<p>Turkish lahmacun is made by rolling a ball of sturdy semolina dough into a thin disc, which is spread with a thin layer of ground meat and baked briefly in a super-hot, preferably wood-fired oven. The meat can be either lamb or beef, and it is traditionally ground into to a chunky paste with minced vegetables and herbs including chili peppers, onions, tomatoes, parsley, and seasonings like&nbsp;cayenne pepper, paprika, cumin, and cinnamon.</p>

(240 grams) bread flour, flour

½ tsp instant yeast

light brown sugar

tsp salt

(120 ml) whole milk

tbsp chopped parsley, or cilantro

tbsp chopped mint

tbsp ground sumac

tsp Aleppo chili flakes,

paprika

tsp allspice

tsp cumin

tsp ground cinnamon

tsp black pepper

5.3 oz (150 grams) fatty ground lamb, or beef

A tangy white bean salad with tomatoes, red onions and parsley. It is flavored with sumac and a simple salad dressing with olive oil and vinegar. So easy to make and ready in 15 minutes.

Piyaz Recipe - Turkish White Bean Salad

red onion, thinly sliced in half moon shape

tomatoes,

¼ cup parsley, chopped

beans navy beans

olive oil (preferably extra virgin)

lemon, juiced

apple cider vinegar vinegar

hard boiled eggs, sliced

Put thin onion slices in a large bowl. Sprinkle sumac and salt over them. Massage with your hand for 10-20 seconds.

Add in chopped tomatoes, parsley and white beans.

To make the dressing, in a medium bowl, whisk together the olive oil, lemon juice, apple cider vinegar and salt. 

Pour the dressing over the salad and give it a stir.

Optionally, top with hard boiled egg slices, sprinkle salt and sumac over them and serve immediately.

Made this as a side dish for a party, didn't include the egg. It was so delicious!

Salade turque haricots blancs

oignon rouge, finement tranché

cuillères à café de sumac

cuillère à café de sel de mer, divisée

tomates moyennes, coupées en dés

boîte de haricots blancs, égouttés (425 g)

tasse de persil frais, haché

cuillères à soupe d'huile d'olive (45 ml)

cuillère à soupe de vinaigre de vin rouge (15 ml)

cuillère à soupe de jus de citron frais (15 ml)

Poivre noir au goût

cuillère à café de flocons de piment Alep (pul biber)

Préparation des oignons

Dans un grand bol, ajoutez les oignons tranchés, le sumac et 1/2 cuillère à café de sel. Frottez doucement avec vos mains pendant 30 à 60 secondes.

Mélange des légumes et des haricots

Ajoutez les tomates, les haricots et le persil aux oignons, puis mélangez bien.

Assaisonnement de la salade

Ajoutez le jus de citron, le vinaigre, l'huile d'olive et le reste du sel. Mélangez jusqu'à ce que tout soit bien combiné.

Ajustement des saveurs

Goûtez, rectifiez l’assaisonnement avec plus de sel et de poivre noir si nécessaire, et servez.

Optionnel : marinade

Si souhaité, couvrez le bol et laissez mariner la salade 20 à 30 minutes avant de servir.

Stockage

Conservez les restes dans un récipient hermétique au réfrigérateur jusqu'à 3 jours.

Navy Bean Salad (Piyaz)

navy beans (,

flat parsley (, chopped)

radish (, chopped)

garlic (, grated or minced)

extra virgin olive oil

coarse kosher salt

aleppo pepper (, optional)

black pepper

In a small bowl, combine the sliced red onion with apple cider vinegar and toss to coat. Set aside for 15 minutes or while you prepare the other ingredients.

In a medium mixing bowl, combine the navy beans, tomatoes, parsley, radish, mint, garlic, the zest of 1 lemon and the juice of two lemons, olive oil, coriander, salt, aleppo pepper and ground black pepper.

Drain the red onions, discard apple cider vinegar and add to the navy bean mixture. Toss well to coat and combine.

Cover and allow to sit for 30 minutes. Toss again before serving.
