peaches,

coconut flour

@pescience cake pop protein powder

non-fat Greek yogurt

unsweetened applesauce

egg - this is needed to taste good

Preheat the oven to 400°

One full method; combine your wet ingredients then your dry. Then gently fold the peaches in last

Divide among eight prepared and sprayed muffin pan spots I placed a cut out circle of parchment at the bottom of each and spray with coconut oil

Bake for 20 to 25 minutes. I pulled mine out around 22 and will probably do slightly less next time

Enjoy! Keep in the fridge because these muffins are super moist

These delicious pumpkin chocolate chip muffins are made with kodiak cakes pancake mix, for a boost of whole grains and extra protein. They are a great easy breakfast option to start your busy morning off right.

Pumpkin Chocolate Chip Kodiak Cakes Muffins

pumpkin pie spice

milk

maple syrup

olive oil

pumpkin puree

vanilla

mini chocolate chips

Combine dry ingredients

Preheat your oven to 350 degrees. In the meantime, combine all dry ingredients (kodiak cake mix, baking powder and pumpkin pie spice) in a large mixing bowl.

Combine wet ingredients

In a separate mixing bowl, combine all wet ingredients (milk, maple syrup, olive oil, pumpkin puree, egg and vanilla). Stir the wet ingredients to mix everything together.

Add wet to dry

Add the wet ingredients into the dry ingredients, and hand stir until just combined. Add the mini chocolate chips and fold them into the muffin mixture.

Scoop batter into muffin pan

Line a 12 cup muffin pan with muffin liners, or spray with cooking spray. Using a large cookie scoop or ice cream scoop, spoon the batter into the muffin pan, filling until the mix reaches just below the top of the cup.

Bake

Bake muffins for 26-30 minutes, until the top of the muffin springs back when touched and a toothpick inserted into the middle comes out clean.

Turkey Sausage & Pepper Egg Muffins

eggs

avocado oil

green bell pepper (diced)

oz turkey sausage

tsp kosher salt

garlic powder

½ tsp black pepper

Preheat oven to 350. Heat oil over medium heat, then sauté diced bell pepper until tender. Remove peppers from pan and brown turkey sausage in same pan.

Whisk together eggs, bell pepper, salt, garlic powder and pepper while sausage is cooking.

Spoon turkey sausage into a 12-muffin pan. I put about 2 Tbsp sausage in each muffin cup. Then pour egg mixture into the muffin tin with the sausage.
