This easy Plum Crisp recipe is the perfect way to enjoy a bounty of fresh fruit!

Plum Crisp

oats

all-purpose flour

½ cup packed light brown sugar

pecans

cinnamon

nutmeg

salt

(1 stick) salted butter, melted

plums,

brown sugar

lemon juice

cornstarch

Optional, vanilla ice cream or whipped cream

Preheat oven to 350° F. Grease a 9-inch square baking dish, a deep 9-inch round dish, an 11 x 7-inch dish, or a 10-inch cast iron skillet. Set aside.

In a medium bowl, stir together the oats, flour, brown sugar, pecans, cinnamon, nutmeg and salt. Add the melted butter and stir to completely combine, making sure that there are no dry bits of flour. Set aside or chill in the refrigerator for a few minutes while you make the filling.

PREPARE THE TOPPING:

In a large bowl, stir together plums, brown sugar, lemon juice, cornstarch and salt. Let sit for 5-10 minutes.

PREPARE THE FILLING:

Transfer the plums and their juices to the prepared baking dish. Distribute topping evenly over the fruit.

ASSEMBLE:

Bake, uncovered, until the juices are bubbling and thickened and the top is golden brown, about 40-45 minutes. Let rest for 5-10 minutes before serving. Top with ice cream or whipped cream, if desired.

BAKE:

Sweet and tangy, with a hint of mulled wine spices, and topped with crispy crumble and crunchy toasted almonds, this vegan spiced plum crumble is just the thing to bring a touch of warmth to chilly autumn days.

Vegan Spiced Plum Crumble

300 g plain flour (aka all-purpose)

sea salt

butter

sugar

g white sugar

g almonds

tbsp flaked almonds

kg fresh plums, stones removed

tbsp demerara sugar

vanilla pod (seeds only)

2½ tsp chai masala

Pre-heat your oven to 200°C (400°F/gas mark 6).

Place the flour, salt, and vegan butter into the bowl of a food processor, and briefly blitz until you have a mixture resembling breadcrumbs.

Add the sugars and ground almonds, and pulse a few times, until they're mixed in.

After removing the stones from the plums, place them into a mixing bowl, along with the rest of the filling ingredients, and mix well, ensuring the plums are coated with sugar and spices.

Arrange in a deep pie dish or lasagne dish, then spread the crumble over the top. 

Sprinkle the flaked almonds over the crumble, and bake in the centre of the oven for around 35 minutes, until the crumble and the almonds are a golden brown.

Remove from the oven, and allow to rest for 10 minutes before serving.

Leftovers can be kept in the 'fridge, covered over, for 3-4 days.

This looks amazing!   It must be one of the most tempting crumbles I've seen too!   We had two plum trees in our garden when I was growing up so I used to eat loads of plum crumbles when I was  a child.   This is definitely making me miss them! x

Plum And Apple Crumble (Crisp)

apples

plums (pitted and sliced)

Tbsp coconut sugar (or brown sugar)

cornstarch (or arrowroot flour)

tsp vanilla extract

oat flour ((gluten-free if needed / see notes))

almond flour ((see notes))

Tbsp tapioca flour (or arrowroot flour)

coconut oil ((see notes))

I recommend using a kitchen scale for this recipe. You can watch the video in the post for visual instructions.

First, preheat the oven to 360 °F/180 °C, and rinse and chop the apples and plums into slices about 1/3 to 1/2-inch thick (I slice the apple slices in half too). Then, transfer them to a large bowl.

Add the granulated sweetener, cornstarch, vanilla, and cinnamon. Stir to combine.

Then, pour the apple plum mixture into a baking dish (a 9x13 or 8x8-inch dish works well).

Next, prepare the crumble topping by combining all the dry ingredients in a medium bowl and stirring to combine. Then add the oil and vanilla and mix with your hands to create a crumb/ clumps consistency.If the streusel is a little dry, you may need a little more oil (just a teaspoon at a time).

Finally, sprinkle the almond crumble over the fruit and bake it for about 35 minutes, or until the filling is bubbling, and the top is a golden brown color. Allow it to cool for at least 5 minutes before serving, then enjoy!

This is SO good! An easy and versatile recipe. I used apple, prune and fresh ginger. I didn’t have quite enough fruit but it was fine. I also didn’t have enough cornstarch for the crumble, and no vanilla at all. Again—fine!! I topped it with vegan vanilla ice cream when it was warm from the oven and it was just amazing! Love it!

I plan to make this for Thanksgiving with apple slices and raspberries. I make a yogurt whipping cream with a little bit of whipping cream and as much yogurt as I can incorporate and still keep it fluffy—with monk fruit sweetener,.

Plum and Blackberry Crisp

g unsalted butter ((7 tablespoons) diced)

110 g spelt flour ((1 cup))

g rolled oats ((1/2 cup))

g almonds ((1/4 cup))

brown sugar ((1/4 cup))

g dark brown sugar ((2 tablespoons))

450 g plums ((1 lb))

150 g blackberries ((1 cup))

Brown

Start by browning the butter. Place the butter in a small saucepan and set over a medium heat. Once the butter has melted, keep cooking, swirling every now and then, until the milk solids turn a reddish brown and start to smell fragrant. This should take around 5-10 minutes. Remove from the heat and pour into a small heatproof bowl. Leave to cool until the butter has re-solidified. (You can speed this process up by placing the bowl into the freezer for about 10 minutes).

Place the flour, oats and ground almonds in a large bowl and mix together. Dice the browned butter and add this to the dry ingredients. Rub the butter into the dry ingredients until it's the size of peas.

Stir

Stir the sugars, cinnamon and nutmeg into the flour, salt, oat and butter mixture. Set aside.

Remove the stones from the plums and chop each half into 4. Place into a bowl with the blackberries and sprinkle with the sugar and flour. Mix briefly.

Divide

Divide the fruit between 6 small pie dishes or one regular size pie dish. Sprinkle the crumble mixture evenly over the top and lightly press down.

Bake

Bake for 25 minutes or until the crisp topping is golden brown and the fruit has bubbled up around the edges.

Serve

Serve warm with plenty of vanilla ice cream.

What a great combination - i had never had plums and blackberries together before. So moreish, I love it. 😋
