My easy Pickled Daikon is a delicious accompaniment to so many dishes. Its crisp, mild texture is perfectly complemented by the tangy and slightly sweet pickling liquid.

Pickled Daikon

500 g daikon (See Note 1)

rice wine vinegar (See Note 2)

water (See Note 3)

sugar

tbsp coarse sea salt (See Notes 4 and 5)

red chilli (optional)

Sterilise the jar or jars you&#039;ll be using to store the daikon.Choose glass jars with an airtight, metal lid and ensure they have been washed by hand in hot soapy water then rinsed well. Check that the metal lids do not have rubber inserts. Preheat the oven to 130 Degrees C (270 F) and place the jars in the oven for 15-20 minutes.

To Sterilise the Jars:

Peel the daikon, and thinly slice.

Combine the water, sugar, vinegar, salt and chilli in a non-reactive saucepan.

Over a medium heat, stir to dissolve the sugar. Increase the heat, and bring the mixture to a boil. Boil for 3 minutes.

Turn off the heat, and add the daikon.Let the mixture sit for 5 minutes.

Using tongs, place the daikon pieces into your prepare jar, and pour over the brine.

Allow to cool on your kitchen bench for 30 minutes, and then refrigerate.

Wash the daikon radish and slice it about 15cm long and 5mm thickness.&nbsp;

Sprinkle salt over the sliced daikon and toss them to evenly coat daikon with salt.

Leave it for 6-7 hours.&nbsp;

Combine the rice vinegar, mirin, and sugar in a small saucepan. Bring it to boil over medium heat, when all the sugar has dissolved, turn the heat off and let it cool down.&nbsp;

After 6-7 hours, drain and squeeze out the excess water off the sliced daikon radish. ( do not wash them )&nbsp;

Lay the daikon radish into a large container and sprinkle a little bit of bonito flake, kelp, and vinegar mixture. Repeat the process until all the ingredients are used.&nbsp;

Instant Pot Beef Bulgogi Recipe by Tasty

lb beef chuck roast,

½ medium white onion, thinly sliced

gochujang

meduim asian pear, peeled and grated

ginger,

soy sauce

mayonnaise

rice, cooked or lettuce cups

scallion, thinly sliced

sesame seed

carrot, shredded

Marinate the bulgogi: In a large bowl, combine the beef, onion, gochujang, Asian pear, ginger, garlic, soy sauce, sesame oil, sesame seeds, and sugar. Toss until the beef is well coated. Cover the bowl with plastic wrap and transfer to the refrigerator to marinate for at least 2 hours, up to 6 hours.

While the beef is marinating, make the pickled daikon: In a large bowl, toss the daikon radish and salt together until fully coated. Let sit at room temperature for 15 minutes, until the salt has dissolved and the radish has released most of its liquid. Transfer the daikon to a mesh strainer and rinse thoroughly with cold water.

Return the drained daikon to the bowl and add the hot water, rice vinegar, and sugar and stir until the sugar is fully dissolved. Cover with plastic wrap and let sit at room temperature for at least 2 hours. The pickles will keep in an airtight container in the refrigerator for up to 1 week.

Make the gochujang mayo: In a medium bowl, whisk together the mayonnaise, gochujang, rice vinegar, sesame oil, and salt. Set aside until ready to use. The mayo will keep in an airtight container in the refrigerator for up to 1 week.

Transfer the beef and its marinade to an Instant Pot. Close the lid to seal and cook on high pressure for 20 minutes. Once the 20 minutes has elapsed, allow to naturally release for 15 minutes. Turn the steam valve to venting to release the remaining pressure before opening.

Arrange an oven rack at the top third of the oven. Turn on the broiler.

Using a slotted spoon, transfer the beef to a baking sheet and place under the broiler for 4–5 minutes, until slightly charred.

Serve the beef immediately with the pickled daikon, gochujang mayo, and toppings as desired.

Simple Pickled Daikon &amp; Carrots

In a glass measuring cup large enough to hold 1 cup of liquid, add just-boiled water.

Add sugar and salt to the hot water and stir to dissolve.

Add rice vinegar and stir. Set aside and let cool to room temperature.

Pickling Liquid:

Peel daikon and carrot and julienne-cut them or cut into thin matchsticks.

Place daikon and carrot in a colander set in a larger bowl or dish and sprinkle 1 teaspoon salt over the vegetables.

Use your hand to massage the salt into the daikon and carrot. Let sit for 15 minutes.

