Cook on medium to low heat until most liquid has evaporated, and the pineapple jam turns golden in color. Stirring constantly and continuously using a wooden spoon to avoid burning. Taste, and add more sugar as needed. Remove and discard the cloves and let cool in the fridge.

Peel pineapple and dice into little pieces. Makes about 4 cups.

Place pineapple, sugar and lime juice in a pot and mix.

Place pot on the fire on medium-high heat and cover. After 5 minutes, it must have started boiling, open and stir. Reduce heat to medium, let it cook for another 10 minutes then mash with potato masher. Let it cook until the liquid is jelly-like. About 15 minutes more. Turn off the heat.

Once cool, place in a jar with a tight-fitting lid and keep in the fridge. This could last in the fridge for up to 3 months!

This pineapple jam has natural tanginess from the fruit and enough sweetness extracted from the fruit with a small amount of added sugar.

The drier your jam is, the more caramelized...

The drier your jam is, the more caramelized the sugar in the pineapple will be. And it creates a deep golden colour in your preserve. Turn the heat off once you’re happy with the consistency of your preserve. 

Sweet and slightly tart and full of fresh pineapple, small-batch pineapple jam needs no special canning equipment or even pectin to yield a delicious fresh jam. No pressure canning or special equipment required.

Small Batch Fresh Pineapple Jam

Peel and cut the pineapple into 1-inch chunks; discard the fibrous core and outer peel.

Add all ingredients into a medium-sized pot and bring to a boil. Do not cover.

Reduce heat simmer  over LOW  heat.  Simmer for about 30 minutes or until the pineapple is tender and most of the liquid has evaporated; Stirring occasionally. Do not Cover.

Remove from the heat and allow to cool slightly.

With an immersion blender or potato masher, crush the fruit to small bite-sized (or smaller) pieces.

The natural sugars in the fruit will thicken the jam.

Store in an airtight container like a mason jar in the refrigerator for up to 3 weeks. Alternatively, freeze in a freezer-safe container for up to 3 months.

Storage:

Great simple recipe. Just added a sprinkle of cinnamon powder and an additional 1/4 cup of brown sugar! Yummy!
