Potato Broccoli Medallions are so easy and delicious to make as a side dish. These medallions are made with potatoes, broccoli, leeks, onions, garlic, and cheese. They are baked in the oven to make them a little healthy.

Potato Broccoli Medallions - Ikea Style Vegetable Medallion

Potatoes (500 grams)

Broccoli (around 3 cups chopped)

Leeks (white parts, 1 cup chopped)

Onion (finely chopped)

(finely chopped)

tbsp Parsley (finely chopped)

tsp Black pepper (freshly ground)

Salt

Mozzarella (* see notes)

tbsp Oil (divided)

In the inner pot of the Instant Pot, add 1 cup water and place a trivet or steamer basket. Place thoroughly cleaned potatoes inside it.

Close the lid, making sure the valve is set to sealing.

Turn on the MANUAL/PRESSURE COOK button (High Pressure) and set the timer to 15 minutes.

Let the pressure naturally release (NRP) for 12-15 minutes.

Once the potatoes are easy to handle, peel them with your hands and shred/mash the potatoes in a large bowl.

Potatoes In The Instant Pot

Cut medium sized florets of the broccoli (medium head). Soak them into the salt water for 10 minutes and wash. Set them aside on a colander.

In a large pot, boil 5 cups of water, and remove from the heat.

Add broccoli florets and let them sit in the boiled water for 4-6 minutes stirring frequently.

Transfer the boiled broccoli to the colander and wash them with cold water. Pat them dry with the kitchen towel and chop them into small pieces.

Preparing The Broccoli

Separate the green part of the leeks, chop the white part vertically in the middle, and chop it into small pieces.

Clean the leeks with loads of water very well and set them to sit in the colander until ready to use.

In the skillet, heat 1 tbsp oil, add chopped onions, and sauté for 1 minute.

Transfer the chopped garlic cloves, leeks, and let them cook for 4-5 minutes. Let the onion mixture cool completely.

Transfer the prepared broccoli to the shredded potato bowl.

Next, add chopped parsley, onion mixture, cheese, pepper powder, and salt to the large bowl. Mix everything well with a large spoon.

Line a baking tray with parchment paper, brush some oil, and set it aside.

Preheat the oven to 425℉ (220℃)

Preparing The Leek

Use a medium sized cookie/biscuit cutter and place it on a prepared baking tray.

Scoop a 2 tbsp mixture into the cutter and gently flatten it with a spoon. Repeat the same process until you finish the entire mixture.

You can shape the medallions into a round shape with your hands. Brush some oil on the medallions.

Transfer the baking pan to the oven and bake them for 30 minutes. Turn the pan to the other side after 15-20 minutes to bake them perfectly from both sides. Let them sit in the same pan for another 5-7 minutes and serve warm.

Shaping

Potato broccoli patties make a great snack. Crispy, textured and tasty snack that's inspired from IKEA Vegetable medallions.

Broccoli florets

tbsp Plain flour

Onion powder

Garlic powder

tsp Black pepper (freshly crushed)

Wash and peel the potatoes using a grater with large holes.Wash it to remove excess starch. Drain over a metal strainer.

Bring water to boil, enough for the veggies to immerse.

I first parboiled Broccoli. Add the florets, only after water boils. Wait for a minute or two. Add little salt while boiling.

Take out the broccoli florets and plunge immediately to ice water to retain the green, prevent over cooking.

Pat dry in a clean kitchen towel.

Pulse it by running it just once or twice in a mixie/ food processor.

Now, add grated potato to boiling water. Add little salt.

When it becomes frothy (2 mins approx) drain from water and you can either proceed to squeeze the excess water in kitchen towel after cooling it for a while. Or, give a ice bath for it too and proceed to squeeze out the water.

Place the potato, broccoli in a mixing bowl. Sprinkle onion powder, garlic powder, black pepper powder and salt. Add all purpose flour.Mix well evenly.

Heat oil for shallow frying in a pan. Shape a portion of the prepared mixture tightly. Transfer to your hands and place it in hot oil carefully.

Cook both sides over medium heat for 3 minutes each side. Adjust timing and flame as needed. It should be cooked crisp and golden. So make sure oil is hot. If not, it will retain oil.

Drain over paper towels and finish the mixture in few batches.

Potato broccoli patties, IKEA potato broccoli medallions inspired snack. 
I love the snack we get in IKEA restaurant Sg. So this is my take of it, At home Cook #withme during the CB when Ikea is closed. I have tasted only twice there as it is mostly crowded and we rarely get seats. 
The snack we get ikea are smaller and taller in looks, uses scallions and cheese in the recipe. I made it more like a hash brown version as we like it crispy. 
If you want, you can add 1/4 cup shredded cheedar cheese in this recipe.
You want to bake it? Bake at 190 deg C for 20- 30 mins.
