This wonderfully warming pork curry recipe is as tasty as it looks. It&#039;s made with tender strips of pork loin steak and flavoured with fennel, turmeric and coconut milk, with a fresh hit of crunchy green beans.

Pork Curry Recipe (Keralan Pandi)

pork loin steak

tbsp vegetable oil (canola oil) (or coconut oil)

fennel seeds (leave out, if preferred)

red chillies (remove, if preferred)

onion (finely diced)

garlic (minced)

sea salt flakes

black pepper

tsp turmeric

400 g canned chopped tomatoes

green chilli (chopped)

tbsp fresh root ginger (grated)

ground cumin seeds (or cumin powder)

tsp ground coriander (or coriander powder)

200 g canned coconut milk (low fat, if preferred)

g green beans (trimmed)

Place a wide, large saucepan or large frying pan over a medium heat and add the oil. Once hot add the whole fennel seeds and red chillies (if you are using them).

Add the onions and sauté until they start to brown. You&#39;ll probably need to lower the heat to ensure they brown gently rather than stir fry.

Remove the fat from the pork and cut into strips. Season the pork with salt and lots of black pepper and ½ tsp turmeric.

Add the tinned tomatoes, green chilli, grated ginger into the pan with the onions and stir over a medium-high heat.

Once it starts to simmer, add the remaining turmeric, ground cumin and coriander and stir. Let it reduce and thicken.

Add the meat and stir to coat with the sauce. Reduce the heat and cook for 5-10 minuets.

Pour in the coconut milk and heat through then add the trimmed beans and cook for a further 5-10 minutes until the beans are cooked.

When cooked through, check the seasoning and add the coriander leaves (fresh cilantro leaves), and a squeeze of lime.  Serve with plain rice.

I made this with my own French beans, it was DELICIOUS! I seeded the red chiles and found it was spicy enough so added two more. My husband and I try to stay clear of white rice and since we hadn’t tried this before, we decided against a red or black rice. Instead , we did half quinoa and half grated sweet potato (cooked together with salt and pepper added to the cooking liquid) 

Did I mention it was DELICIOUS?

As I work at a prestigious food warehouse, I bought quite a few joints of Pork Loin.  I was so determined to empty this freezer in a certain month but it's still not defrosted!

Cut to the recipe, I saw this and thought this looks lush, followed recipe (doddle), didn't have fennel seeds or dried red chilli and found alternative (frozen chilli).

The recipe is extremely easy to assemble, I cut the pork loin into chunks instead of strips and used whole tin of coconut milk instead of 200ml.

I've a 14 year old who'll try any recipe and even her verdict was, that was a little spicy mum and yes she enjoyed it.

The fennel came through beautifully... It says its optional, but please don't leave it out!
I didn't have dried chillies so used a couple of teaspoons of chilli flakes instead. 
It took me longer to cook than suggested, I think because my pan was a bit small everything took a bit longer and I had to add the meat in batches. Despite that, it all came together into a beautiful consistency! The whole family loved it. Only I like fresh corriander so I added that on my plate. I don't think it suffered for that.
I will definitely be cooking this again. It is nice to have a rich, fragrant and tasty curry that doesn't take too long to prepare!
