Puerto Rican pastelón is a Caribbean dish of ground beef, ripe plantains, yummy Latin seasonings, and cheese. It’s often described as lasagna because it’s served as a layered plantain casserole dish. But pastelón ain&#39;t yo mama&#39;s lasagna!

Remove the Instant Pot lid and turn on the sauté setting for 20 minutes. (Although you will not use all of this time. I like to have the extra minutes for the time it takes for the sauté to become active.)

In the Instant Pot stainless steel inner pot, add ½ a cup of water and then the ground beef.

Add the sazón and adobo seasonings on top of the ground beef.

As the meat begins to cook, fold in the seasonings and add the onion, olives and tomato paste to the inner pot.

Sauté in the Instant Pot (with the lid off) until the ground beef is browned.

As the meat browns, continue to fold and stir in all the added ingredients.

Turn off the Instant Pot and drain the ground beef using a colander.

Set aside the cooked ground beef mixture.

Grease a 9×13&quot; baking dish with olive oil or coconut oil.

How do you peel plantains? Cut the ends off each plantain, then score them lengthwise across each plantain to remove the thick outer peel. (Be careful not to slice beyond the peel and into the plantain.)

How do you get the plantains so thin? After removing the peel, cut each plantain lengthwise into 1″ strips, yielding about 3-4 strips per plantain.

Add the water to the stainless steel inner pot.

Then add the sliced plantains, butter, brown sugar, and cinnamon or cinnamon sticks.

Sauté (with the instant Pot lid off) for about 5-8 minutes until the plantain slices are softened and golden in color.

Flipping each plantain slice during the sautéing is optional. Both sides typically cook evenly since they’re almost submerged in the bubbling hot water.

Turn off the Instant Pot and remove the plantain strips by placing a layer of them in the greased 9×13&quot; dish.

Spread an even layer of ground beef over the layer of plantains.

Top the ground beef with a layer of shredded cheese.

Bake at 350 degrees F in the Instant Pot Omni Plus oven for 3 minutes, or until the cheese is melted. (Bake for 5-7 minutes in a conventional oven, or until the cheese is melted.)

Remove the baked pastelón from the oven and top with the cilantro.

Slice while warm, serve and enjoy!

How to Make Mofongo [Recipe + Video]

beef bones ([0.45 kg] any type would do)

Make broth

In a large saucepan heat the olive oil over medium heat. Brown the beef being careful that it does not burn. Add the garlic and onion and stir. Pour in 4 cups of water, and add cilantro, cilantro ancho, and oregano.Boil for an hour over low heat, topping off the water every once in a while to maintain the same level.Season with salt to taste. Sieve and remove the solids.

How to make the broth

Fry plantains

Heat oil in a small pot or saucepan over medium heat and fry the plantain slices till golden brown all over (3-5 mins). Remove from the oil and place on a paper towel.

Crush plantains

Using a pilón (large mortar and pestle) or potato masher, crush the garlic and salt together, add in plantains and mash, then add pork cracklings and mash and crush to combine with the plantains (You might have to divide the ingredients and do it in 6 batches to fit in your pilón). It will have a dense consistency and will more or less form a ball.

Shape mofongo

Shape the mixture into 6 balls and place each in a small bowl.

Serve

Place the balls into the serving plates, and garnish with the broth, that you&#39;ll use to pour over and moisten the mofongo balls.

How to make Puerto Rican mofongo

Roast

Wrap the plantains in aluminum foilBake plantains in a preheated oven at 400ºF [200ºC] for 35 minutes, or cook in an air fryer preheated to 350ºF [175ºC]

Make garlic

In the meantime, in a pan heat olive oil over very low heat. Stir in garlic and sprinkle with salt.Cover and sauté for 10 minutes, stirring occasionally, and making sure the heat is low enough that the garlic does not burn or change to a dark color. Set aside.

Remove the plantains from the oven and let them cool down for 5 minutes. Carefully peel them.

Mash

Mash the plantains one by one in a mortar and pestle, adding to each plantain ¼ of the oil and garlic and ¼ of the pork cracklings while you mash and mix.Form each plantain mash into a dome, or scoop it into a bowl. Serve 4 servings of the broth – alongside each mofongo bowl –  that you&#39;ll use to pour over and moisten the mofongo balls.
