These Spicy Black Bean Burgers are a classic in our house! Full of flavor, easy to make, and the perfect freezer meal—these burgers will become a staple in your kitchen, too.

Spicy Black Bean Burgers

black beans

green bell pepper, roughly chopped

onion,

garlic

chili powder

cumin

hot sauce (more or less depending on your heat tolerance)

salt

eggs (see notes for plant-based substitute)

Preheat oven to 350°. Line a baking sheet with parchment paper or a silicone baking mat, set aside.

In the basin of a food processor, combine 2 cups of the black beans, bell pepper, onion, garlic, chili powder, cumin, hot sauce, and salt. Pulse until the mixture forms a smooth, thick paste—scraping the sides as necessary. Don't have a food processor? Check the recipe notes for an alternative method. Transfer the mixture to a large mixing bowl.

Add in the remaining black beans, the eggs and 1 cup of the breadcrumbs, mix well. Continue adding breadcrumbs, 1/4 cup at a time, until the mixture can easily be formed into patties.

Form the mixture into six large patties and place on the prepared baking sheet. Bake in preheated oven for 20-25 minutes, or until the burgers begin to brown, feel firm, and start to crack on top. Serve immediately or freeze.

To freeze, let burgers cool completely, then freeze flat on a baking sheet until solid, about 3 hours. Transfer to a labeled zip-top freezer bag. Will keep in the freezer for about 3 months. Defrost before heating in skillet, on grill, or in the oven.

Stock Your Freezer with These 3 Awesome Veggie Burgers

Sick of the usual veggie burgers? These Tofu Burgers are here for you! 🍔🥕Made with just 5 basic ingredients (plus a couple of spices and herbs), these plant-based patties are incredibly tasty, high in protein and fiber, and super quick to make!

Tofu Burgers with Veggies

potatoes

block tofu

carrot

zucchini

onion

corn

yeast (optional)

paprika powder

tsp sea salt

tsp black pepper

oregano

olive oil

Boil the potatoes, remove the excess water and let them cool down.

Heat a pan and cook the celery, carrot and onion (finely diced)  with a tablespoon of olive oil for a couple of minutes, or until lighly golden.

Drain the excess water from the tofu (ideally, pat it with a clean towel), crumble it in small pieces and add it to the pan with the veggies.

Cook everything for a couple of minutes at medium heat, and add the salt. Let everything cool down.

In a food processor, add the tofu and veggies, the potatoes, the 3 tbsp of breadcrumbs (or corn starch), the nutritional yeast and all the herbs and spices. Add more salt if needed. Blend everything until obtaining a well combined, yet firm mixture. (if the mixture is too soft, add more breadcrumbs. If it&#39;s too firm, some plant-based milk).

Create 4 burgers and roll them into the remaining breadcrumbs on both sides.

Cook them in a pan with two tablespoons of olive oil for a couple of minutes, or until they have formed a crust on the outside.

Alternatively, cook them in the oven at 338°F (or 170°C) for about 10-15 minutes.

Serve them with some veggies, some slices of bread (or a multi-grain bun) and the sauces of your liking!

Not Steak Sauce

With a ring mold, some parchment paper, and a jar lid, I cut out the patties.

I roll 2 of them into meatballs to make smash burgers.

Season them with garlic powder, onion powder, and pepper on both sides.

Add oil to skillet on medium heat and cook for less than 4 minutes on each side.

Cook smash burgers, then place them in bun and add some Not Steak Sauce.
