Spicy Quinoa, Cucumber & Tomato Salad

quinoa

water (vegetable or chicken stock, optional)

salt

cucumber

onion

tomatoes

jalapeño

cilantro chopped;

lime juice

red wine vinegar or sherry vinegar

extra virgin olive oil

avocado sliced,

BLT Salad

romaine lettuce

cherry tomatoes

bacon

Red wine vinaigrette dressing

Wash romaine lettuce, chop and transfer to bowl.