Massage the daikon and carrots again to squeeze out any extra liquid.

Rinse the salt off the daikon mixture in the colander under cold running tap water.

Place daikon and carrot mixture into a dish or jar and pour in pickling liquid.

Press daikon mixture down so it is fully submerged in the pickling liquid.

Seal the container or jar and refrigerate for at least 24 hours before serving.

This quick and easy pickled daikon radish recipe will be ready to eat in just one day. It’s sweet, tangy, delicious, and requires almost no prep! Top your soups, woks, banh mi sandwiches and tacos with this scrumptious crunchy pickled radish.

Easy Pickled Daikon Radish Recipe

daikon

rice wine vinegar (rice vinegar)

spring water

white sugar (granulated white sugar)

red chili pepper (thinly sliced)

I used two jars or you can use 1 large 27 ounce jar here.

Peel the daikon radish and slice it very thinly. About ⅛ inch thick. Mandolin slicer works perfectly here.

In a non-reactive (use ceramics, enamel, glass, plastic, or stainless steel). small saucepan over medium heat combine together water, sugar, and salt. Stir until sugar and salt dissolve. Bring this to a gentle boil. And pour in the vinegar. Bring to a boil, again and set aside.

In your jars, combine daikon and thinly sliced red chili.

Pour in the hot pickling solution mixture until the daikon is fully submerged in the pickling liquid.

Secure the lid and let the mixture cool at room temperature for 1 hour. After that, refrigerate for 12 hours (overnight) and enjoy. For the daikon to ‘’fully pickle’’ I would wait for 1-2 days but you can eat them once they are cold. Pickled Daikon crunchy texture is a delicious accompaniment to various Korean, Japanese dishes, including soups, noodles, sandwiches and many more.

Store in the refrigerator for up to 2-3 weeks. However I recommend to consume this within 2 weeks. After 2 weeks it is stil legible but daikon will loose it’s crisp texture, fresh flavor and become softened.

Pickled Daikon Recipe

This recipe for pickled daikon with carrots is a classic appetizer that was once often served as a freebie in Cantonese restaurants, along with fried peanuts.

First, make the pickling liquid. Add the sugar to a large measuring cup or heatproof bowl, and then pour in the hot boiling water. Stir to dissolve the sugar. Stir in the white vinegar and rice vinegar, and allow to cool to room temperature.

Meanwhile, in a large bowl, add the daikon and carrot sticks, and add the salt. Toss well, and let the vegetables sit in the salt for 15-20 minutes. This draws the water out of them, making them crunchier after pickling.

Toss the vegetables again, and then rinse under running water. Drain and gently shake off the excess liquid, then transfer the vegetables to the bowl of pickling liquid. Press the vegetables down into the liquid, cover the bowl, and refrigerate. Let sit for 24 hours for a fresher taste, 48 hours for a more pickled taste (we prefer a 48 hour pickle), or up to 10 days.

Doubled the liquid and added Persian cucumbers and shallots and this was fantastic to top salmon bowls. Great recipe!

I had about a just over a pound of daikon and just over a pound of carrots. They stuffed into one quart jar and two pint jars (each not quite full when packed) I made a double batch of the sugar vinegar mix to fill all three.

This is one of my favorite Asian pickles! The fresh, sweet, tangy flavor is just wonderful on sandwiches, as a side with bbq, and just in a bowl as a snack. I love making this one, and the one with Kholrabi in the veggie mix as well.

Love this! I did all daikon because it is my favorite. Will do both next batch. I need to do three batches. My adult children love it also.

Vietnamese Pickled Daikon and Carrots for Bánh Mì (Đồ Chua)

1½ lbs thinly sliced daikon (1 large daikon)

½ lb thinly sliced carrot (1 medium carrot)

Prepare the daikon and carrot

Peel the daikon and carrot and cut into matchsticks.

Salt and jar the daikon and carrot

In a large bowl, toss together daikon, carrot and salt. Let it sit for 1 hour to pull out the water. Discard water. Squeeze out remaining moisture with your hands then transfer to at least a 24 oz jar.

Make the brine

In a medium size heat proof bowl/cup, dissolve sugar with hot water. Mix in vinegar. Allow the mixture to cool down to room temperature, if needed. Pour liquid into the jar of daikon and carrot and screw on the lid. Leave it at room temperature and it&#8217;s ready to eat in one hour. You can also store in the fridge for up to 2 weeks.
