Turkey Lettuce Wraps

vegetable oil (divided)

garlic (minced)

shallots (minced)

ginger (minced)

chili flakes

water chestnuts (finely chopped)

bamboo shoots (finely chopped)

shiitake mushrooms (stems removed and chopped)

carrots (finely diced)

¼ turkey

hoisin sauce (plus more for serving)

kosher salt (for seasoning)

black pepper (for seasoning)

scallion (thinly sliced, for garnish)

cashews (chopped, for garnish)

butter leaf lettuce (separated, washed and dried)

Heat a wok or large sauté pan over high heat.

Add 1 tablespoon vegetable oil and 1 teaspoon sesame oil and heat until hot.

Add garlic, shallots, ginger and chili flakes. Stir-fry for 2 minutes.

Add the water chestnuts, bamboo shoots, mushrooms and diced carrots, stir-fry for 4 minutes.

Transfer vegetables to a medium-sized bowl, and set aside.

Return the wok to the stovetop and heat over high heat.

Add 1 tablespoon of vegetable oil to the wok and then add the ground turkey. Stir-fry until the meat is no longer pink, about 4 minutes.

Add the hoisin and soy sauce, and then stir to combine.

Add the stir-fried vegetables and pepper. Season mixture with more salt and pepper as needed.

Spoon meat and vegetable filling into each lettuce cup, sprinkle with chopped cashews and sliced scallions. Top with additional hoisin sauce if desired.

Chinese Lettuce Wraps With Ground Turkey

These chicken lettuce wraps contain ground chicken and veggies cooked in a savory sauce and served in cool lettuce leaves. A PF Chang's copycat recipe that's super easy to make and tastes just as good as the restaurant version!

Chicken Lettuce Wraps

vegetable oil

chicken

shiitake mushrooms (stems discarded, caps finely diced)

onion (finely diced)

water chestnuts

garlic

salt and pepper

rice vinegar

green onions

butter lettuce (leaves separated)

Heat the oil in a large pan over medium high heat. Add the chicken and season with salt and pepper to taste.

Cook the chicken for 5-6 minutes, breaking up the meat with a spatula, until mostly cooked through.

Add the mushrooms and onion to the pan. Cook for 4-5 minutes or until vegetables are soft.

Stir in the water chestnuts, garlic and ginger. Cook for 1 more minute.

In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar and sesame oil.

Pour the sauce over the ground chicken mixture and toss to coat evenly.

Sprinkle the green onions over the chicken mixture.

Spoon the chicken into the lettuce leaves and serve.

Vegan Lettuce Wraps (PF Chang's Copycat Recipe!)

rice noodles + oil

12-oz package firm tofu (340 g)

oil oil

onion

mushrooms (roughly chopped, 226 g)

Tbsp ginger

onions

Tbsp soy sauce (30 mL)

Tbsp hoisin sauce (30 mL)

Tbsp rice vinegar (15 mL)

butterhead lettuce leaves

Optional Crispy Rice Noodles: To make crispy rice noodles as shown in photos, heat about ½ inch of oil in a large saute pan over medium high heat. Drop a single rice noodle into the oil. When it bubbles, the oil is hot enough. Working in batches, drop the noodles into the hot oil cooking for just a few seconds until they puff up. Remove from oil and set on a paper towel.

Tofu: Drain tofu and wrap in a few layers of paper towels. Squeeze to remove excess moisture, then use your hands to crumble up the tofu. Heat oil in a large saute pan or wok over medium/high, then add the tofu. Cook until it begins to turn golden at the edges, 7 to 10 minutes.

Veggies: Add the onion, mushrooms, garlic, and ginger. Cook until mushrooms have released their moisture and it evaporates. Onion should be soft at that point, about 10 minutes.

Flavor: Add water chestnuts, soy, hoisin, rice vinegar, and half of the green onions. Cover and cook for 2 to 3 more minutes.

Serve: Spoon filling into each butterhead lettuce leaf, topping with remaining green onions and optional crispy rice noodles.
