Suppose you are looking for a high-energy breakfast, high in protein, and has slow-releasing carbohydrates. In that case, this protein baked oatmeal is just for you. This protein-baked oatmeal is not limited to just a quick breakfast because a slice is enough for a snack that can be ideal for a pre-workout meal or provide that extra fuel for endurance runners.

High Protein Baked Oatmeal Recipe

250 g Rolled Oats

60 g Vanilla Protein Powder

Cup Coconut Milk

Cup Plain Yogurt

Eggs

g Maple Syrup

tsp Cinnamon

tsp Baking Powder

tsp Vanilla Extract

Banana (sliced)

Peanut Butter (to garnish)

Salt

Pre-heat your oven to 200c/400f.

In a large mixing bowl, combine the rolled oats, protein powder, coconut milk, yogurt, eggs, maple syrup, cinnamon, baking powder, vanilla extract and salt.

Stir to combine and place on a baking tray (use coconut oil for the tray).

Bake in oven for 20 minutes, or until it turns golden brown. Half way through, place the banana slices on top.

Once removed from the oven, top up with your favourite nut butter.

Protein Baked Oatmeal

old fashioned rolled oats

vanilla protein powder (I used Sun Warrior)

almond milk (or any dairy-free milk)

peanut butter (or any nut butter)

eggs (or flax eggs)

maple syrup

coconut oil (melted)

vanilla

salt

blueberries (plus more for topping)

nut butter (for drizzling on top)

Prep

Preheat oven to 375°F and spray a 8-inch square baking dish with cooking spray.

In a large bowl, mix together the oats, protein powder, almond milk, peanut butter, eggs, maple syrup, coconut oil, vanilla and salt.

Pour

Stir in blueberries and carefully pour oatmeal mixture into the prepared baking dish. Top with additional blueberries.

Bake

Bake for 35-40 minutes or until center is set. Remove from the oven and let cool for a few minutes. Portion and serve with a drizzle of nut butter.
