Gluten Free Cinnamon Raisin Bread with chewy crust, soft interior, and sweet cinnamon raisins. Whole grain and vegan!

Gluten Free Cinnamon Raisin Bread

(1 cup) gluten free brown rice flour

(1 cup) gluten free sorghum flour

(1 cup) gluten-free oat flour

(1/2 cup) gluten free quinoa flour

(1 teaspoon) sea salt

(1 teaspoon) cinnamon

(1/2 cups) raisins

water, between 105 and 110 degrees

(1 tablespoon) active dry yeast

(1/2 cup) sugar

(1/2 cup) whole psyllium husks

Whisk together all of the dry ingredients, except the raisins, in the bowl of a stand mixer. Fit the mixer with the paddle attachment.

In a bowl, whisk together the water, yeast, and sugar. Let sit for 10 minutes. The mixture should be frothy and smell of warm yeast. (If the mixture is not frothy, the yeast is expired and the bread will not rise. It is best to start over with a new batch of yeast.)

Whisk in the psyllium husks, making sure there are no clumps. Allow this mixture to sit for 5 minutes, until thick.

Add in the wet mixture to the dry. Mix on medium speed until well incorporated and the dough forms a loose, sticky, ball. Add in the raisins and mix on low until the raisins are evenly distributed into the dough.

Remove the dough from the mixer and form the dough into a ball by tucking the sides underneath until it is round. Place in an oiled bowl, seam side down.

Cover with a towel and let rise in a warm place with an even temperature  for 60-75 minutes. The dough should double in size. Increase rise time if needed.

While rising, oil and flour a loaf pan. Set aside.

Once the dough has risen, form the dough into a log, roughly the size of your loaf pan, by tucking the edges underneath. Place in the loaf pan, seam side down, and let rise for 45-60 minutes, or until the dough has doubled in size.

Preheat the oven to 425 degrees. You want to let the oven preheat during the entire second rise. This ensures that the oven is at an even temperature when baking the loaf.

After the second rise, place the bread into the oven and bake for 50-60 minutes until golden.

Remove from the oven and let the bread cool in the pan for 10 minutes. Loosen the bread by running a bread knife along the edges. Invert the pan to remove the bread. Cool on a wire rack before slicing and serving.

Mélanger dans un grand bol la farine et tous les ingrédients, levure comprise. Ajouter beurre, lait et oeuf, pétrir en pâte molle et lisse env. 3 min à vitesse minimum avec les crochets pétrins du batteur électrique.

Mélanger beurre, amandes, sucre et cannelle. Abaisser la pâte sur un peu de farine en un rectangle d’env. 30 × 40 cm, couper en 3 bandes dans la largeur. Étaler la confiture sur la pâte, répartir dessus la masse à la cannelle. Plier les bandes de pâte, superposer dans le moule chemisé. Laisser lever env. 1 h à couvert à température ambiante.

Cuisson: env. 35 min dans la moitié inférieure du four préchauffé à 180° C. Retirer, laisser tiédir un peu, démouler, laisser refroidir sur une grille. Mélanger le sucre glace et le jus de citron, répartir dessus.

Keto Tortilla Recipe with 0 Net Carbs

2.5 Cups (250 grams) Shredded mozarella

Prepare ingredients

Prepare your ingredients to make amazing keto and gluten-free tortillas. That is oat fiber, eggs, and mozzarella.

Heat up mozzarella

On your stove, heat up to mozzarella on medium heat. Using a wooden spoon, gently stir from time to time for all of the cheese to melt. Keep heating up until you have a smooth melted cheese.

Add oat fiber and eggs

Switch the heat off and add oat fiber. Blend it in. Add eggs and mix thoroughly. Keep mixing until you get a combined uniformed smooth dough. If you feel mozzarella needs to be melted again, switch the heat on low and keep blending.

Work out the dough

Once you have the dough similar to my in the video, place it all on a silicone rolling sheet and using your hands keep working the dough. As you see on the video, I stretch and fold the dough several times. Keep stretching and folding until you get a really smooth consistency. The process might take somewhere between 5 to 8 minutes.

Shape tortillas

Once you are happy with the consistency, split your dough into 8 pieces. That is how many I managed to make. If you want to make smaller or larger tortillas, decide on the amount. Using a roller, roll one piece into a round flat sheet. Shape your tortillas using either a round, sharp bowl or anything similar. Place each wrap onto a baking sheet covered with parchment paper. At this time, you can heat the oven to 350 Fahrenheit or 180 Celsius. Once you have all the tortillas ready, place them into a preheated oven and bake the tortillas for 8 to 10 minutes until you see the edges starting to brown. I managed to fit 4 tortillas on each baking sheet.

Vegan Oil-Free Coconut Flour Bread {keto}

78 g flaxseed meal (regular or golden)

49 g coconut flour

fine sea salt (optional

500 mL water

Spray a 9×5-inch loaf pan with nonstick cooking spray.

In a large bowl, stir together the nuts/seeds, flaxseed meal, coconut flour, psyllium husk, and optional salt. Add the water, stirring until completely combined. The dough will be very thick and stiff.

Transfer the dough to the prepared loaf pan and smooth the top with your hands (it helps to moisten them with water).

Preheat the oven to 400F (200C). Let the dough stand for 15 minutes while the oven preheats.

Bake in the preheated oven for 55 to 65 minutes until the bread is dry to the touch, browned, and sounds hollow when tapped.

Cool bread in pan for 15 minutes and then remove bread to a cooling rack. Cool completely before cutting into slices.

Vegan Coconut Macaroons {Keto Option, Oil-Free}

coconut milk

maple syrup

coconut flakes ((about 2 packed cups))

Preheat the oven to 325F (160C). Line a large baking sheet with parchment paper.

In a food processor or blender, process coconut milk, maple syrup, psyllium husk, salt, almond extract, and HALF of the coconut flakes until mostly (but not entirely) smooth.

Scrape the coconut milk mixture into a medium bowl. Add the remaining coconut flakes, stirring until blended.

Using a small cookie scoop or moistened hands, scoop tablespoons of dough into compact mounds. Place on the prepared baking sheet, spacing 2 inches apart.

Bake in the preheated oven for 25 to 30 minutes until deep golden brown and hard to the touch.

Remove from the oven. Transfer cookies to a cooling rack and cool completely.

I had been meaning to make these forever, and I finally made these Friday. These were so simple, but the results were SO delicious! I used butter extract instead of almond extract because my daughter cannot have nuts, and it was still very tasty, so I would make this swap again. I melted some chocolate chips and dipped and drizzled them, and that took the flavor over the edge. These were easier and just as tasty as a traditional macaroons recipe!
