Instant Pot Chickpeas

(225 grams) dried chickpeas (garbanzo beans)

whole head (40 grams) garlic (, crushed)

(212 grams) onion (, halved)

Optional Step - Soak Chickpeas Overnight: Place 1 cup (225g) dried chickpeas and 1 tbsp (17g) fine table salt in a large container. Pour 4 cups (1L) cold water in the large container, then give it a few stirs. Allow chickpeas to soak overnight for at least 8 - 16 hours. *Pro Tip: If your house is very warm, place the large container in the fridge to avoid fermentation.

Rinse Chickpeas: Rinse chickpeas under cold water, then pick out any stones or debris. Drain chickpeas well.

Pressure Cook Chickpeas: Add 1 cup (225g) unsoaked chickpeas or all of the soaked chickpeas, 2 bay leaves, 1 whole head (40g) garlic, and 1 halved (212g) onion to the Instant Pot. Adding Salt:-For Unsoaked Chickpeas - add in 1 ½ tsp (9g) fine salt.-For Soaked Chickpeas - add in 1 tsp (6g) fine salt.Pour in 4 cups (1L) cold water or unsalted chicken stock, then give it a quick mix. With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position.Pressure Cooking Method:-For Unsoaked Chickpeas - High Pressure 42 minutes (tender with a bit of chew) or 60 minutes (tender soft) + Natural Release 20 minutes-For Soaked Chickpeas - High Pressure 5 minutes (tender &amp; creamy) + Natural Release 20 minutesAfter 20 minutes, release remaining pressure, then open the lid.

Serve Instant Pot Chickpeas: Remove &amp; discard onions and bay leaves. Taste the chickpeas to ensure they are fully cooked. Add more seasoning if necessary. Drain the chickpeas. Then, serve the chickpeas as a tasty side dish. Enjoy!~ :)

These simple and tasty instant pot black beans, flavored with bacon, onion, garlic, poblano and lots of spices, have smoky yet mild taste that pair well with lots of dishes.

Instant Pot Black Beans

Pressure cooker pre-soak: Rinse beans and add them to the Instant Pot with 8 cups of water and 2 teaspoons of Kosher salt. Close the lid and pressure-cook in manual mode for 4 minutes. When cycle is finished, switch to “Keep Warm” mode for 10 minutes. Drain and rinse beans.

Meanwhile, in a small bowl, combine the cumin, chili powder, coriander, smoked paprika, 1 tablespoon kosher salt and pepper.

Switch to pot to “Sauté” When hot, add the bacon and sauté for 1 minute. Add the onions and poblano and sauté for 3 minutes. Add the spices and the garlic and sauté for 30 seconds more. Pour in broth and drained beans and mix well.

Place lid on Instant Pot, make sure steam release handle is on “sealing.” Push “Bean/Chili” mode and cook for 15 minutes. Allow pressure to release naturally then add Tabasco and mix well.

For a deeper flavor, allow beans to sit in “Keep Warm” mode for at least 30 minutes.

Pressure Cooker Smoked Turkey Black Bean Soup

Place the olive oil and onions, carrots, celery and parsley in a 6 quart pressure cooker over medium high heat and cook until fragrant, about 8 to 10 minutes.

Add the garlic and cook 1 minute.

Add water, bay leaves, beans, turkey leg, and black pepper and bring to boil.

Cover and lock the lid on the pressure cooker.

Place pressure cooker topper in place and bring to high pressure.

Lower the heat to medium-low so pressure is maintained; cook beans for 45 minutes.

Turn off heat and wait for the steam to release.

Once steam is completely released, remove lid and set aside.

Discard bay leaves and set turkey legs aside.

Discard skin from the turkey leg and cut meat off bone into bite size pieces.*

Using an immersion or traditional blender, puree the beans leaving the soup chunky, or to your desired consistancy.

If you use the immersion blender you can puree the beans right in the pressure cooker.

If you use a traditional blender, blend in batches and return the beans to the pot after beans are pureed.

Add the salt and return the turkey to the soup.

To serve, ladle soup into 8 bowls.

Then add ½ - 1 tsp chili powder, 1 tsp ground cumin, 1 tsp dried oregano, and minced garlic to Instant Pot. Cook for another minute until fragrant.

Deglaze: Pour roughly ½ cup unsalted chicken stock in Instant Pot and deglaze by scrubbing all the brown bits off the bottom of the pot with a wooden spoon. Give it a quick mix.

