Classic biscotti with a fun fall twist! These pumpkin biscotti are surprisingly easy to make. Drizzled with white chocolate, these biscotti are a great cookie for dunking in your coffee.

Pumpkin Biscotti

sugar

unsalted butter, softened ((half a stick))

pumpkin puree

cinnamon

baking powder

vanilla

nutmeg

ginger

salt

¼ cups all purpose flour

white chocolate chips

Preheat oven to 350 degrees. Line a baking sheet with either parchment or a nonstick baking pad; set aside.

In a large bowl, use a handheld mixer to beat together the butter and sugar until light and fluffy, about 2 minutes. Mix in the pumpkin, egg, cinnamon, baking powder, vanilla, nutmeg, ginger, and salt until well combined. Add in the flour and mix until a dough forms.

Scoop the dough onto prepared baking sheet. Divide the dough in half and shape it into two 10&quot; x  2½&quot; logs. Use your hands to press the logs into long rectangles and smooth evenly. Bake biscotti dough for 25 minutes.

Remove the biscotti logs from the oven and let rest on baking sheet for 5 minutes. Then, using a serrated knife, cut the logs either diagonally or crosswise into ½&quot; to ¾&quot; slices.

Lay the biscotti flat on the prepared baking sheet. Return biscotti to the oven and bake for 15-25 minutes more, until they start to turn golden brown on the edges. (The longer you bake, the crunchier your biscotti will be). Remove from oven and let cool on wire rack.

Place the white chocolate in a small microwave safe bowl. Microwave for 3-4 minutes on 50% power until the chocolate is melted; stopping to stir every 30 seconds. Transfer the chocolate to a small piping bag (or ziplock bag) and drizzle over the cooled biscotti. Let chocolate set before serving.

Preheat oven to 375°.

Line a baking sheet with a silpat or parchment paper.

In a medium bowl, combine flour, baking powder, cinnamon, nutmeg and salt.

Add hazelnuts, white chocolate chips and mix.

In a stand mixer, mix butter and sugar on medium speed for 1-1/2 minutes.

Add pumpkin, vanilla and eggs, one at a time.

Add the dry ingredients and mix on low speed until just combined to make a dough.

Remove the dough (if too sticky sprinkle flour over it and on work surface).

Divide into two pieces and form into long flat logs about 12 inches long x 2 inches wide.

Place on the lined baking sheets and bake 22-25 minutes.

When cool enough to handle, gently cut the loaves on the angle into 1/2 inch slices (a serrated bread knife works best).

Return to the baking sheet fitting as many as you can on the baking sheet, you may need to do this in batches.

Bake the biscotti for another 3-4 minutes on each side, less if you like it softer.

Keto Pumpkin Biscotti Recipe

almond flour

erythritol sweetener

pumpkin puree (if yours is thin and wet, you may need to drain it first)

tsp caramel or vanilla extract

almond milk

Preheat the oven to 325ºF and line a large baking sheet with parchment or a silicone liner.

In a large bowl, whisk together the almond flour, sweetener, pumpkin pie spice, baking powder, and salt. Stir in the pumpkin puree, egg, butter, and vanilla extract until the dough comes together.

Turn the dough out onto the prepared baking sheet and pat into a low log about 4 by 10 inches. Bake about 25 minutes, until the log is just firm to the touch.

Remove and let cool 15 minutes, then gently slice into 12 even slices using a serrated knife. Reheat the oven to 250ºF

Place the slices back onto the baking sheet, cut-side down, and bake for 15 minutes. Flip each slice carefully and continue to bake for another 15 minutes. Turn off the oven and let them sit inside until cool. Keep your eye on them in case they brown too quickly. They will firm up as they cool.

For the glaze, whisk together the powdered sweetener, extract and enough almond milk to make the glaze of a drizzling consistency. Drizzle over cooled biscotti.
