Instant Pot Whole Steamed Artichokes are a faster and easier way to cook artichokes. Pressure cooker artichokes are tender and ready to dip in your favorite sauce!

Instant Pot Whole Steamed Artichokes

1-4 Artichokes

Water ((for the 6 qt pressure cooker, 2 1/2 cups for the 8 qt))

Lemon, (sliced)

Garlic, (chopped)

Bay Leaves

Salt

Sweet Onion, (sliced)

Fresh Rosemary ((optional))

Remove small outer leaves that are dry, and cut the stem off, leaving about 1/4". Then use a really sharp serrated knife to cut the top inch or two off of the artichoke. This exposes the inside and will allow the steam to penetrate it.

Rinse the artichokes and pat dry with a paper towel. Then rub some lemon on the cut surface to prevent browning.

Prepare the Artichokes

Add the water to the stainless inner liner. Then add the aromatics, if using, (garlic, bay leaves, lemon slices, salt, onion, and rosemary).

Place the trivet/rack into the pot.

Prepare the Steaming Liquid

Place the artichokes into the pot, stem side up (cut side down). Close the lid and set the steam release knob to the Sealing position.

Press the Pressure Cook/Manual Button or dial, then the + or - button or dial to select the cook time (cook times may vary*):Small artichokes - 7 minutesMedium Artichokes - 10 minutesLarge artichokes - 15 minutes

When the cooking cycle is finished, do a Quick Release of the steam/pressure by turning the steam release knob to the Venting position, or pushing the release button, if applicable.

You can tell when the artichoke is done when a knife slides into the bottom easily.

Wash Artichokes: Submerge artichokes in cold water for 5 minutes.

Optional - Prep Artichokes: Cut stem off and trim about 1 inch off the tip of the artichokes.

Place Artichokes in Instant Pot: Place 1 cup of cold water and a steamer rack in Instant Pot Pressure Cooker. Place 2 whole artichokes on the steamer rack. With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position. Optional: If you like, squeeze some lemon juice on the artichokes to slow the rate of oxidation.

Pressure Cook Artichokes: Pressure cook a) Trimmed Artichokes: High Pressure for 8 minutes + Quick Release ORb) Uncut Whole Artichokes: High Pressure for 9 minutes + Quick Release c) For Large Artichokes: Increase the pressure cooking time accordingly.Open the lid carefully.

Prepare Garlic Butter: While the artichokes are cooking in Instant Pot, heat a saucepan over medium-low heat. Melt 2 tbsp (30g) unsalted butter and add in the minced garlic. Sauté garlic until golden brown. Do not let the garlic burn. Set aside to cool it down slightly. Season with kosher salt and adjust to taste (about 2 pinches).

Prepare the artichokes for cooking. Slice the stems off, leaving about 1/2-inch, and remove the lower leaves. Slice about 1/2- to 1-inch off the top of each artichoke, then use kitchen scissors to snip the tips of each outer leave. If desired, rub lemon juice over cut surfaces to prevent browning.

Fill the Instant Pot with 1.5 cups water. This is the recommendation for a 6 quart Instant Pot. If you have an 8 quart Instant Pot, you will need to increase the water to 2.5 cups. Place the trivet in the Instant Pot, and put the artichokes upside down on the trivet. Seal the lid on the Instant Pot, and set the cook time for 20 minutes. It will take a few minutes to come to pressure.

When the artichokes are finished cooking, turn the valve on the lid to manually release the pressure. Be careful when doing this; wear an oven mitt and step away from the steam. Once the Instant Pot is finished releasing pressure, remove the lid. The artichokes are ready if a fork can easily be inserted into the stem and the leaves can be easily pulled off. Use tongs to take the artichokes out. You can also let them sit in the Instant Pot with the lid closed for a few minutes after the pressure releases. This will make them even softer.

Serve the artichokes with dipping sauce of choice. Eat the artichokes by removing a leaf and scraping the inside leaf along your teeth. Discard the outer leaves after eating, but you may be able to eat some of the inner leaves whole if they are very soft. Avoid eating the fuzzy choke in the center! You can, however, eat the artichoke heart. I prefer to slice the cooked artichokes in half and remove the choke before eating, but it&#039;s up to you.
