Low Calorie Pesto Sandwich Spread

Preheat

Heat a large skillet over medium-high heat and spray with olive oil.

Slice

Slice the chicken breast and bell pepper into strips.

Cook

Add the chicken and the bell peppers to the hot pan and cook for 10-15 minutes, until the chicken is cooked through and the bell pepper is softened.

Spread

To each pita, meal 2 tablespoons of pesto spread to one half, then top each sandwich with cheese.

Assemble

Divide the chicken and bell peppers between the two sandwiches, top with spinach and fold over.

Serve

Cut each pita sandwich in half and serve.

Shred the cooked chicken and add to a large bowl with the cottage cheese and pesto. Mix until the chicken is well coated.

Finely chop the sun-dried tomatoes and spinach, quarter the cherry tomatoes, tear the basil and finely slice the spring onion. Fold everything through the chicken mixture, then season with salt and black pepper and mix until evenly combined and thick enough to scoop.

To serve, toast the sourdough and dollop the smash mix generously onto each slice. Pop any leftovers in the fridge, it will keep for up to 3 days.
