I'm sharing 5 lunch box ideas that contain a good mix of protein, carbs & fats, along with fresh fruits & veggies to keep everyone full & satisfied. Make them at the beginning of the week or the night before to keep lunchtime budget-friendly and fuss-free.

5 Healthy Make Ahead Lunches (For Back to School & Work)

hummus, drizzled

celery, chopped & halved

beef

(1 cheese

grapes

honey

blueberries (about 1/2 an oz), for topping yogurt

banana

carrots

English cucumber (about 2 1/2 oz)

oz of grape tomatoes

oz of spring mix lettuce

(about 3 1/2 oz) of homemade tuna salad

egg,

cheese

banana oatmeal breakfast cookies

(8 1/2-inch) flour tortilla (or your favorite soft wrap)

cream cheese (for the roll-ups)

(2 oz) of deli meat (for the roll-ups)

oz of spring mix or chopped lettuce (for the roll-ups)

oz of grape tomatoes, quartered (for the roll-ups)

English cucumber, quartered (for the roll-ups)

black olives,

oz of fresh blueberries (or your favorite berries)

Protein Box Lunches are a delicious, healthy option to add to your weekly meal planning ideas. Cashews, almonds, hard boiled eggs and cheese provide enough protein to keep you full until dinner! Sweet fruit cut into easy to eat pieces and crackers for the cheese make this a complete grab-and-go lunch.

Protein Box Lunches

Hard Boiled Eggs (with salt, if desired)

Mixed roasted, salted nuts, I used cashews and almonds (plus M&M’s or chocolate chips, optional)

Fruit, I used grapes and apples. About 1/2 cup of each

crackers, Triscuits, Ritz,

Gather your box lunch containers, snack sized baggies, plastic wrap and silicon (reusable) baking cups.

Hard boil the eggs the day before so they are nice and cold.

Slice the cheese and cut the fruit into bite sized pieces.

Assemble the boxes: Add the fruit to snack sized baggies and place in the boxes.

Add nuts and chocolate to one baking cup, add salt and unpeeled egg to another baking cup. Place in the boxes.

Tightly wrap the cheese and crackers in plastic wrap (in daily portions). Add to the boxes.

Cover the boxes and place in the refrigerator until you&#8217;re ready for a great protein packed lunch!
