These luscious little bites are perfect for your next holiday party or if yours is a family of&nbsp;football fans like mine, they're the best football finger food. Once of those things that people will gobble up without even thinking about what's inside. And because they taste like pizza, all those picky eaters in your life will assume they're eating something totally unhealthy.

Mini Quinoa Pizza Bites with Hummus + Crispy Chickpeas

quinoa (uncooked)

Sabra Pizza Hummus

Soak uncooked quinoa for 6-8 hours (or for 2 hours in hot water).

Preheat oven to 425 degrees F. Line a 12-cup muffin tin with strips of parchment paper and drizzle 1/4 teaspoon of oil in the center. Spread around with your finger until evenly coated and set pan aside.

Thoroughly rinse quinoa, then add to a blender. Add remaining crust ingredients and blend on high until smooth and creamy. It should resemble a thick pancake batter.

Pour 1 tablespoon of batter into each prepared muffin tin and bake for 10 minutes. Remove pan, flip crusts onto a baking sheet and return to oven baking for another 10 minutes until browned and edges are crispy.

Remove baking sheet from oven and top each pizza round with 2 teaspoons of hummus, a sprinkle of basil and a few crispy chickpeas. Garnish with pepper flakes, salt and pepper (totally optional of course) and serve immediately! If you're taking these to a party, simply reheat for 10 minutes in the oven on 250ºF.

FOR THE CHICKPEAS: Place chickpeas on a baking sheet rub with coconut oil. Remove any skins that come off on the pan. Sprinkle with garlic powder, salt and pepper and stir to combine . Bake the chickpeas at 375ºF for 30 - 45 minutes until crispy. Stir them around a few times so as not to burn. If you have the time, turn the oven off and allow chickpeas to sit for 1 - 2 hours until completely crispy. Store in an airtight container.

Preheat the oven to 425ºF. Grease a baking sheet and set aside.

Cut the sweet potato into 1/2" rounds, then add them to a large bowl and drizzle with olive oil. Toss to coat, then season with salt and pepper. Place the rounds on the baking sheet and roast for 25 minutes, flipping halfway through.

While the sweet potatoes are roasting, add the tomatoes, hummus, lentils, 1/4 cup of water, Italian seasoning, salt and pepper into a small saucepan. Bring the mixture to a bowl and stir until everything is combined. Turn down to a simmer and let cook for 10 - 15 minutes, until the lentils are soft. Stir in additional water as needed if the sauce gets too thick.&nbsp;

When the sweet potatoes have softened, spoon 1 - 2 tablespoons of sauce onto each round (depending on their size) and top with shredded cheese (use vegan if needed).

Place baking sheet back in the oven and broil until cheese has melted.

Garnish with fresh herbs and pepper flakes (if desired) and serve immediately.

Pepperoni Pizza Rolls

Whisk together flour and salt in a large mixing bowl. In a small bowl, combine water, yeast, sugar and olive oil. Whisk to dissolve and pour it into flour mixture.

Stir well with a silicone spatula to combine until no dry flour is visible in the bowl. Make sure to scrape down the sides of the bowl with the spatula. Let the dough rest for 10-15 minutes to develop gluten naturally.

Knead with your hands until the dough is smooth, about 7-10 minutes.

Allow the dough to rest for 1 hour, until doubled in size.

Make the Pizza Dough:

Transfer pizza dough onto a lightly oiled surface and gently flatten into a 10x14-inch rectangle using a rolling pin. Spread pizza sauce on top. Then, sprinkle mozzarella evenly and add pepperoni slices on top (or any desired toppings).

Roll up the dough tightly lengthwise into a log and pinch the end edges to seal.

Cut the rolled dough into 12 even pieces using a knife or bench scraper, about 1-inch wide each.

Place cornmeal on a shallow plate and dip the bottom of each roll into the cornmeal. Cornmeal is optional but recommended. It keeps the rolls from sticking to the baking tray and helps create an extra crispy bottom. 

Shape the Pizza Rolls:

Arrange the rolls flat, with cornmeal side down on a large half sheet baking tray lined with parchment paper. Brush a little bit of oil over the rolls for crispier crusts.

Bake for 20 minutes until golden brown. Let the pizza rolls cool for 5-10 minutes.

Sprinkle Parmesan cheese and parsley on top and serve warm with pizza sauce or marinara sauce for dipping

Preheat oven to 350°F.

Reserve a hand full of pepperoni (about 1/4 cup).

In a large bowl, combine flour, baking powder, seasoning, red pepper flakes, Parmesan cheese, olive oil, sugar, milk, and egg. Stir together with a fork. Mix in the pizza blend cheese and remaining pepperoni. Set aside.

Prepare (2) 24 cup mini-muffin pans by greasing with olive oil (or spray with cooking spray).

Mix batter and add 1 heaping tablespoon scoop to each muffin cup. Top each muffin with 2 or 3 of the reserved pepperoni. Bake until golden brown, approximately 20 minutes.

Allow to cool for 5 minutes, remove from muffin tin and serve with favorite marinara sauce.

Preheat oven to 400 degrees F.

Roll out the pizza dough on a clean surface and cut out as many circles as you can using a 2.5 inch circle cookie/biscuit cutter (or an empty clean 4 oz can works really well too!) I got about 15 circles of dough.

Press dough circles into a mini muffin pan that has been sprayed lightly with oil. The dough should cover the bottom and sides. Pierce the bottom of the dough with a fork 1-2 times so they don't puff up too much when baking.

Bake pizza dough for 8-10 minutes until lightly browned and cooked through.

While the dough is cooking, sauté the sliced mushrooms for 3-4 minutes until softened and flavorful. (Mushrooms let out a lot of liquid, so you shouldn't need oil or water for sautéing.) Stir frequently to avoid sticking.

When dough is done, let cool for a few minutes. Top each one with 1-2 tsp of pesto, a few slices of sautéed mushrooms and a few slices of cherry tomato.
