Polish Pierogi are considered to be the national dish.&nbsp; Little bundles of joy you are sure to love.&nbsp; Easy to make and a heavenly bite.&nbsp;

Polish Pierogi

flour

eggs

tbsp unsalted butter (1 stick, softened)

milk

oz mushrooms champignons chopped finely

Tablespoon oil

Stir the flour and salt in a large bowl. Cut in the butter until mixture looks crumbly. Add in the eggs then milk and stir with a wooden spoon until mixture holds together.

Lightly knead in the bowl to smooth. Set aside.

Instructions

Put the  sauerkraut in a bowl

Put the mushroom in a dry skillet over high heat, cover with a lid.  Once the mushrooms release the moisture, take off the lid and cook until the water evaporates.

Add in the oil and onion and saute over low heat for about 10 minutes.  Once cool mix together with the sauerkraut

Roll dough out to ⅛"thickness (you may need to divide the dough in half and roll dough out at a time if your working area is small.)

Cut out circles using a cup 3" in diameter.

Place about a heaping teaspoon of filling in the centers and seal pierogi. Transfer to a floured tray and continue to work on the dough rolling out the scraps. (Tip: use a pierogi maker for quick and easy results or you can crimp with a fork.)

Freeze or boil in water for 3 minutes.

To cook frozen: Boil in water for 3-4 minutes

sauté in butter until nicely seared (about 2-3 minutes.)

Serve with sour cream and garish with some chives

Crafting the ultimate Polish comfort food, homemade pierogi, is definitely a labor of love. From perfecting the dough to nailing the cheesy potato and onion filling, get ready to enjoy the authentic recipe that&#39;s been a staple in my Polish family for years.

unbleached, all-purpose flour

Peel and quarter potatoes and bring to a boil in a large pot. While potatoes are cooking, grate cheese and sauté onion. When the potatoes can be easily pierced with a fork, drain and quickly return to the pot over the heat to remove any remaining water. Begin mashing with a potato masher, adding sautéed onion and cheese. Incorporate well and mash the potato mixture down into a hard-pack in a large bowl until flattened on the top. Let cool and place in the refrigerator overnight.

Pierogi Filling: (Make the day before, it needs to chill overnight.)

In a medium sized bowl, measure unbleached, all-purpose flour using the scoop and sweep method  and sprinkle table salt on top. Make a well adding egg sour cream.

With two knives, incorporate the egg and sour cream into the flour. Slowly add in approximately lukewarm water. (Add only a small amount at a time as you continue to cut the egg into the flour.) (My Mom is very particular and meticulous about this step. She goes slowly and makes sure every bit of flour is incorporated with the wet ingredients, so take your time here.) Once all the ingredients have been mixed, the dough will not be very smooth and possibly quite sticky. Use your hands to bring it together into a ball. Let the dough stand covered with an inverted bowl for approximately 1/2 hour before using. (Don&#39;t skip this, the dough needs to rest.)

Once you have made all your dough batches take either all of a dough ball, or a portion of the dough, and roll it out until it is 1/16&quot; thick. (Using flour will help you keep the dough from sticking to the rolling pin and rolling surface. Your available work surface will obviously dictate how much you can roll out at any one time. Thickness of the dough is very important for good pierogi.) Cut out circles as close to the dough edge as possible and place them on a clean dish towel, placing them flat, just as you cut them out of the dough. In other words, do not flip them over. Keep the circles covered with a dish towel as they dry out easily. (Leftover dough scraps after cutter can be put together into a ball and placed under a bowl to use at the end.)

Remove only some of the filling from the large bowl in the refrigerator so that you can keep it cold. Place about 2 Tablespoons of filling into the dough circle.  Do this by picking up each circle and flipping it over into your hand. The edge on this side is better to seal. Place filling inside. (The dough stretches well as you press the filling in with a spoon.) Add more filling if necessary. Bring the dough together and crimp the edges with your fingers. (Be aware that if you have any filling on your fingers or on the edges of the dough, where you are trying to seal the edges, the dough will not close.) Also, be mindful not to make any small holes in the dough or leave any edges unsealed as they will come apart during cooking.

