Pork fried rice is probably one of the most popular take-out dishes out there. Classic Chinese take-out pork fried rice is made with Chinese BBQ roast pork.

Classic Pork Fried Rice

Shaoxing wine ((or dry cooking sherry))

soy sauce

white pepper

rice oil

eggs ((scrambled))

scallions ((chopped))

Start by combining the hot water, honey, sesame oil, shaoxing wine (if using), soy sauce, dark soy sauce, and white pepper in a small bowl. This is the sauce that you'll be adding to the rice, and it's much easier to have it combined and ready to go before you start cooking.

Take your cooked rice and fluff it with a fork or with your hands (you can rinse your hands in cold water if the rice starts sticking to them). There shouldn't be any big clumps!

With the wok over medium heat, add a tablespoon of oil and sauté the onions until translucent and then stir in the roast pork. Add the rice and mix well. If the rice is cold from the refrigerator, continue stir-frying until the rice is warmed up, which will take about 5 minutes. If the rice was made fresh, then you just need to mix until everything is incorporated.

Add the sauce mixture and salt and mix with a scooping motion until the rice is evenly coated with sauce. You will have to break up any remaining clumps of rice with the spatula as best as possible, but no need to be obsessive. The rice should be hot by this time.

Toss in your mung bean sprouts, scrambled eggs, and scallions. Mix thoroughly for another minute or two and serve!

Pork Fried Rice

short grain white rice (cooked and chilled)

butter (divided)

eggs (slightly beaten)

pork tenderloin

garlic (minced)

carrots

peas

onions

soy sauce (more if preferred)

sesame oil (more if preferred)

sesame seeds (more if preferred)

salt and pepper (to taste)

Ahead of time, you'll want to cook your rice. Rice typically triples in size when it cooks, so you'll need at least 1 1/3 cups uncooked rice to start with. I typically make more just to have it on hand for the kids. You want the cooked rice to be cold when you make the pork fried rice, so if you need to chill it quickly, you can spread a thin layer on a cookie sheet and place in the refrigerator or even freezer.

Cut the pork tenderloin into very small pieces. This is easier if the meat is partially frozen and you use a serrated edge knife.

In a very large pan over medium heat, melt 1 T of the butter. Add the whisked egg and cook to a slightly underdone scramble. Transfer to a plate.

Increase heat under pan to medium high and melt another 1 T of butter. Add the tenderloin pieces, stirring only occasionally in order to get them to brown. Once mostly cooked, add the garlic, stir, and cook for a few more minutes. Transfer to a large plate.

Add another 1 T of butter to the pan. Saute the carrots, onion, and peas until slightly golden brown, stirring only occasionally. When done, transfer to the plate with the meat.

Add the remaining 2 T of butter to the pan. Add the cold rice and spread to an even layer. Allow to cook for a couple minutes before stirring to get the bottom layer to crisp up a bit. Then give it a good stir to heat through. Add meat and veggies back to the pan (along with any juices on the plate). Stir to combine to heat through. Add scrambled egg, green onions, soy sauce, sesame oil, and sesame seeds. Stir to combine. Add salt and pepper and additional soy sauce and/or sesame oil, if needed.

Serve warm.

This Pork Fried Rice has soft and fluffy rice, perfectly flavored with soy sauce, garlic and ginger and with bits of egg, green onion and pork in every bite.

Healthy Pork Fried Rice

tbsp sesame oil (divided)

olive oil (divided)

pork chops

mushrooms (sliced)

shallot (chopped)

green onions (sliced plus more for garnish)

tsp ginger

rice

tbsp soy sauce (low sodium)

hoisin sauce

peas (thawed)

eggs (beaten)

kosher salt (to taste)

black pepper (to taste)

Heat 1/2 tbsp. sesame oil and 1/2 tbsp. olive oil in a large skillet over medium-high heat. Generously season pork chops with kosher salt and ground black pepper. Brown each side. When cooked through, remove from heat and allow to cool, reserving the drippings in the pan. When cool enough to handle, chop the pork into bite-size pieces and set aside.

In the same pan, add the remaining 1/2 tbsp. sesame oil and 1/2 tbsp. olive oil and heat to medium-high. Add the mushrooms and cook, stirring occasionally, for 2 minutes. Add the shallot, green onions, garlic and ginger and cook for 5 minutes.

Add the chopped pork, rice, soy sauce, hoisin sauce and thawed peas and stir to combine.

Push the rice mixture to one side of the skillet. Pour the eggs into the cleared side of the skillet and scramble. Once mostly scrambled, break up with spatula or spoon and combine eggs and rice mixture. Season with kosher salt and ground black pepper, if necessary.

Garnish with sliced green onions, if desired.

Preheat a large skillet or wok to medium heat. Add 1 tablespoon of sesame oil, pork, onion powder, salt, and pepper. Cook for 5-7 minutes or until no longer pink. Remove from the wok and set aside.

Returning to the same wok, add the remaining 2 tablespoons sesame oil, onion, peas, and carrots. Cook until tender.

Slide the onion, peas, and carrots to the side, and pour the beaten eggs onto the other side of the skillet. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.

Add the cooked rice to the veggie and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until warmed through and combined.

Add the cooked pork back to the rice and veggie mixture and stir to combine.

Season with additional salt and pepper if needed. Garnish with chopped green onion if desired.
