An easy, one-pan dinner idea for tender, flavorful Pork Steaks topped with a savory brown onion gravy. Quick-cooking and sure to satisfy any appetite!

Pork Steak

Kosher salt

black pepper

garlic powder

onion powder

pork shoulder blade steaks

canola or avocado oil

unsalted butter

all-purpose flour

low-sodium beef broth

Worcestershire Sauce

In a small bowl, combine salt, pepper, garlic powder, and onion powder. Pat the pork steaks dry with a paper towel and sprinkle both sides liberally with the seasoning. Set aside until ready to use.

Add the oil to a large sauté pan over medium-high heat and allow to come to temperature. Add the pork steaks to pan, taking care not to overcrowd the pan and cooking in batches if needed. Cook for 3-4 minutes on the first side, then flip and cook 3-4 minutes more. Remove from the pan and repeat with the remaining pork steaks. Set aside on a plate and make the gravy.

Reduce the heat to medium heat and add the butter. As soon as the butter has melted, add the onion to the pan and stir. Cook for about 5 minutes, stirring occasionally until softened and cooked through.

Sprinkle the flour over the onion and stir until evenly coated. Then, one big splash at a time, add the beef broth, whisking well after each addition. Once the mixture starts to resemble pudding, add the remaining broth all at once. Add the Worcestershire sauce and whisk to combine. Allow to simmer, 3-4 minutes, until slightly thickened. Remove from the heat.

Serve your pork steaks with a ladle full of gravy and enjoy.

How To Cook Tender Pork Steaks On the Stovetop With a Quick Onion Gravy (ONE PAN RECIPE)

Tonteki is a Japanese pork loin steak dish served in a savory citrusy sauce.  From start to finish in 15 minutes!  Inspired by the Japanese drama - Midnight Diner.

Tonteki

onion ((core should be intact for grating))

pork loin chops (½ inch thick) ((½ lb, 227 g))

salt

tsp black pepper

Tbsp all-purpose flour (plain flour)

Tbsp neutral-flavored oil (vegetable, rice bran, canola, etc)

Tbsp ponzu

Tbsp sake

½ Tbsp soy sauce

¼ cabbage

tomato

parsley

Gather all the ingredients.

Over a small bowl, grate ¼ onion (use about half of it) and set aside.

Shred the cabbage into thin slices (I’m using a Japanese cabbage shredder) and cut the tomato into wedges.

In a medium bowl, combine ponzu, sake, soy sauce and whisk all together.

In order to sear the meat perfectly, pat dry the pork chops with paper towels. Removing the moisture will prevent the meat from being steamed.

Make a couple of slits on the connective tissue between meat and fat on both sides of the meat.  Red meat and fat have different elasticity, and when they are cooked, they will shrink and expand at different rates.  These slits allow the pork loin chops to stay nice and flat when being cooked and prevent it from curling up.

Season one side of the meat with kosher salt and freshly ground black pepper (the sauce is salty, so you can skip the salt here if you like).

Coat the meat with flour and remove excess flour.

Heat the frying pan over medium-high heat and add the oil. When the pan is hot, add the pork loin chops and cook for 4 minutes each side. Do not flip until the bottom is nice golden brown.  If you cook more than 2 pieces, make sure to cook in batches. Give some space between meat, which ensures nice searing and prevent from steaming the meat.  Browning the meat gives an important flavor component. To get evenly golden brown, the meat should be flat, which is why making slits is important at step 6.

If you see the protein coming out from the meat, you can pick it up and wipe off the excess oil (optional).

Add the sauce and grated onion to the pan.

Pour the sauce over the meat and coat well with a spoon

If you eat with chopsticks, transfer to the cutting board and slice into bite-size pieces.  Serve the Tonteki with shredded cabbage and tomatoes. Pour the extra sauce over the cabbage if you like.

Keep the leftovers in an airtight container and store in the refrigerator for up to 3 days or in the freezer for a month.

How To Make Tonteki - Midnight Diner Series (Recipe) トンテキの作り方 (レシピ)

This slow cooker smothered pork is a tasty dinner with lots of mushrooms and plenty of sauce. The pork steaks are melt-in-the-mouth!

Slow Cooker Smothered Pork Chop Recipe

olive oil

pork shoulder

¼ tsp black pepper

onion

garlic (peeled and minced)

tbsp plain (all-purpose) flour

360 ml (1 ½ cups) chicken stock

200 g (7 oz) white or brown mushrooms (sliced)

tomato puree (paste

tbsp white wine vinegar

60 ml (¼ cup) double (heavy) cream

tbsp parsley

potato

Brown the pork first. Heat the oil in a large frying pan over a high heat.

Sprinkle both sides of the pork steaks with salt and pepper.

Place in the pan and fry for 2 minutes each side, until browned. Remove from the pan and place in the slow cooker.

Now make the sauce. Add the the oil to the pan you fried the pork in and turn the heat down to medium.

Add in the sliced onion and fry for 5 minutes, stirring often, until the onions have softened.

Add the minced cloves of garlic. Fry for a further minute, whilst stirring.

Sprinkle the flour over the onions and stir together to coat.

Slowly pour in the stock whilst stirring.

Pour the liquid from the pan into the slow cooker.

Add the sliced mushrooms, tomato puree, white wine vinegar and the black pepper to the slow cooker. Stir together.

Place the lid on and cook on high for 3-4 hours or low for 5-6 hours.

Remove the lid and stir in the cream, then serve topped with a sprinkling of fresh parsley.

I like to serve mine with mashed potato and sprouts.

Beat steaks between two sheets of non-stick baking paper, using a rolling pin, to the thickness of two £1 coins. Put the flour, eggs and crumbs into 3 shallow bowls. Mix the nuts, thyme and zest into the crumbs, then season.

Coat the steaks in the flour, shaking off the excess. Then coat in the egg, and finally the crumbs, Again, shaking off any excess. Put the steaks on a large plate.

Heat the oil in a frying pan until hot. Fry 2 steaks for 2 mins each side until firm and crisp. Add a little butter for the final few secs to coat. Set aside, and repeat (keep steaks warm in the oven). Serve with salad and lemon wedges.