Bring a large pot of water to a boil. Once water is boiling, place twelve pierogi at a time in the water. When they float to the surface, give them about one more minute and remove them from the water using a slotted spoon so the water can drain off. (It is common to lose a few at this point that have not been sealed properly (early snacks)). If it is happening a lot, reseal your other pierogi before dropping them into the water.

Take them directly from the water and place them into a frying pan with a gob of melted butter over low heat. (Here you are basically just coating them well with butter so they do not stick to each other. (At this point you can cool them and freeze them in Ziploc bags if you like.)

If you are going to serve them, I like to line them up like soldiers in a 9 x 13 pan and keep them warm in a 200 degree F. oven (covered).

Pierogi Dough:

In a large frying pan, fry bacon until crispy, remove, leaving some of the fat to sauté onion.  When the onion is done, add the crispy bacon back to the pan and mix together.

Sprinkle the bacon-onion mixture over your pierogi and serve warm.

If you need to rewarm them the next day, place a dozen at a time in a large frying pan over low heat and cover. You are basically steaming them, but it&#39;s okay to make them a little crispy too. Serve with sour cream if you like.

Grandma's Polish Pierogi Recipe

Cook the potatoes in a pot of boiling water until form tender. Drain, then place them in a large bowl.

While the potatoes are cooking, melt the butter in a large skillet, then add the onion and sauté until soft, 5-6 minutes. Pour the butter/onion mixture into the bowl with the potatoes, then add the cheese and use a potato masher to mash everything together until the cheese is melted. The mixture will be thick! Add salt and pepper to taste. Allow the potatoes to cool before using them.

While the potatoes are cooling, make the dough: stir the flour, salt and baking powder together in a large bowl. Then, whisk the eggs and olive oil together then pour them into the bowl and stir to combine. Pour the water in 1 cup at a time, using your hands to mix everything together. The dough will be very sticky at first, but after you knead it for 2-3 minutes, it should pull away from your hands.

Next, flour a clean surface or silpat mat, then pour the dough out onto it and divide it into two balls. Sett the one ball of dough aside and keep the other one on the mat. Use a rolling pin to roll the dough out so that it&#39;s 1/4&quot; thick, then use a 3&quot; circle cookie cutter to cut out round circles of dough and place them on a clean dish towel. Re-roll the dough until it&#39;s finished, then repeat the same process with the second ball of dough. You should end up with around 24 circles.

To make a pierogi: use your hands to slightly stretch one of the dough circles out a bit, then add a spoonful of the cheesy potatoes in the middle. Fold up the two ends like a taco and pinch them together. Add a little more potato filling into both sides, then use your fingers to seal the pierogi shut on all sides. Use the back of a spoon to scallop the dough, which will ensure none of the potato filling comes out when they&#39;re cooking. Repeat this step for all of the dough circles. You may have a little bit of the cheesy potatoes leftover and that&#39;s ok!

While you&#39;re making the pierogies, bring a large pot of salted water to a boil. Then, drop 6 pierogies into the water and cook them until they rise to the top, approx. 5 minutes. Use a slotted spoon to remove them and place them on a clean kitchen towel, then cover them with another towel so they don&#39;t dry out.

The final step is to fry them: melt 2 tablespoons of butter in a large skillet over medium heat, then add the pierogies and cook them for 2-3 minutes on the first side, then flip them over and cook for 1-2 minutes on the second side until they&#39;re golden brown. NOTE: you&#39;ll need to add more butter as you go and possibly wipe out the skillet in between batches to ensure they brown properly.

Serve pierogies with drizzled melted butter, sour cream and/or chopped chives and enjoy!

