cheese Sandwich

brioche bread, ¾-1” thick ((or Texas toast))

butter

sharp cheddar cheese ((or white cheddar))

Gruyere cheese ((or Swiss, gouda))

Colby Jack cheese ((or Provolone, Havarti, Muenster))

tomato slices

pickles

mustard

Heat a griddle or pan over medium heat. (You don’t want the heat too high, or else the bread will brown before the cheese can melt. If in doubt, go to medium-low and slowly increase the heat.)

Place 2 or 3 cheese slices on a piece of brioche, along with any additional desired sandwich fillings. Add another piece of brioche on top to create a sandwich. Repeat to assemble as many sandwiches as desired.

Melt butter in microwave or in a small saucepan. Brush melted butter onto one side of each sandwich.

Place sandwiches buttered side down onto griddle over medium heat, cooking until golden brown, about 3 minutes. Before flipping, brush melted butter on the top side of each sandwich. Flip and cook another 3 minutes, until cheese melts and sandwich is browned and crispy. (Cook 5-6 minutes total.)

Slice sandwiches if desired, serve hot, and enjoy!

Yields 2 grilled cheese sandwiches.
