An easy vegetarian paella recipe. Try using it as a template and substituting your favourite seasonal vegetables. 

Vegetarian paella

vegetable oil

red onions,

garlic cloves, crushed

Calasparra rice

tsp turmeric

tsp smoked paprika

800 milliliters/1 pint 7fl oz hot vegetable stock

tsp finely chopped fresh rosemary

cherry tomatoes

peas

milliliters/4fl oz good quality extra virgin olive oil, preferably Spanish

tbsp chopped fresh parsley, to serve

artichoke hearts

This vegetarian paella uses mainly store cupboard ingredients, including roasted red peppers, chargrilled artichokes and black olives, all from a jar.

Each serving provides 293 kcal, 6g protein, 38g carbohydrates (of which 6g sugars), 9.5g fat (of which 1.5g saturates), 6g fibre and 1.5g salt.


Vegetable paella 

tbsp virgin olive oil

onion, finely chopped

leeks,

garlic cloves, thinly sliced

150 grams/5½oz paella rice

tsp hot smoked paprika

bay leaves

milliliters/2½oz sherry or white wine

600 milliliters/20fl oz hot vegetable stock (made with 1 stock cube)

160 grams/5¾oz chargrilled artichoke antipasti, drained

grams/1¾oz black olives,

parsley

lemon wedges

chicken thighs, boned, skinned,

150 grams/5 ounces cooking chorizo,

300 grams/10½oz fresh large tomatoes, halved, seeds removed, flesh grated (then skin discarded)

tsp sweet smoked paprika

lemon, zest only

chicken stock

thyme

green beans,

500 grams/1lb 2 ounces Calasparra rice

saffron

prawns

lemon

salt and black pepper

This chicken and chorizo paella is a hearty sharing dish that's easy to cook and serve in one dish. Using chorizo in your paella might not be the done thing everywhere, but if you like it, go with it!

We cooked this on a beach in Northumberland and some said it was the best paella they’d ever tasted – dieting or not. You know what? We have to agree.
