This homemade Taiwanese Popcorn Chicken or salt pepper chicken (鹽酥雞 Yan Su Ji) are so scrumptious and crackly bits all over. Bring the night market to your home when you miss it!

Taiwanese Popcorn Chicken

chicken breasts thigh

garlic

tbsp ginger

soy sauce

tbsp Mirin (*see notes)

tbsp ShaoXing wine (or dry sherry (*see notes))

tsp sweet potato starch (or Tapioca starch)

tsp 5-spice powder (* see notes)

tsp white pepper

cayenne pepper

brown sugar

eggs + add 3 tbsp water

sweet potato starch

Thai basil leaves

salt

tbsp 5 spice powder

tbsp white pepper

Cut the chicken into 1-inch chunks and place in large bowl. Mix the marinade ingredients and add the mixture into the chicken, toss well. Set aside and refrigerate for 20 minutes or overnight.

When ready to cook, place the eggs in a bowl, add 3 tbsp of water and whisk with fork. Place the sweet potato starch in a separate bowl.

Using chopstick (or a tong), dip the chicken first into the egg mixture, then toss in the sweet potato starch and coat evenly. Shake off excess starch.

Heat the oil in the wok, when oil reached 150 degree C, scatter the basil leaves and stir for about 20 seconds until the basil leaves turn translucent and crisp. Remove from the wok and drain. Set aside.

Increase the heat of oil to 170 C and fry the coated chicken in batches for about 2-3 minutes (do not overcrowd the wok) or until golden brown. Regularly skimming any floating flour bits from the oil.

Place the cooked chicken in a wire rack lined with paper towel to drain the oil.

While the cooked chicken are still hot, sprinkle or season with a good pinch of Spiced Mixed Salt. Serve immediately and garnish with fried basil leaves.

Easy Popcorn Chicken Recipe

tbsp all purpose flour

tbsp salt

garlic powder

buttermilk

panko crumbs

In a medium bowl, combine the flour, salt, and garlic powder.

Pour the buttermilk into a separate bowl and the panko crumbs onto a plate.

Dredge a piece of chicken into the flour mixture until evenly coated then dip in buttermilk, letting excess drip off. Lastly, roll in panko bread crumbs until evenly coated. Transfer to a platter.

Preheat 1-inch of oil in a deep frying pan over medium heat. Adjust the heat to keep the oil at 350˚F.  Fry the popcorn chicken in small batches, leaving space between each piece and flipping as needed. Fry until golden brown and 165˚F at the deepest part of the chicken on a thermometer.

Remove the popcorn chicken from the oil and let it rest on a paper towel-lined plate. Serve immediately with your favorite dipping sauce!

Popcorn Chicken Recipe

boneless skinless chicken breasts (cubed)

all-purpose flour

garlic salt (with parsley flakes)

Add 1-2 inches of vegetable oil to a medium pan and heat on the medium setting.

Mix together flour and garlic salt in a small bowl. In another small bowl add buttermilk. In a third small bowl add the panko crumbs. Place the three bowls in a line.

Dip the chicken pieces in the flour mixture first followed by the buttermilk and lastly the panko crumbs.  Dip all the chicken pieces making sure that all sides are coated with each ingredient. For a double coating dip the pieces in the buttermilk a second time and again in the panko crumbs. If you&#39;re make a double coating you will need extra milk and panko crumbs.

Place a paper towel on a plate next to the stove near the hot oil.

Working in batches, place the chicken pieces in the hot oil. Fry for 3-4 minutes on each side or until golden brown. Once the pieces are done use tongs to remove them from the oil and place them on the paper towel-lined plate

Serve warm with your favorite dipping sauce.

Popcorn Chicken

Crispy on the outside, juicy on the inside, this easy Popcorn Chicken recipe can be baked, fried or cooked in the air fryer.

Place chicken pieces in a bowl or ziplock bag and add flour, stirring or shaking to coat completely. Set aside.

Add eggs, milk, salt and pepper, garlic powder and paprika to a bowl and stir to combine. Set aside. 

In another shallow bowl combine crushed cornflakes.

Dip each piece of flour-coated chicken into the egg mixture, followed by the cornflakes, gently pressing the cornflake mixture into the chicken.&nbsp;

To Bake. Place chicken on a parchment lined baking sheet and bake at 400 degrees F for 10 minutes. Flip chicken and bake for another 7-8 minutes or until cooked through.

To Fry: Heat a few inches of vegetable oil in a pot. Once hot, work in batches to lower the chicken into the oil and cook for 3-4 minutes, until cooked through. Remove to a paper towel lined plate.

To Air Fry: Spray the bottom of the fry basket with nonstick cooking spray and place half of the chicken pieces into a single layer in the basket. Generously spray the top of each piece of chicken with cooking spray. Air Fry at 360 for 3 minutes. Open air fryer, flip chicken pieces to the other side, and spray tops again with cooking spray. Increase air fryer temperature to 400 degrees and cook for 2-3 more minutes, or until crisp and cooked through.

Serve warm with BBQ sauce, ranch, Chick-fil-A sauce, honey mustard, or another favorite dipping sauce.
