This is our favorite pimento cheese recipe! This pimento cheese is partially whipped and has so much flavor. Perfect for dipping or melting!

Pimento Cheese

sharp white cheddar cheese, (freshly grated)

cream cheese, (softened)

pimentos, (drained)

mayonnaise

garlic powder

onion powder

¼ teaspoon smoked paprika

kosher salt and pepper

chives, (for topping)

Freshly grate the cheddar cheese and set about 4 ounces of it aside.

Combine the cream cheese, drained pimentos, remaining white cheddar, mayo, garlic powder, onion powder, smoked paprika and a pinch of salt and pepper in a food processor. Pulse and blend until combined and somewhat whipped - you don’t want to overwhip it. I pulse for about a minute off and on until it appears blended but not 100% smooth.

Remove the pimento cheese from the processor and place it in a bowl. Stir in the remaining white cheddar. At this point you can store it in the fridge for a few days. To serve, top with the fresh chives!

Serve with pretzels, crackers, chips, carrots, celery or any of your favorite dippers. Or make any of the recipes I linked above!

Cream together cheddar cheese with the softened cream cheese until well combined.

Stir in pimentos and salt and pepper.

If you prefer your pimento cheese to be a bit thinner for spreading, add in optional mayonnaise, Greek yogurt, or liquid from the diced pimentos to preference.

Velveeta Pimento &amp; Cheese

lb Velveeta Cheese

Milk

T Sugar

T Apple Cider Vinegar

oz Diced Pimento

Mayonnaise

Gather ingredients: Velveeta, milk, sugar, vinegar, pimento, mayo.Cube 1 lb of Velveeta Cheese and melt in a double boiler over low heat. You could also microwave. Just be careful not to scorch.Add the milk and sugar. I used Swerve substitute. Add 1 T of vinegar, I used apple cider vinegar. Add the diced pimento (drain liquid). Remove from heat and allow to cool a bit. Add Mayo mix well and store in an airtight container in the refrigerator.Mixture will thicken up as it cools completely. Make sandwiches on your favorite bread, plain or toasted.

I'm Yvonne from Long Island, NY. I just wanted to say that I made your Aunt Mildred’s Velvetta Pimento Cheese, and honestly it was absolutely delicious both warm and cold! So after a few days, I still had about half left in the fridge, and I heated that, a half block more of  cream cheese, a container of Ragu Double Cheddar cheese sauce, about a cup of shredded cheddar jack, some pepper, (was perfectly salty enough), and probably about a teaspoon each of garlic powder, and onion powder. Can you tell I just grabbed whatever I had available? I just winged it. While it heated, I mixed it all together with a stick blender, which blended the pimentos too. When it was hot, I mixed the whole thing together with shell pasta and Oh MY, it was the BEST Mac n Cheese I EVER made!!!! It was so creamy and delicious! I just felt the need to share this with you!