Pressure Cook Beans: Add well-drained pinto beans in Instant Pot and pour in remaining 3 ½ cups unsalted chicken stock. Pressure Cook at High Pressure for 40 mins (tender with a bite) or 50 mins (silky smooth &amp; tender), then 25 mins Natural Release.

Drain Beans Liquid: Strain the beans liquid with a strainer. Place beans back in Instant Pot. Keep the beans liquid in a mixing bowl.

Mash Beans: Create Instant Pot Refried Beans by mashing the beans with a potato masher or immersion blender until desired consistency. Taste and season with salt (FYI: we used 4 pinches of salt). Add drained beans liquid back to the mashed beans until desired consistency.

Garnish Refried Beans: Give it a final taste and garnish. You can spice it up with some jalapeno. Serve &amp; enjoy~ :)

Pressure Cook Black Beans: Add in 1 lb (454g) black beans and ½ tsp coarse kosher salt. Pour in 5 cups (1.25L) unsalted chicken stock, then give it a quick mix. With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position. Pressure Cook at High Pressure 50 minutes + Natural Release 20 minutes. After 20 minutes, release the remaining pressure by turning Venting Knob to Venting Position. When Floating Valve drops, open the lid carefully.*Pro Tip: Adding salt to the black beans will not make it tough.

Season Black Beans: Taste and season black beans with more salt (for reference, 3 - 4 large pinches of salt worked best based on our testings).

One of my favorite side dishes at a Mexican restaurant is whole pinto beans.  I like them kind of soupy and really flavorful.  When I discovered I could make beans in the instant pot without soaking and waiting I jumped on board.  These pressure cooker pinto beans are so darn tasty!

Pressure Cooker Pinto Beans

onion (diced)

roma tomato (diced)

jalapeno (diced)

dry pinto beans (rinsed)

can diced green chilis

tbsp Redmond Real Salt

tbsp cumin

paprika

Using an electric pressure cooker, set to saute. &nbsp;Add olive oil.&nbsp;

Add onion, garlic, tomato, and jalapeño. Cook until tender.

Add beans, broth, diced green chilis, salt, cumin, paprika, and bay.

Cook on high pressure for 50 minutes. &nbsp;Allow a complete natural release.

Discard bay leaf.

Serve Immediately.

Optional - garnish with pico de Gallo, cilantro, avocado, and cotija cheese.

You won't believe how easy it is to go from dry beans to Mexican pinto beans in the pressure cooker.

Instant Pot Pinto Beans

Instant Pot Butter Beans (large Lima Beans) are savory and smoky from the bacon, and even more flavorful from the aromatics and seasoning. These are excellent beans!

Instant Pot Butter Beans

12-oz package Bacon, (chopped)

Onion, (chopped)

Bay Leaves

Celery

Garlic, (pressed

Dry Butter Beans (Large Lima Beans)* (rinsed, not soaked)

Chicken Broth ((6 cups for thicker))

Black Pepper

Gather all of the ingredients together and get the prep out of the way. Chop the bacon and veggies, and measure out all of the other ingredients.

Turn the pot on to the Sauté setting. When the pot is hot add the bacon, onion, and bay leaves. cook for a minute, stirring using a wooden spoon.

Add the celery. Stir and cook until the onion starts to turn translucent and the celery softens a little. Make sure to scrape any brown bits from the bottom of the pot with the wooden spoon (deglaze).

Add the garlic and then add the black pepper. Stir well, and cook for another minute.

Pour in the chicken broth. Then add the chicken bouillon and mix it in.

Add the rinsed butter beans and then stir.

Cancel the sauté function and press the Pressure Cook (or Manual) button or dial, and then the +/- button or dial to choose 40 minutes. High pressure. The pot will take several minutes to come to pressure.

Once the cooking cycle has finished, let the pot sit undisturbed for 15 minutes (15 minute Natural Release). Then turn off the pot. Turn the steam release knob to the Venting position to release the remaining pressure/steam. Please use caution and do this in bursts at first.

When the pin in the lid drops down, carefully open the lid, and set aside. Gently stir the beans. Taste to test for tenderness and for salt, and add salt if needed.

If beans aren&#39;t tender enough (sometimes old beans take longer), just put the lid back on and cook them for 5 more minutes under pressure, and a 10 to 15 minute natural release.

Serve with cornbread or biscuits.
