Healthy, light and refreshing Persian Shirazi salad with cucumber and tomato is a simple salad packed with herbs and tossed in an olive oil and lime dressing. 

Persian Shirazi Salad with Cucumber and Tomato

tomatoes (about 3-4 Roma tomatoes

small cucumbers (about 2 small Persian cucumbers), diced

onions, diced

tablespoon olive oil

tablespoon lime juice

parsley

mint

salt

black pepper

Dice the tomatoes, cucumbers and onions into small 1/4-inch pieces. Transfer to a medium bowl.

Add olive oil, lime juice, parsley, mint, and salt and pepper. Toss to combine.

Serve immediately, or cover and place in the refrigerator and chill for at least 30 minutes to allow the flavours to infuse together more.

Shirazi Salad, or Salad-e Shirazi, is a simple and bright Persian cucumber and tomato salad that's loaded with herbs and dressed in lime juice and extra virgin olive oil! This quick no-lettuce salad is the perfect side to almost any entree.

Simple Shirazi Salad Recipe 

Roma tomatoes, small diced

English cucumber

onions

green bell pepper (optional),

tbsp EACH chopped fresh parsley, cilantro, and dill

tbsp dried mint (or 1/2 cup chopped fresh mint)

Salt and pepper

Sumac, (optional)

limes (4 tbsp)

Place diced tomatoes for a few minutes in a colander to release excess liquid. (I don't remove the seeds, so this step helps.)

In a large bowl, place the diced tomatoes, cucumbers, onions, and bell peppers.

To flavor, add fresh herbs, dried mint, and a generous pinch of salt and pepper. Add sumac (I started with 1 tsp). Finally, add lime juice, and a generous drizzle of extra virgin olive oil. Toss to combine.

If you  have the time, cover and chill this salad in the fridge for 30 minutes to 1 hour for best taste.

Shirazi Salad

extra virgin olive oil

lemon juice

Finely dice or chop the vegetables and add to a large mixing bowl.

In a small bowl or jug, combine the olive oil with lemon juice, salt, pepper, and add in the dried mint. Give everything a good stir, or if you want the dressing emulsified use a whisk.

Toss the salad with the dressing until everything is well coated in the dressing. Serve immediately or allow the flavors to settle and infuse for 30 minutes before serving.

Farro Salad (Healthy & Delicious Mediterranean flavors)

farro

Persian cucumbers

tomatoes

red onion

fresh mint and parsley leaves

feta cheese feta

walnuts

pomegranate *optional

lemon

pomegranate molasses (or substitute with balsamic glaze)

Salt and black pepper

Boil the farro until cooked with a tender chewy bight - refer to my detailed farro recipe for more tips and steps

When cooked, drain and spread on a sheet pan to cool

In the meantime, chop the cucumbers, tomatoes and red onion into small cubes. Roughly chop up the walnuts and herbs*Optional, I like to soak the chopped onions in a small bowl of water for 10 minutes to remove the harsh onion flavor

Add the chopped ingredients to a large salad bowl along with the cooled farro. Crumble in the feta cheese with your fingers, deseed the pomegranate seeds and sprinkle them into the salad

Add the dressing ingredients to a small mason jar or ramekin and whisk to combine

When ready to serve, pour the dressing over the salad and mix it well. Taste and adjust seasoning if needed and your delicious Farro Salad is ready to enjoy!

Excellent!  I was looking for something to accompany a protein for my weekly meal prep.  This was perfect with Greek marinated chicken breasts!
