A roasted vegetable pie, made extra easy with (vegan) puff pastry is a great holiday main dish! With pumpkin, cauliflower, and parsnip, it&#x27;s a seasonal dish that can be made any day of the week.

(1 lb.) pumpkin (1/2 a medium pumpkin)

(14 oz.) cauliflower (half a large cauliflower)

Making a puff pastry pie is so incredibly easy - you can prepare it in under ten minutes. I make mine sweet and tart with a mixture of cranberries and cherries.

Puff Pastry Berry Pie

all-purpose flour

Preheat oven to 400 F.

Place cherries and cranberries in a bowl and use a potato masher to smash them.&nbsp;&nbsp;

Use a sieve to remove the excess liquid. You won't need it for this recipe, but you can use it in cocktails or in other recipes.

In a large bowl, mix the sugar, brown sugar, flour, cinnamon, ginger, nutmeg, and orange zest with the smashed berries.

Pour into a 3 quart casserole dish.

Gently roll out puff pastry to the approximate size of the casserole dish.

Use a pizza cutter to cut out the dough to the exact size of the dish. (If the dish has a lid, use it as a guide; you can invert the dish or lid onto the puff pastry to leave an indentation that you can follow.) Save scraps for other puff pastry projects.

Use a lame or continue to use the pizza cutter to gently score designs in the pastry, being careful not to cut all the way though it.

Place puff pastry on top of the filling.

Use a pastry brush to brush the pastry with egg yolk.

Bake for 45 minutes or until evenly browned.

Serve warm.

tbsp Sunflower oil (See notes)

700 g Stewing beef (See notes)

onion

Carrots (Peeled and chopped. See notes)

g flour

tbsp Tomato purée

Salt and black pepper

600 ml Beef stock (See notes)

Worcestershire sauce

320 g Puff pastry sheet (See notes)

Egg (Beaten)

Heat your oil in a large frying pan or saucepan and add the beef. Cook for about 5-10 minutes until just starting to turn brown.

Add in the vegetables and cook for a further 5 minutes until they start to soften.

Add the flour and stir through everything, cook for 5 minutes.

Add the tomato purée, salt and pepper, Worcestershire sauce and stock. Pop the lid on and cook on a very low heat for about 2 hours or until the beef is very soft.

NB: Keep an eye on the beef as it cooks. Stir it well occasionally and if it looks like there is not enough liquid, don&#39;t be afraid to add a little more stock or water.

Spoon into a pie dish and leave to cool for at least 30 minutes if you have time.

Smooth the pastry over the top of the filling.

Decorate the pie with cut out shapes if you feel that way inclined and brush with the beaten egg.

When you are ready to bake the pie, preheat the oven to 220C and bake for about 30 minutes until the filling is hot throughout and the pastry is crisp and golden.
