Cajun Fried Chicken Po&#x27; Boys with Spicy Remoulade Sauce are a true New Orleans favorite, and the perfect way to celebrate Mardi Gras!

Cajun Fried Chicken Po’ Boys

French baguette

chicken breasts (fileted into 2 thin halves each)

milk

wondra flour

Cajun seasoning

vegetable oil (for frying)

cabbage

carrots

mayonnaise

Tablespoons sugar

Tablespoon cider vinegar

ketchup

sriracha hot sauce

pickle juice

horseradish

garlic

paprika (to taste)

Mix together the sauce ingredients for the coleslaw then toss with the cabbage and carrots. Refrigerate until ready to use.

Mix together the ingredients for the Remoulade sauce. Refrigerate until ready to use.

Filet the two chicken breasts so that you have four thin pieces of chicken. In one small bowl mix together the milk and egg. In another small bowl mix together the Wondra flour and Cajun seasoning.

Heat a thin layer of vegetable oil in a large fry pan over medium heat. Dip each piece of chicken in the milk mix, then coat thoroughly in the flour mix. Fry for six to seven minutes or until lightly browned on each side.

Spread Remoulade sauce inside the cut roll/baguette, then adds chicken and top with coleslaw.

Slow Cooker Roast Beef Debris Po' Boys

(2.5 beef

(1-ounce) packet au jus mix

(.87-ounce) packet brown gravy mix

water

bread bread

dill pickle chips

mayo

yellow mustard

creole mustard

Spray the crock of a 4 to 6-quart slow cooker with nonstick cooking spray. Add the chuck roast. In a small bowl, whisk together the au jus mix, gravy mix, and 1 cup of water. Pour it over the roast. Cover and cook on low for 8 to 10 hours.

Once the beef is super tender, carefully remove the roast from the slow cooker and shred the meat when cool enough to handle. Discard the fat and return the shredded meat to the gravy in the slow cooker. Mix to combine.

Preheat the oven to 400°F. Warm the bread in the oven for 3 to 5 minutes to crisp up the exterior.

Dress the bread with mayo and Creole and/or yellow mustard. Add generous amounts of the shredded beef and gravy to the sandwich. Top with the shredded cabbage and pickles.

I don't normally leave reviews, but had to for this recipe. I followed the recipe exactly. Honest review; very easy to throw together. When I pulled the beef out to shred I tasted it and thought it was a little bland. When I put it back in the gravy, it tasted better. I had to let it sit for about 1/2 hour while I was getting everything else for the meal ready. When we started to dish up our food I tasted it again...HOLY SMOKES it was AMAZING!! I made the sandwiches, and the mustard and mayo together with the juice from the meat...chef's kiss. We couldn't stop picking at it. Thank you so much for this recipe.

Can’t wait to try this recipe. I miss a good “We Never Close po boy from the store right by our house in New Orleans East back in the early 80’s. It was so good. Esp the gravy! And the leidenheimer bread makes a big difference too. I sure miss NOLA food!

Although I love Roast Beef Po Boys, I mainly use this recipe for a main course formal dinner. I serve it with buttery parslied potatoes, green beans and carrots. I serve this at the retreat center I run in the mountains for large groups. EVERYBODY RAVES ABOUT THE AMAZING FLAVOR! Thank you for sharing!!!

Coat the outside of the bread with a little olive olive oil, or if you really want some comfort a thin layer of melted butter. 
Plus if you know the people making your bread ask them to only cook it 3/4 of the way through, so you can finish it in the oven.
Please remember if the gravy doesn’t slide down your arms there’s not enough.
