Delicious pesto shrimp pasta with a crazy good fresh cilantro pistachio pesto! This flavorful shrimp pesto pasta recipe is easy to make but will make you feel like you’re at a fancy restaurant. Serve with garlic bread or a side salad for a great ‘date night in’ meal.

Date Night In Cilantro Pistachio Pesto Shrimp Pasta

For the pesto:

cilantro

pistachios

jalapeno, seeds removed

garlic

lime, juiced

avocado oil

pesto

salt

black pepper

For the shrimp:

olive oil

raw shrimp, deveined and tails off

garlic powder

salt and pepper

For the pasta:

oz spaghetti, gluten free

To garnish:

goat cheese

Make the pesto by adding the following to the bowl of a food processor: cilantro, pistachios, jalapeño, garlic cloves, lime juice, olive oil, water and salt and pepper. Process until smooth, scraping down the sides and processing again, if necessary.

Next cook the shrimp: add olive oil to a large skillet or pan and place over medium high heat. Add in shrimp, garlic powder and salt and pepper; cook until shrimp is no longer pink. Remove from heat and set aside.

Cook the pasta until al dente, according to the directions on the package. Drain pasta, then add back to pot. Stir in the pesto and shrimp until well coated. Add pasta to bowls and garnish with goat cheese, a few cilantro leaves and a sprinkle of crushed pistachios. Serve immediately. Makes about 4 servings.

Pesto Shrimp Mushroom Pasta

shrimp (large, peeled, deveined)

red pepper flakes

white mushrooms (sliced)

basil pesto

chicken broth

oz spiral pasta

Heat large skillet on medium-high heat until hot.  Add olive oil - it should run without sizzling.  Add shrimp, season shrimp with 1/4 teaspoon salt and 1/4 teaspoon red pepper flakes, cook for about 3 minutes, turning once midway, until shrimp is pink and cooked through. Remove shrimp from the skillet.

Add another tablespoon of olive oil to the same, now empty, skillet.  Add sliced mushrooms.  Season mushrooms with 1/4 teaspoon salt.  Cook, stirring, until mushrooms release liquid and reduce in volume and get soft, for about a minute or two..  Add back the cooked shrimp.  Add 1/2 cup basil pesto and 1/2 cup chicken broth.  On medium heat, mix everything to combine.  Remove from heat.

Cook pasta according to package instructions.  Drain.  Add to the shrimp with sauce.  Top with chopped fresh basil.

dry spaghetti or linguine

shrimp,

cherry tomatoes, halved

Bring a large pot of well-salted water to a boil. Cook the pasta until al dente per the package directions. Drain the pasta but reserve about 1/2 cup of the starchy pasta water.

While the pasta cooks, pat the shrimp dry and season on both sides with salt, pepper, and red pepper flakes.

Melt the butter with the olive oil in a large skillet over medium-high heat. Add the shrimp and cook undisturbed for 1-2 minutes per side. Remove the shrimp from the skillet and set aside.

In the same skillet, add the tomatoes and garlic and cook for 1-2 minutes until slightly softened. Then, add 3/4 cup pesto, Parmesan cheese, and 1/4 cup of the reserved pasta water and mix well. If needed, add more pesto or pasta water to adjust the consistency.

Toss the cooked pasta and shrimp in the sauce until evenly coated.

Serve hot with extra Parmesan cheese and fresh basil. Enjoy!
