These easy peanut butter protein cookies are flourless, only require 4 ingredients, and take less than 25 minutes to make!&nbsp; Each cookie contains 9 grams of protein and tastes just like a soft peanut butter cookie!

Peanut Butter Protein Cookies

peanut butter

coconut sugar

vanilla protein powder ((approx. 1/4 cup))

Preheat oven to 350 degrees.

Line a baking sheet with parchment paper and set aside.

Combine the peanut butter, coconut sugar, eggs, and vanilla protein powder in a large bowl and mix together until the consistency resembles cookie dough. (Some peanut butters can be creamier than others - so if your mixture looks a little too liquidy, you can add a little more protein powder or, if it looks too dry and crumbly, you can add a little more peanut butter.)

Scoop out about 2 tablespoons of the batter and roll it into a ball using your hands. You may need to wet your hands with a few drops of water to keep the batter from sticking.

Flatten the ball between your palms and then place on the prepared cookie sheet.

Repeat with the remaining dough, leaving space in between the cookies on the baking sheet.

Using a fork, press down gently on each cookie to create criss-cross marks. If the fork sticks, you can dip it in water as necessary.

Transfer the cookie sheet into the oven and bake for 10-12 minutes, or until the edges of the cookies just slightly start to turn brown.

Remove from the oven and let sit for a couple minutes to set before moving to a cooling rack to cool completely.

Protein Cookies {5 Simple Ingredients}

bananas

quick or old fashioned rolled oats

peanut butter (unsalted)

tbsp chocolate chips (mini)

Preheat oven to 350 degrees F. Line large baking sheet with unbleached parchment paper or silicone baking mat, and spray with cooking spray.

In a medium bowl, mash bananas with a fork. Add whey protein powder, oats and peanut butter; stir well to combine (batter's consistency will be runny). Add chocolate chips and give a few more stirs.

Spoon mixture onto prepared baking sheet (cookies don't spread, so shape them now) and bake for 12-14 minutes (depending on size). Cool on a cooling rack for 5 minutes.

Perfect Protein Cookies (protein powder recipe)

1.7 oz butter ((room temperature))

tsp sugar

vanilla extract

almond milk ((up to 4 tbsp depending on the protein powder))

all purpose flour

1.7 oz protein powder ((plain

salt

1.4 oz dried cranberries and or raisins ((chopped))

In a bowl add the room temp. butter, sugar and vanilla extract. Whip the butter with a hand mixer or a whisk until the butter is creamy, fluffy and pale. About 3-4 minutes.

Add the egg and mix until you have a completely incorporated creamy mix, about 2 minutes (if this begins to look slightly curdled, don’t worry).

Add the almond milk, flour, protein powder and salt. If you are using a stand mixer, use the flat beater. If you are using a hand mixer, remove the whisks and use a rubber spatula. Either way, mix just until the solids are evenly incorporated into the cookie dough (30 seconds up to a minute). It’s very important not to overmix, otherwise the cookies will be tough.

Once the dough is ready, add the chopped cranberries and evenly spread them into the dough.

Rest

Cover and allow to rest in the fridge for at least 30 minutes up to 2 days.

Divide the cookie dough into 12 portions and form balls. Place on the baking sheet and press with your hands covered with flour or a flat glass covered in flour, until they have a 4.5cm - 5cm diameter.

Bake

Bake for 16-17 minutes, until the base of the cookies is golden brown.

Vegan protein cookies are easy to make and pack almost 9 grams of protein per 125 calorie cookie. They&#39;re great any time of day and much more affordable than store-bought protein cookies and bars. They&#39;re soft-yet-chewy, very satisfying, and taste like a cake brownie in cookie form!

Vegan Protein Cookies

Preheat oven to 350 degrees F, and line a baking sheet with parchment paper or a silicone baking mat.

Mash

Place bananas in a mixing bowl, and mash with a fork. Whisk in the vanilla, coconut sugar, and peanut butter.

In a medium-size bowl whisk together the pea protein, cocoa, baking powder, and oats. If using unsalted peanut butter be sure to also add about ¼ tsp fine sea salt.

Combine

Pour dry ingredients into wet, and stir to combine. The dough will be very thick. Fold in the chocolate chips, if using.

Form

Scoop up a scant 3 tablespoons of dough per cookie. Using a 1.5 Tbsp cookie scoop works well. Just put two scoops of dough in your palm, squeeze them together, and roll into a smooth ball. Use your palms to gently flatten each cookie into a thick patty shape. Place on the baking sheet. Use a fork to create a criss-cross pattern on top of the cookies, further flattening them into a cookie shape.

Bake for 12 to 14 minutes or until the bottoms are golden. Let cool on the pan for about 5 minutes, then transfer to a cooling rack. Let cool completely before storing.

This recipe has been amazing for my child that is doing an elimination diet. I make them with sun butter because we are avoiding nuts right now. Having protein cookies on hand made the first couple of weeks so much easier as we worked out just how much protein my kid needs to not get hangry. I make these at least once a week and my child wants me to keep making them even when the elimination diet is over. Thanks for the awesome recipe!

My batter ended up really wet, making it difficult to shape the cookies as described in the recipe. I wonder if it would help to include 1-3 hour dough refrigeration step.

Wow - absolutely delicious flavour and texture. I substituted sugar for Stevia, and used Stevia chocolate. They are the perfect treat, and I'm a fussy baker.

Have been wanting to try these cookies for a while, and decided today was the day.  Super quick to put together and bake.  Tasty, chocolatey, and full of protein.  Used same ingredients and amounts as in the recipe. Turned out exactly like the picture.  Great addition to any meal that needs a protein boost. Will definitely make them again.

Let me start by saying I’m not vegan.
I did, however buy some chocolate flavour vegan protein powder and discovered it was very different in many ways from my regular stuff and I didn't like the taste of the protein powder at all. THESE COOKIES ARE AMAZING! A great way to utilize that pea protein powder! I used 1 cup of powder and added a tablespoon of cocoa powder. I also added an egg. Oh, and I used regular light peanut butter too. A few adjustments but I’m obsessed with these cookies!!

Any suggestions on how to not eat all of the dough before it makes it to the oven?

My cookie batter turns out very runny. So they bake really flat and are kinda sticky. Despite this they taste great. But I can’t figure out why the dough isn’t dryer. There’s no way I can mold it with my hands. The only difference in ingredients is that I used whey protein powder. Suggestions? Thanks so much!
