Poffertjes, (pronounced puff' ur jis) or Dutch Mini Pancakes are small, fluffy yeasted treats made in a special cast iron pan. Sold throughout the Netherlands, Poffertjes are traditionally served hot with a pat of butter and a good sprinkling of confectioners' sugar.

Poffertjes (Dutch Mini Pancakes)

instant yeast

(8.75 ounces, 250 grams) all-purpose flour

Tablespoons sugar

salt

Unsalted butter (See Tip 2)

Confectioners' sugar

Add yeast to lukewarm milk; stir to combine. Allow to sit for about 10 minutes or until frothy.

Whisk together flour, sugar and salt in a large bowl. Add milk/yeast mixture and egg. Beat with electric mixer on high until smooth, about 1 minute. (See Tip 3)

Cover bowl with plastic wrap; let sit until bubbly and doubled in size, about 45 minutes.

Heat Poffertjes pan on medium heat until hot, 3 to 4 minutes. Brush cavities with melted butter. Add about 1 tablespoon of batter to each of the cavities. When small bubbles start to appear and the top starts to look a bit dried out, quickly flip Poffertjes. (See Tips 4 and 5)

Allow Poffertjes to cook on other side until nicely browned, about 2 minutes. Remove from pan. Repeat with remaining batter.

Serve hot with a pat of butter and sprinkling of confectioners' sugar. Yield, about 60 Poffertjes.

Poffertjes (Dutch mini pancakes). Delicious, fluffy, tiny pancakes sold in street stalls in the Netherlands. Great as an afternoon snack, breakfast or dessert.

In a mixing bowl, add flour, sugar and salt. Whisk together until combined.

Heat your milk until warm (110F) about 90 seconds in the microwave. While whisking, gradually add dry active yeast to prevent clumping. Yeast should fully dissolve. Cover and let this sit for 10 minutes, until a thick film develops on the top.

Add the yeast mixture to dry ingredients, followed by the eggs and vanilla extract. Mix just until smooth but do not overmix. Cover batter with a lid and let this sit in a warm area, for 30 minutes until it becomes bubbly, thick and frothy. Tip: I placed my bowl in a sink filled with just enough warm water, so that the bowl can sit and keep warm but not so much water that it&#39;s floating around.

Melt your butter in the microwave for 60 seconds or until melted.

Heat your Danish aebleskiver pan over low-medium heat, level 4/10 on a stovetop. Brush melted butter into the well of the pan, about 1/8 tsp per well. If you&#39;re using a normal non-stick pan, grease the base of the pan very well.

Pour enough batter to fill each well halfway to 3/4 full, about 1 tbsp of batter. Do not fill to the top or it will overflow. Repeat the process until all wells are filled. If you&#39;re using a normal pan, pour 1 tablespoon of batter into pan.

Cook until bubbles form on the top of the pancake and the base is golden brown,  about 2-4 minutes per side. Flip over with a fork or skewer. Fry on the other side. Serve with icing sugar or any of toppings of your choice (maple syrup, fruits, Nutella, vanilla sauce, etc.), enjoy!

Simple Poffertjes - Dutch Mini Pancakes

tbsp butter (25 grams, softened

tbsp icing sugar / powdered sugar (to dust)

In a large mixing bowl, add the flour, sugar and yeast, giving it a quick mix and making a well in the centre.

Whisk

Pour in the warmed milk and egg, then whisk into a batter. Cover with a tea towel or silicone bowl cover, and leave to rise for an hour. The batter should be double in size and look very bubbly when ready. Note: If in a colder climate, allow extra time and pop the bowl in a warm location.

Grease

Grease a poffertjes pan or frying pan with the butter over a medium heat. Once warmed, add heaped tablespoons of batter into each well in the poffertjes pan. Make sure to leave space if using a frying pan.

Cook

Once bubbles start to pop on top (1-2 minutes), flip using a single chopstick or skewer (similar to making takoyaki). Allow to cook for another minute or two, once puffed up and cooked through, then remove from the pan. Repeat until all batter is used up.

Serve

Serve while hot, sprinkling icing sugar / powdered sugar over the top to dust.
