Easy Pineapple Bundt Cake made with just 5 ingredients and SO GOOD! Canned pineapple with the juice, a cake mix, eggs &amp; butter combine for this deliciously simple bundt cake recipe! 

Easy Pineapple Bundt Cake 

yellow cake mix (used betty crocker) (15.25 oz)

salted butter, melted

pineapple juice

eggs

pineapple

sugar

butter, room temperature

Preheat your oven to 350 degrees F and grease a 10-12 cup bundt pan with butter or baking cooking spray.

In a large bowl, mix together the pineapple juice, melted butter, and cake mix until smooth. Add in the eggs and crushed/ chunk pineapple and mix on high speed for 2 minutes. Transfer to prepared bundt cake pan.

Bake the pineapple cake in the preheated oven for 35-40 minutes, or until a toothpick placed into the cake comes out clean. Allow the cake to fully cool.

Meanwhile, mix together your glaze ingredients in a small saucepan and cook over medium heat until the butter has melted through. Remove from heat.

Using a straw or skewer, poke holes throughout the bottom of the cake. Pour 1/3 of the glaze over the bottom of the cake and allow to cool for 10-15 minutes. Flip the cake over onto a serving platter. Add 1.5 cups powdered sugar to the remaining glaze &amp; spoon over the top. Serve and enjoy!

This Pineapple Pound cake uses dried pineapple for texture, crushed pineapple for flavor and moisture, and a pineapple glaze. You can&#39;t get more pineapple flavor, even if you tried!

Pineapple Pound Cake

pineapple (diced small)

orange juice

cake flour

salt

baking soda

unsalted butter (room temperature)

eggs (room temperature)

buttermilk (room temperature)

vanilla extract

(20 oz) crushed pineapple (drained well, juice reserved)

unsalted butter (melted)

kosher salt

confectioners’ sugar

In a shallow cup or dish, soak the dried pineapple in either the orange juice or the rum for 2 hours. Drain the pineapple. Set aside.

Preheat oven to 325F. Set rack to middle position. Prepare a 12-cup Bundt pan with nonstick baking spray.

In a medium bowl, whisk together flour, salt, and baking soda.

In the bowl of your stand mixer, add butter and sugar and mix for 4 minutes on high speed until pale yellow and fluffy.

Next, add eggs, one at a time, combining well after each addition and scraping down the sides of the bowl as needed.

Reduce mixer to low speed and slowly add dry ingredients into batter in two increments. Do not over mix.

Add in buttermilk, vanilla, crushed pineapple, and soaked pineapple, mix until just combined and turn off mixer.

Pour batter into prepared pan and bake for 70-75 minutes, or until a toothpick inserted in the center of the cake comes out clean.

Cool in pan on wire rack for 10 minutes, then invert cake onto serving plate for at least an hour or until the cake is cool to the touch.

For the glaze, combine butter, pineapple juice, vanilla, and salt in a medium bowl and whisk together. Slowly pour in confectioner’s sugar while whisking to create a light and buttery glaze. Pour over cooled cake and let sit for 10-15 minutes to set. Slice and enjoy!

Preheat oven to 325°F (165°C). Grease and flour a 10–12 cup Bundt pan.

In a large bowl, mix cake mix, oil, juice, eggs, sugars, and vanilla until smooth.

Pour into the prepared pan and bake for 40–45 minutes.

Prepare glaze while baking: heat powdered sugar, pineapple juice, and butter in a saucepan until smooth.

Once baked, poke holes in the hot cake and slowly pour glaze over it in the pan.

Let sit 15 minutes, then invert and cool completely before slicing.