I've found several different recipes for the dough over the years, including a dough for baked perogi that has baking soda in it (they are delicious) with a garlic potato filling which then go into a sauce after baking. Fillings can be anything - potato, cheese, saurekraut, ground up meat. A visiting friend has requested I make a spinach feta perogi so I used the spanakopita filling and just subbed cream cheese for the egg - can't wait to try them! What I do to freeze them is well-flour a cookie sheet and place the fresh made perogi on that and pop into the freezer for an hour or so until they are frozen. Take the cookie sheet and lightly drop it onto your kithen counter to loosen perogi. Then you can fill up the freezer bag. Since they are individually frozen you can then take out the number you want to cook. Cook in boiling water until they float as usual (can fry as usualy after if you wish). Tip: make sure you use a plastic or wooden spoon if you need to stir or remove the perogi in the boiling water as they won't cut into the cooking perogi like a metal utensil can - no lost filling/perogi! My herrrrrritage is Polish/Ukrainian and I've been making perogi since I was a little girl....many happy memories of family atherings and a bunch of people all making perogi in the kitchen! I change things up, too, by subbing out the fried onion to put over top with mushroom or sauteed peppers - anything goes!

I love this dough recipe!! I don't make traditional pierogi. Our family's favorite is stuffed with hatch chile, cheddar, cream cheese and sauteed mushrooms and onions all mixed together and then you add a bit of pulled pork. This dough is *chefs kiss* perfect!

You gave a very detailed instruction on how to make the dough and fill them, a first that I have come across. Thank you very much. I tried making them last Christmas but I could never get them full enough. I will try again and hopefully they will work out and I can freeze them for Christmas . We have been buying them at our local meat market but the prices have soared to $4.50 a pierogie! Ours are filled with cottage cheese and chives, with sour cream on top after they are fried. Yummm. My Grandma's Polish Pierogi Recipe

Classic Polish Pierogi Recipe

All-purpose flour (plus extra for dusting)

Salt

Clarified butter

Egg (in room temperature)

Russet potatoes

Twaróg Quark cheese

Onion (finely chopped)

Salt (to taste)

black pepper (to taste)

Unsalted butter

Sour cream

Prepare the dough

 In a large mixing bowl, sift the flour and add salt. In a separate bowl, melt the butter in boiling water. Gradually add the water with melted butter to the flour, mixing with a spoon until combined. Add the egg and mix well. 

Knead the dough

 Transfer the dough to a floured surface and knead for about 8-10 minutes, until smooth and elastic. Cover and let rest for 30 minutes.

Pierogi Dough

Boil the potatoes

 Peel and rinse the potatoes. Put them in a pot, with around 4 inches of room from the top. Cover completely with cold water and add 1 tablespoon of salt. Boil on medium heat for about 20 minutes, or until soft. Drain the water and mash. Leave to cool completely.

Sauté the onions

 Melt the butter on a skillet or a nonstick pan. Sauté the chopped onion on medium heat in clarified butter, until golden and soft. It should take around 7-10 minutes. Set aside to cool.

Mix the ingredients for the filling

 Mash the boiled potatoes again, until smooth. Combine with cheese, salt, and pepper. Add the cooled, sautéed onions, and mix well. Taste, and add salt and pepper if needed.

Cut out the dough

 Divide the dough into four parts. Roll out one part on a floured surface until thin (around 2 millimeters). Cover the other pieces with a cotton cloth, so it doesn’t dry out. Cut out circles using a glass or a cookie cutter around 3 inches in diameter.

Form the Pierogi

 Take the circle of dough into your hand and slightly stretch it. Place a spoonful of filling on each dough circle, fold in half to form a semi-circle, and press edges to seal. Pinch again the edges, creating ruffles.

Cook the Pierogi

 Bring a large pot of salted water to a boil. Cook the pierogi in batches until they float to the surface, then continue cooking for about 1-2 minutes more. Remove with a slotted spoon.

Fry the pierogi in butter

 The pierogi are ready to eat, but we find them even more delicious when we fry them up in some butter! In a large skillet, melt 4 tablespoons of butter over medium heat. Add boiled pierogi in batches, frying until each side for about 2 minutes or until they are golden and crispy. 

Serve Hot

 Serve your crispy butter-fried pierogi with sour cream and caramelized onions on the side.

My grandmother was from Poland.  She made a cheese filling using Farmer's Cheese which she grated and sautéed green onions, but never used potatoes with the filling.  She sautéed the onions in butter first, then added them to the Farmers Cheese.  If Farmer's Cheese isn't available, dry cottage cheese works.  So delicious, is the Polish cuisine!
