Healthy Pumpkin Oatmeal

cup rolled oats

almond milk (or any type of milk)

water

pumpkin puree (not pie filling)

tbsp maple syrup

tsp pumpkin pie spice

cinnamon

tsp salt

Almond butter

pecans

Pumpkin seeds

Granola

Transfer the pot to a stovetop. Cook over medium-high heat, stirring frequently so it does not stick to the bottom of the pot. Cook until the oatmeal is thick and creamy, about 8-10 minutes. The longer you cook it, the thicker and creamier it will become.

Transfer oatmeal to bowl(s). Add your favorite toppings, like almond butter, crushed pecans, pumpkin seeds, granola, and more. Enjoy!

Mini Pumpkin Chocolate Chip Muffins made lighter by swapping out butter for pumpkin puree – loaded with chocolate chips in every bite!

Pumpkin Chocolate Chip Muffins

white whole wheat flour (King Arthur)

all purpose flour (King Arthur)

monk fruit sweetener (Lakanto) (or raw sugar)

tsp baking soda

tbsp virgin coconut oil (or canola)

baking spray

mini chocolate chips

Cinnamon

Egg white

Preheat the oven to 350°F. Line a mini muffin tin with paper liners and lightly spray liners with oil for easy removal.

In a medium bowl, combine flours, sugar, baking soda, pumpkin spice, cinnamon, and salt with a wire whisk. Set aside.

In a large bowl mix pumpkin puree, oil, egg whites and vanilla; beat at medium speed until thick. Scrape down sides of the bowl.

Add flour mixture to the wet mixture, then blend at low speed until combined; do not over mix. Fold in chocolate chips.

Pour batter into prepared muffin tin and bake on the center rack for 22 to 24 minutes, or until a toothpick inserted in the center comes out clean.

Let them cool at least 15 minutes before serving.

Very good! I used all purpose flour and Stevia but they are great! I appreciate the WW points rating also!

Tried and true favorite. These are so good! I love using mini choc chips when making mini muffins.

Made for the 2nd time today.  1st time followed the recipe mostly but used a whole egg, regular sugar and made regular sized muffins.  Today I did the same but added a Tbsp of espresso powder and subbed 1/4 cup vanilla protein powder for the flour.  Both versions are delicious! I preferred the 2nd version, my husband preferred the 1st.

I have a wheat free kiddo and made with 3/4 cup king Arthur’s gluten free measure for measure  and 1/2 cup oat flour. They turned out so good. I didn’t even have chocolate chips and they still had a lot of flavor.

I’ve been making these for years, thank you! It takes all the willpower in the world not to eat the whole batch in one sitting!  My particular husband is wild for them too. Thank you so much Gina, you are the best!

I have made this multiple times and both kids love them. I love this uses whole wheat flour and coconut oil. I do use regular sugar but want to try the monk fruit!

I love how they are a one bite snack! I subbed the chocolate chips for cacao nibs -- not bad but I think the chocolate chips would be better.

This looks scrumptious.. will definitely try it. Just a question can we use fresh pumpkin instead of canned and if so can the fresh pumpkin just be oven roasted and puréed?

In a couple of words, DANGEROUSLY DELICIOUS!  Followed the recipe except for the coconut oil.  Substituted with applesauce because I didn't have the oil, and used unbleached all purpose flour.   Will be making these again.  Can only say if they are this delicious with having to do these two substitutes, it can only become DEADLY DELICIOUS following the recipe in full!  Once again, Skinnytaste pulls off another wonderful recipe!
