A classic Prawn Cocktail recipe! Juicy prawns (shrimp) tossed in a beautiful Prawn Cocktail Sauce (Rose Marie Sauce - a pink mayonnaise). The key to a good Rose Marie Sauce is a good mayonnaise. Use whole-egg if you can find it . (Note 1) A classic Aussie summer festive starter!

Prawn Cocktail!!!

iceberg lettuce, finely sliced

Lemon wedges

parsley ((optional))

mayonnaise

tbsp ketchup (or Australian/UK tomato sauce (Note 3))

Worcestershire sauce

tabasco sauce ((to taste))

cayenne pepper

If you are using whole prawns, remove heads and peel them. Leave a few whole for decorative purposes, if you wish. I find that with medium size already cooked prawns, deveining is usually not necessary (it's hard to do + so small it's barely noticeably especially with sauce).

Mix together Sauce in a small bowl.

Toss prawns with Sauce.

Place a bit of lettuce in serving dishes. I like to use Martini glasses, but you can use any small serving vessel, or even small lettuce cups.

Top with prawns. Serve, garnished with lemon wedges and a sprinkle of parsley, if using.

Juicy prawns served on a bed of crisp lettuce with a tangy, creamy sauce is the perfect starter to a special meal or great on its own as a light lunch. Served with some buttered wholegrain bread and enjoy!

500 grams/1lb 2 ounces frozen Atlantic prawns, de-frosted, drained

150 milliliters/5fl oz ready-made gazpacho

150 milliliters/5fl oz low-fat crème fraîche

shallot, peeled, very finely diced

tomatoes, skins removed, flesh diced

red chilli, stalk removed, finely diced

radishes, trimmed, finely sliced

coriander

lime, juice and zest

Tabasco

salt and black pepper

baby gem lettuces, shredded

avocado, peeled, stone removed, flesh sliced lengthways

prawns, heads and shells intact

kg medium/large tiger prawns

fennel bulb, shaved

Tbsp extra virgin olive oil

limes

lettuce

Breadcrumbs

nori seaweed, torn

(50 grams) panko breadcrumbs

garlic powder

onion powder

tsp coriander

tsp smoked paprika

Avocado

avocadoes

tsp citric acid

tsp glucose

lime

lemon

fresh ginger, peeled, finely grated

Sea salt & cracked black pepper,

Step 1

To make breadcrumbs, heat oil in a large frying pan over medium heat. Add nori, breadcrumbs and spices. Cook, stirring regularly, until light golden. Set aside.

Step 2

Peel and devein the prawns, reserving half the prawns with tail intact as garnish. Slice remaining prawns into 3.

Step 3

To make avocado, mash or blend ingredients until smooth. Season with salt and pepper to taste. Stir in sliced prawns.

Step 4

Combine fennel, oil and juice in a bowl. Season.

Step 5

To assemble, arrange leaves in glass serving bowls. Divide avocado and prawn mixture among bowls. Top with fennel and breadcrumb mixture. Hang reserved prawns over side of bowls as garnish.
